- Guys i’m too tired to put some whimsy in here - so i’ll just keep it to the ingredients & equipment list. Any questions about the recipe, feel free to ask in the comment section.

Profiteroles (makes 20-24 depending on size)
Ingredients:
-For choux pastry:
-115g plain flour
-Pinch of salt
-85g unsalted butter
-1 tbsp sugar
-200ml water
-3 medium eggs
(For Gluten Free choux pastry use GF plain flour and 1 tsp of Xanthan Gum instead of regular plain flour)
For cream filling:
-600ml double cream
-2 tsp vanilla
-2 tbsp icing sugar
For chocolate topping:
100g milk choc
50g dark choc
150ml double cream
Oven temp: 180C fan / 200C no fan / Gas Mark 6
Bake Time: 25 - 30 mins

Is it possible to make choux pastry in advance or does it always have to be used straight away?
I wouldnt make it too early, can get soggy.
