Chocolate Trifle
Ingredients:
-1 chocolate swiss roll cake / other chocolate cake
Chocolate Custard:
-50g custard powder
-50g sugar
-20g cocoa powder
-850ml milk (split 100ml & 750ml)
Topping:
-300ml double cream
-1 heaped tbsp icing sugar
-1tsp vanilla bean paste or extract
Ganache:
-100ml cream
-50g dark chocolate
Method:
-cut the swiss roll and layer it on the bottom and sides of your trifle dish.
-to make the custard add custard powder, sugar and cocoa powder to a saucepan with 100ml milk and mix well until smooth and no lumps remain
-add another 750ml milk and mix again until combined
-put the saucepan on high heat and gradually stir until custard begins to boil and becomes thick
-put the saucepan in a large bowl of cold water and stir to cool it faster and prevent a skin from forming on the custard
-once cooled pour onto your cake layer in the trifle bowl and level out with a spatula
-place in the fridge to set whilst preparing the topping
-for the topping add double cream, icing sugar and vanilla to a bowl and whip to form soft peaks
-make a ganache by breaking chocolate into a heatproof bowl and adding cream, then heat in the microwave for 30 seconds and mix well. Reheat again for 20 - 30 seconds. Be careful not to burn the cream and mix to form a shiny chocolate sauce
-once the custard has set, put the whipped cream in a piping bag with a star tip and pipe on top or just spread the cream with a spatula in an even layer
-decorate with drizzling the ganache or you could even add grated chocolate

I used normal custard powder and added cocoa powder to make it chocolate
