Sourdough Blueberry Muffins ~ Using Sourdough Discard ~ Sourdough

Join me in testing out a new recipe for Blueberry Muffins using sourdough discard. Lightly sweet muffins bursting with juicy blueberries with the flavors of cornmeal and sourdough in the background. Perfect for breakfast or an afternoon pick-me-up... YUM!
1 cup (120g) King Arthur Unbleached All-Purpose Flour
1 cup (138g) yellow cornmeal, preferably whole grain
3/4 teaspoon salt
1 teaspoon baking soda
1 1/2 teaspoons cinnamon
1 cup (227g) sourdough starter, ripe (fed) or discard
1/4 cup (57g) milk
1 large egg
4 tablespoons (57g) melted butter or 1/4 cup (50g) vegetable oil
1/2 cup (156g ) maple syrup or 1/2 cup (170g) molasses or honey
2 cups (340g) blueberries, fresh or frozen
Demerara or coarse sparkling sugar, for sprinkling tops

I just made these! Beautiful and so delicious! Love sourdough discard recipes!
These are so good! I preferred the texture of these muffins once they cooled. They’re perfect with the subtle sweetness you get from the sparkling sugar and butter! I ended up doubling the recipe (only weighed the flour & discard) and ended up with 2 dozen plus 3 jumbo muffins. It’s a keeper for us :) Thank you!
This recipe sounds so yummy! May make these in the morning. I use a lot of my sourdough started when making English Muffins.

Yes I use and love sourdough recipes! I just made a sourdough cherry cobbler from some sour cherries I had in the freezer. Was delicious!

Sour dough starter. Hate to just throw it away!
I find if you mix the milk with the starter before adding other liquids it is easier to incorporate.

I think the bleeding of the frozen blueberries 🫐 is beautiful.
I just made these and used corn flour instead of corn meal and I can’t taste the corn. They are so good and I consider them “low gluten”. I’m hoping my friend who is slightly gluten intolerant can eat them. Thank you for the recipe.

So I went through the whole process to try to start a sourdough and it did not work. Larry boy died, LOL. So I have just ordered a rye sourdough starter from Amazon. Praying that I will have good success because I have wanted my own sourdough forever now! Thank you for this recipe and I look forward to seeing many more.

I’m making these blueberry muffins in the morning! They have to be from the freezer not fresh but it doesn’t bother me.
I have followed your starter videos from start to finish and everything worked perfectly, But.. when I use the discard after it has been in the fridg for about 2 weeks it is not sour at all. What am I doing wrong?
You’ve done nothing wrong. My starter has gotten more sour over time. The more mature your starter is the more sour it will become. Can you just add the frozen wild blueberries to the batter? They are so small that I would think they would cook well.
Yes you can but they still bleed into the batter 😊

Have someone tried to use AP flour instead of corn flour in this recipe? Or whole wheat flour, maybe? I don't use corn flour at all, don't want to buy it just to make muffins.
