Single Layer Carrot Cake
Personally I think the ratio of frosting to cake is perfect for me however you can change this up. So if you want a sandwich cake instead then bake in 2 x 7 inch sandwich tins and use the frosting in the middle. Be aware if you do split the batter then your baking time will also reduce.
If you’d like to frost the outside of your cake too then double the quantities for the frosting.
Also if you like you can add nuts or dried fruits to your cake batter too!
