My parents spoke to me in Teochew when I was a child but I refused to speak my mother tongue. I started learning Teochew some 16 years ago and found I have to learn Mandarin to improve my Teochew. I spend hours everyday learning Chinese by listening to Chinese videos including Teochew videos from my homeland. I can now understand and follow Teochew videos made in China. My study notes are over 1,200 typed pages for I cannot remember every single word I have learnt. Most Chinese people in Singapore cannot speak Mandarin as fluently as you. I think it is because they have not been schooled in Chinese. When I meet Chinese people, I speak in Mandarin. I speak to myself and sister in Teochew and I try to think in Teochew to improve my standard of Teochew. Just to let you know, I have made 豆沙月餅 last week in 50 gram mould. It was successful thanks to your video.

月饼模具通常分成50g(小),80g(中)和125g(大),可能还有更大的。就看你想做什么size的月饼,然后才分配饼皮和馅料的分量,月饼就不会形状怪怪了😇

不用增加,如果实在不上色才适当增加5分钟左右,烤月饼主要是烤熟外面一层饼皮罢了😇

如果不考虑烘出来的颜色问题,其实也应该要放的,就像碱水粽那样,比较黄的碱水粽会比较耐,放比较少碱水的碱水粽很容易就坏了。。。小豪也说了,碱水可以稳定和更容易着色,使饼皮的颜色看起来黄。。。

是的。水分蒸发太多所以转化糖浆太稠了,饼皮会比较干。回油之后应该会有一点改善。转化糖浆不需要放冰箱保存,放在阴凉处不晒到阳光就可以了😇

我没试过放隔夜哦,通常一个小时皮就很软很容易包了。月饼皮不像一般的面团,包的时候不可以用拉的,要慢慢的推😇

口感上差别不大,甚至吃不出来差别。会用低筋面粉是因为它不容易起筋,饼皮面团最怕捏到起筋。所以用普通面粉就要很注意起筋的问题,不要过分揉捏面团就可以了😇

是馅料太湿太软的问题吗?饼皮整体上不了色,你可以增加碱水的量。如果饼皮旁边的颜色已经是你想要的,只是上面上色不够深,我会建议你放在接近上火的一层烤大概3-5分钟,让表面上色即可。只放蛋黄刷,如果月饼花纹比较复杂,花纹可能会模糊掉😇

主要看馅料。如果馅料是自己做的,室温下可以放3-5天,冰箱可以保存2星期以上。如果你买现成馅料,通常含有防腐剂,就算放室温下也可以耐很久很久😇
