The BEST No-Bake Cookies ( Remember these?)

Making no-bake cookies is easy, peasy yet these cookies can take a turn for the worse and come out crusty, dry, and crumbly if you don't get the timing right. Sucks! But no worries I've got some tried and true tips that will ensure the best no-bake cookies every.single.time.
    These no-bake cookies are thick and has a creaminess to them just like a delicious fudge.
    How to Make No-Bake Cookies (printable recipe link below)
    1.Prep: Read over the entire recipe. Line 2 baking sheets with wax or parchment paper. Measure out all of your ingredients. Have your thermometer, timer, and large cookie scoop ready. (This recipe is about timing and having everything ready to go helps)
    2.In a bowl, whisk together sugar, unsweetened cocoa powder, and cream of tartar until no lumps remain. Set aside
    3.In a large, deep non-stick skillet melt butter over medium-low heat.
    4.Add milk
    5.Pour in the sugar mixture and stir using a rubber spatula.
    6.Stir until all sugar has dissolved, being sure to scrape down the sides of the pot. Increase the heat if needed but do not simmer. (I check for granules by rubbing the mixture between my fingers. If it feels smooth, then you're ready to move on to the next step.)
    7.Once the sugar has melted, increase the heat to a rolling boil over medium heat while continuing to stir. (meaning the middle should have large bubbles)
    8.Once the mixture has come to a full rolling boil, set the timer for 2 minutes.
    9.Insert a thermometer and cook the mixture until it reaches 230-234 F. 10.Do not stir. (You have 2 minutes to reach this temperature so adjust your heat up or down.)
    11.Once the temperature is reached, remove from heat and quickly stir in peanut butter and vanilla extract.
    12.Once incorporated, quickly stir in the oats just until combined.
    13.Next, stir in 1-2 tablespoons of milk until the mixture is creamy.
    14.Using a mini cookie scoop, drop two scoops per cookie onto the prepared pans.
    15.Allow the cookies to sit until room temperature and set, (about 30-45 minutes)
    16.Store cooled cookies wrapped individually in plastic wrap and placed in an airtight container.

    I hope you see this. I’ve been making your original recipe that you posted 12 years ago since I was 10. Over the years I’ve tweaked the recipe to what my family loves most. I bring them to family gatherings and make them on rainy days. I love coming back on that video knowing how far it’s taken me now. I’m glad you’ve posted a new recipe so hopefully some other 11 year old girl can experience my same nostalgia over the years for it. Thank you

      I loved those but Little Debbie products are too sweet even for my lifelong sweet tooth. Might look for a homemade version of Star Crunch.

    You have no idea how much you have made my life!!! 🥹 THIS RECIPE was my FAVORITE cookie as a kid and I only knew one person who made it this way but she never shared her secret! I tried store bought ones that couldn’t even touch the hem of this cookie’s garment 🤣 You just gave me the keys to heaven girl 🤣 from a fellow North Carolina Diva 😆💗 I basically ate the whole batch in one night 🫣

    Thank you for this. My Momma use to make these. She was a 'Room Mother ' at my school and any time we had an event, she was always asked to make these. We called them 'Preacher cookies.'     Recipe (similar) takes me back. Gran would sometimes make a similar cookie (-PB) then put a scoop of ice cream between two and send us outside, lol. Might just need to give these a try... it's been yeeeaaarrrs. I'll use your recipe just as it is, which I always do at least the first time or two.... then make any adjustments +/- for taste/texture. Young Lady, I thoroughly enjoy your videos, and although I don't cook or bake as much these days I always enjoy listening to your voice-overs. Rapid fire never skip a beat get a bunch of info into a small bit of time with lots of humor also. But, the thing that I "feel" the most is the pure light and Joy coming from your heart not only when sharing a recipe but when remembering special moments or people in your life.     I have made these for 50 years, and never pulled out a cookie sheet. At the holidays I cover a folding table with wax paper and do this recipe times 6.My kids always have loved them, and my Grandson as well. Quick and easy!

    We had these in school but we're not shaped into cookies. It was in the pan and cut into squares. I do mine like that. I grew up when the cafeteria ladies actually cooked from scratch not out of boxes to warm up food!

    I made them vegan and refined sugar free. I added more cocoa powder and cut the sugar a bit. I put coconut on top.
    OMG. These are so gooey. I love them. Thank you so much.

      I've made a healthier version before using monk fruit to sweeten it and I used coconut flakes and a few pumpkin seeds instead of the oats.

    I can confirm that these cookies turned out great! I used half and half, and subbed about a third of the liquid volume for boiled down Kraken rum.
    And in the end I added half a splash of half and half, and half a splash of the rum.
    They set up perfectly, and now they have a nice rummy under tone. This was a really great recipe. Thanks!

      I made a second batch and didn't boil the rum first. I only used 2/3 cup half and half, and a half cup of Kraken rum.
      And in the end I splashed with half and half and a little bit of rum again.

    I remember these. We still make them as part of our Christmas cookies. We don’t care for the frou frou things like window pane sugar cookies. These. Chocolate Chip, oatmeal (with cinnamon baking chips instead of raisins) and other drop cookies faves op are our idea of holiday cookies.

    I made these and they were way too sweet (2 cups of sugar, eek!) The event I brought them to, the feedback was that a lot of people thought it was too sweet as well. HOWEVER, the texture was perfect and fudgy and that part was a win. Next time I make this recipe, I am just going to cut down on the sugar. Thank you for sharing this.

      Almond butter! There are a lot of nut butters nowadays. Even seed butter, like sunflower seed butter.

      If you really don't want any nut butter, although I think pistachio butter would be great, you can try dulce de leche or sweetened condensed milk but keep in mind that the texture will be different

    2 quick things: you need to add salt and the cream of tartar doesn't break down the sugar, it just acts as a binder/thickener.

      Wrong. The cream of tartar breaks sucrose into glucose and fructose. It does break down sugar.

    I've been making a noobie cookies my entire life. It is my all-time favorite cookie. Never heard of adding cream of tartar. I'm going to give it a try assuming you know what you're talking about girl lol. I also never heard about adding milk but I also try that. Do you think that adding a natural peanut butter, Jif brand, but natural, would make a huge difference towards the bad direction or it would be fine?

    Mine burned and got instantly hard once I added the PB, and couldn’t add the oats.
    I’ll try again tomorrow.

    Did I miss the amounts of sugar, oatmeal, peanut butter, ect????? You can't just dump in the ingredients without measuring

    I am an old lady and I think you are absolutely adorable 🥰. Honey you are never to old to learn new takes on an old recipe from a young chick. I have one minor correction…it’s spelled tartar…but it’s pronounced tarter. Pronounced the same as the yucky buildup on on your teeth. But honey, as beautiful and personable and natural as you are on camera, I can guarantee no one even noticed. You keep being fabulous! You keep pushing for the top girl! You can do it!!
