Claire and Sauci Saffitz Blueberry Muffin Recipe Ingredients: Frozen blueberries 1 stick unsalted butter, room temp 1/2 cup granulated sugar 1 egg 1 tablespoon lemon zest 1 cup + 1 tablespoon all-purpose flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon kosher salt 1/2 cup sour cream 1/2 teaspoon vanilla Demerara Sugar for topping - Preheat oven to 375 degrees - Cream the butter in the bowl, slowly add in sugar - Add in egg & mix in - Zest lemon into bowl - In separate bowl mix 1 cup + 1 tbp flour, 1 tsp baking powder, 1/2 soda & 1/2 tsp salt - Mix into bowl, alternating one dry/ wet/ dry/ wet/ dry - Start with 1/3 dry ingredients - Add in half vanilla & half sour cream - Add 1/3 dry - Add other half vanilla & sour cream - Add final 1/3 dry - Add in frozen blueberries & mix - Portion into tins lined with liners (Appx. 10 - 12) - Add Demerara sugar (or granulated sugar if thats what you have) Bake for 20 - 24 min (use your nose to gauge time) Remove and cool, then enjoy!

I learned in thermodynamics class The reason you would put water in the empty muffin cups is because the mass of the pan causes what is called heat soaking. The muffin pan will heat at a slower rate when the cups are full of muffin batter. The empty cups will heat much faster and the cups with batter will hold heat much longer. Adding water to the empty cups equals out the mass of the pan and causes an even heating pattern.
My 9 year old daughter and I made these together, she pretty much did all the work and they were FABULOUS!!!!!! She said they were the best muffins she’s ever had, and she’s right ❤️

I've made this a few times now and after accidentally misreading it last time i discovered that doubling the sour cream to a full cup does wonders for this recipe. It goes from consistently just barely filling 11 muffins to a full 12 and they come out noticeably more fluffy and moist.

I also love that Claire always explains the thought process behind recipe decisions - even as she tries to change Sauci's already perfect recipe!! Absolutely fantastic.

Hi Claire! I absolutely love watching you and your mom bake together! The warmth and love between you two just shows throughout the entire video!💞 I attend a yearly Christmas exchange ornament brunch which is coming up in November. My friend Rebecca hosts the entire thing and bakes and cooks for all 12 ladies that attend. She lays out her table with a nice tablecloth, her dishes, flatware and glasses. We had often offered to help with the meal but she has told us repeatedly not to worry and to just bring ourselves and our homemade ornaments for the exchange. It's a lot of fun. We enjoy our meal together that is served with either a choice of a mimosa, or a delicious drink that she makes with honeysuckle vodka which is to die for! Coffee is also offered as well of course, but who wants that when you can have yourself a yummy cocktail created by the hostess herself? I tried again this year to offer and suggested that I could contribute some blueberry muffins. Well guess what? She accepted! And you can guess by now which blueberry muffins I'm going to make!😅 Your recipe looks so easy and so delicious and I like all those little extra things you do like freezing fresh blueberries and using those rather than the ready packaged ones from the market. Plus adding that sugar on top is kicking it up a notch to a different level of deliciousness. And the combination of butter and sour cream is something that just can't be beat! I have tried cakes made with the same combo and it just adds a richness oh, a wonderful marvelous richness..yummmm! Sugar (and dry ingredients -- although sugar is often considered a "wet" ingredient) are added slowly so as to not fling them out of the mixing bowl before they have a chance to be incorporated into the mix. I heard the water in the empty cups thing in culinary school! I believe is it to prevent cheaper, thin pans from warping due to getting hotter in the oven when empty. I don’t know anyone who actually does that though 😂 I love baking with my family and documenting family recipes. The generational connection is one of my favorite things about cooking and baking. I can attest to these being bakery style. Super moist and it has great flavor, just the right amount of sweetness and the turbinado sugar crunch is always a must on muffins. I upped the salt to a scant teaspoon and vanilla to a full teaspoon.

You two remind me of me and my mom when we would cook together. My favorite thing is how you don’t waste even a tiny bit of an ingredient, why does it give me such joy to see you scrape the butter wrapper ?!?!
Please bring on the apple cake recipe. I’m a cook and I make muffins every day at work. I whisk all my wet ingredients for the blueberry muffins, almost identically the same that you have in your recipe, including the sour cream. I whisk my dry ingredients separately including sugar. Then add the blueberries to the dry ingredients, moving them around, so they’re very well coated. Then they won’t sink to the bottom of the muffin. Then I fold the wet and dry ingredients together gently just until everything is moistened and no more. I then baked them in a preheated 425° oven for five minutes. Then turn down to 350°F for an additional 15 minutes. My mother always used to say alternate the wet and dry ingredients ending up with the dry. I ditched that concept a long time ago because I found out it didn’t make any difference with most recipes. Loved your video. first time watching. I give anything to cook with my mother again. She would’ve loved RUclips.

Made these and added poppy seeds + the juice from a quarter lemon for xtra lemony flavor. Put the whole recipe in a 6-muffin tin. Waiting for them to come out of the oven :) so excited.
Super moist and lovely muffins! I actually made a batch where I made chocolate chip muffins (eliminating the zest). I also made muffin tops, but I had to reduce the amount of time to 14-ish minutes. Absolutely yummy muffin recipe!!

Please bring on the apple cake recipe. I’m a cook and I make muffins every day at work.
I whisk all my wet ingredients for the blueberry muffins, almost identically the same that you have in your recipe, including the sour cream. I whisk my dry ingredients separately including sugar. Then add the blueberries to the dry ingredients, moving them around, so they’re very well coated. Then they won’t sink to the bottom of the muffin. Then I fold the wet and dry ingredients together gently just until everything is moistened and no more. I then baked them in a preheated 425° oven for five minutes. Then turn down to 350°F for an additional 15 minutes. My mother always used to say alternate the wet and dry ingredients ending up with the dry. I ditched that concept a long time ago because I found out it didn’t make any difference with most recipes. Loved your video. first time watching. I give anything to cook with my mother again. She would’ve loved RUclips.

Made these and added poppy seeds + the juice from a quarter lemon for xtra lemony flavor. Put the whole recipe in a 6-muffin tin. Waiting for them to come out of the oven :) so excited.

Super moist and lovely muffins! I actually made a batch where I made chocolate chip muffins (eliminating the zest). I also made muffin tops, but I had to reduce the amount of time to 14-ish minutes. Absolutely yummy muffin recipe!!

I make a very similar blueberry muffin recipe, but I always replace half of the flour with my favorite lemon birthday cake protein powder, so yummy! 😋
