⭐️ Chickpea salad is a quick, tasty, and nutritious dish; you can make it in 15 minutes with simple seasonal ingredients and a delicious mustard-maple dressing.

For the salad
1 can (15 oz) chickpeas or 1½ cups of cooked chickpeas - drained
1½ cups cherry tomatoes
1½ cups cucumber
½ cup olives
⅓ cup red onion
½ cup corn
⅓ cup parsley
1 ripe avocado optional
For the dressing
4 tablespoons extra virgin olive oil
2 tablespoons lemon juice sub apple cider vinegar
1 tablespoon mustard
1 tablespoon maple syrup sub honey
¾ teaspoon salt
¼ teaspoon black pepper
1 teaspoon ground cumin optional

thank you MR. Plant based school, I made this salad as one of the many side salads in a catering, there was 80 people and all of them liked it. i multiplied the ingredients by 5 to feed 80 people in case anyone wanted to do this. trust me people will come to your house just for this salad. thanks again mr plant based school

TIP: I’m not a fan of whole chickpeas (bizarre because I love hummus), so I make this with white beans instead; usually Cannellini beans.
Gr8 recipe. Do you boil the chickpeas or eat them after soaking for a couple of hours?
