I just made this cake not even 4 hours ago and it is stellar!! I absolutely love Monique’s cooking style and the fact that she uses real ingredients and keeps it simple! As a child, she had a powerhouse of influential women in her home and it lives on through her cooking! I found Monique in 2014 and recently purchased her cookbook! The personal details in her book are beautiful! Thanks for sharing your talent! 🤗

Monique girl, I made this cake a few weeks ago for the residents I cook for at my job. Let me tell you that this is THE ABSOLUTE BEST CAKE I have ever made. I scaled it to make enough for like 96 portions and it made a ton of batter. Like enough for like 3 and half hotel pans so it was plenty to serve for 2 meals(next time I'll scale it back a little bit). One of the staff members had a piece and told everyone else about it, to the point where they wanted me to make it for the Spring Fest that same week. They kept taking like 2-3 pieces at a time, also I had 2 other staff members ask me to make them one a piece. I of course told them it wasn't my recipe because I didn't want to take all of the credit. But this recipe is dangerous and should be locked away never to be released again( lol JK)

Whoa. You got me when you said, no buttermilk !! Make sense because I haven’t seen you use sour cream a lot. Or butter vs. butter flavored shortening. I’m def going to give this a try. Making an almost nut butter from the pecans is genius.
