- Ramadan Recipes Ep 11: Choc Chip Cookie Dough
Ingredients:
-100g unsalted butter
-50g granulated sugar
-75g soft brown sugar
-1 tsp vanilla bean paste / extract
-1 medium egg
-200g plain flour
-1 tsp bicarbonate of soda
-1/4 tsp salt
-50g milk choc chips
-50g dark choc chips
-Served with Vanilla Ice Cream & drizzle of melted chocolate spread
Method:
-in a heatproof bowl at your butter and heat in the microwave until melted (approx 1 min)
-add in both your sugars and mix until the sugar is mostly dissolved
-add your egg and vanilla and beat for a min or so until it becomes paler
-add your flour, bicarb and salt and fold until almost combined
-finally add in your choc chips and mix until evenly distributed
-you can bake straight away or cover and set aside in the fridge to bake later
-when your ready to bake, remove the dough from the fridge 10 mins before baking and preheat your oven 180c fan / 200c no fan / gas mark 5
-get a oven proof dish (if using a cake tin then I advise to put baking paper at the bottom to prevent scratching). Put enough cookie dough in the dish to form a think layer and push down to spread evenly.
(A 7 inch dish should easily serve 2 to 3 people, you can even bake in small individual ramekins if you have them)
-bake in preheated oven for 8 mins (don’t over-bake otherwise it will go hard)
-serve straight out of the oven with some ice cream and a drizzle of melted chocolate and enjoy!
Any leftover cookie dough can be wrapped and placed in the freezer.
This recipe should make 2 x 7 inch dishes.
