i noticed you loved adding sumac on most of your meal prepping....and emulsion happens when you mix olive oil and mustard while whisking and i love this recipe coz its full of protein from chick peas and i love all peppers on anything especially the reds😋😋😋😋😋😋

I'm not too good with lots of tomatoes, but definitely find baby plums are the best. For the same colour group I would use vacuum packed cooked beetroot. Or fresh cooked in Summer.
I made a version that's even more simple: replace the sauce with store-bought dressing. Now it takes about 5 minutes to make. Ok, to be even more lazy, use store dry parsley

Did you pre dress it or dress as you went.
I dressed it all when I made it. I was worried it would go mushy but it held up well. I added in the avocado each day just before I ate it.

Chickpeas are best when the skins are peeled off. It makes dishes visually more appealing as well to not see those skins floating around.

I don’t consume black pepper nor any hot spicy peppers. No red pepper flakes. I only consume sweet bell peppers or roasted peppers. All multi colors.
