Hey, Claire! Breaking some of the egg shells and giving them back to the hens is a very good way to make sure they consume a good amount of calcium and lay eggs with thicker shells. Also, for a couple of days watch your chickens to discover at which time of the day they "stop" laying eggs, this is good so you know when is better to let them roam around freely, this way they don't lay in hidden spots and you don't end up finding a "rotten surprise" later :)

I literally didn’t even know creme caramel was so simple, we always had it from a box mix as a kid but it’s so simple to make from scratch (and is probably a ton better) so I’m pretty happy too!

Hey Claire, a little trick: put fake eggs made out of stone there, so the ladies have always something to sit on! Then you'll get eggs nearly everyday per chicken^^ (it is working at least for us & a very common method in Germany)
That opening of Claire building a coop by herself while people watch is weirdly reminiscent of Gourmet Makes, and I can't decide if I love it or hate it.

I’ve been watching Claire for many years. When they showed Harris and said he was Claire’s husband, I realized I know absolutely nothing about Claire other than the fact she likes cats.
Gotta say, having grown up on a chicken farm, this was very entertaining. Its fun seeing someone (with really quality equipment, better than anything we've ever had) with no experience work through the problems and get used to everything. Its very rewarding. Happy, healthy chickens are very social and calm creatures. They love being pet and scratched (they get really itchy) and can learn some basic tricks. Some breeds actually really like to play, like silkies. I find you can teach them to play with little balls or cat toys and they will start to do it by themselves. Biggest thing is learning to read how they're feeling. Birds are harder to read than a lot of animals, until you learn to understand what you're seeing. Once you do you can take much better care of them. The thing that annoys me the most is when people see them just as egg laying machines, and don't realize the physical toll it has on them if youre tailoring their diet and space just to egg production. Eggs are the bonus, imo, not the goal of having chickens.
The country air really seems to agree with Claire, she is absolutely GLOWING in this episode. I'm so happy for her and Harris that they have this awesome place to call their own
I’m really glad that Claire’s getting to move to the country. In many ways, it’s the ideal environment for people who are passionate about food. You get a lot more control over the quality of your ingredients when you grow them yourself vs buying them.

Hi Claire, you can feed your chickens red pepper flakes, if you want intensely orange yolks. They don't have the receptors for Capsaicin, so they can't feel the heat, but it gives the yolk a very vibrant color.

Hey Claire! I’ve been composting for years. I also started off with a tumbler. It works ok but it takes a little longer. After much research, I found out that that the large, enclosed bins with lids that one places on the ground works a lot better. So much better, I’ve bought 4 of them off Amazon. Easy to assemble. To get a good compost started, you need a few things to make it work best as possible. Size is the main thing. You need about a four square foot space to make it go fairly easily. You also need a good mixture of ‘browns’ and ‘greens’. That way you can create the heat via a chemical reaction to make it a “hot compost” so it can break down that pile faster. Grass clippings, regardless if it’s green or turned brown is always considered a green. Veggies and other plant matter are greens. Leaves, coffee grounds (and their filter) egg shells, cardboard boxes and newspapers are browns. You need a good ratio of the two to make it hot. Nitrogen is critical! I know you live in NYC and probably don’t have immediate access to grass/yard waste. I live in Charlotte, NC and have a large yard. I have a surplus of greens so it is easy for me. I recommend going to a cattle feed store and getting alfalfa pellets. They are full of nitrogen! Make sure you get something along the lines of sun dried, 100% alfalfa pellets. Nothing added as a binder. Smaller pellets work better because it has more surface area then the cubes. Even though the cubes are not that big. You’ll have to fluff it with a pitchfork a few times a month to distribute air flow and unbroken down materials. Compost bins do need moisture! Another good reason for getting large bins that you place on the ground is the worms! Since the bins, at least my bins, have four sides and a lid, the bottom rests on the ground. That allows worms and to come up, live in there, help break down the compost, reproduce, poop, etc. worm poop, aka worm castings is the best organic fertilizer there is. My garden plants thrive with it. If you’re starting a garden, there is a man that breaks every down about gardening. He has a RUclips channel, the MI Gardener. Scope him out. He even did a video about composting. He validated a lot of info I’ve researched and was doing. I am putting it out into the universe for you two to do a collaboration on cooking, garden to table kind of thing! I know this is long, I am sorry. But I absolutely love composting and spreading that concept. It is such an untapped resource that anyone can do and most people don’t. FYI, I am jealous of your chickens. I have always wanted them. I am a vegetarian and nothing is better then a farm fresh egg. Once your garden is up and running, ponder becoming a beekeeper, if you have the time. And vegetarians do eat eggs. Vegans do not.
I also follow Epic Gardening. He's awesome as well. Also with the compost tumbler, my high school teacher actually had one in our classroom and she supplemented with red wrigglers to have them go faster.

And unlike most other species of worms, they don’t mind being close to one another. I also froze all the scraps I fed them. That breaks the matter down on a molecular level and easier for them to eat and process. The population of those worms will double every 90 days with the habit. So one may have to make another bin or give some away a few times a year.
I love flan! We used to make it quite often in my house when I was growing up, but I’ve been a little hesitant to do it by myself since my mom passed away. Maybe it is because flan reminds me so much of her.
For the record Vinny, I am happy Claire is not regularly suffering the artificial constraints of her former assignments. I really like seeing her delighted and happy baking and making amazing things for us to try.

I love that Claire is learning and sharing her interest in sustainable living and cooking. BTW Claire, about saran wrap alternatives: I've been repurposing/reusing my cereal box plastic bags. They are easy to pull apart into a large flat piece, and also easy to wash/clean/dry/reuse. They won't create a tight enough seal for sealing pastry cream surfaces, but they are useful as a cover for proofing croissant doughs and as a wrap for storing pie dough disks. I think this has worked best for me, compared to the other 'reusable' silicone products on the market that become sticky (if you know what I mean) and difficult to clean after a few months of use. I try my best to repurpose items I already have, than buying supposedly 'reusable' 'eco' products. Anyway, thank you for sharing your recipes and knowledge Claire!

Having had chickens all my life, I found Claire figuring out her chickens to be very entertaining. XD Also, when your chickens lay their eggs they will most likely make very loud sounds, almost like they're screaming whilst clucking. So, when your chickens get uncharacteristically loud, go check for eggs like ten minutes later.
Depending on what school of thought you are using, eggs might not be vegetarian. One difference is as you said, using your own chickens. In some parts of the world they flat out aren't vegetarian.
I always thought you’d be someone to get chickens! Congratulations! Also, in case you didn’t know- there are chickens that lay blue, green, and pink/purple eggs.... they’re very fun. And another note, if you have problems with hawks trying to get the chickens, get a large people friendly, older rooster(at least 1.5 years old). You can also cover their area with orchard/bird/deer netting. I got a rooster to help protect from hawks- he alerts the hens and has scared away many hawks. So far he hasn’t had to fight any, but they have been scared off by him(he’s a hefty 10lbs- enough to deter them from even trying to get the hens)

I remember that a couple years ago I made a flan that was like this one. I was pretty proud of it, and I took it to my parent's house for christmas, they all loved it, and my mom said it was just like the one her grandmother used to make! I swear I'm never gonna get a better compliment about my baking than that one.
I love this woman. Who doesn't? She is bright, funny, has the best sense of humor, and boy, she cooks. I have been making crème caramel for 40 years, a pretty delicious dessert. Claire's nailed it, and the same with many other ones. Congrats, it looks yummy. I bet BA people regret a lot losing her.
Made it yesterday. It turned out A-MAZE-ING!. I usually bake it longer but I thought I would trust you on the 'wobble' although it looked liquid when I was taking it out. It set beautifully in the fridge overnight and is the most delicate and smooth creme caramel.
this is further proof that you can live an incredibly fulfilling life without children (human ones). what a delight to watch claire joyfully jump into a new and exciting faze of her life. she is my safe space and i am so thankfull.

hey y'all, if there are any fellow lactose intolerants in the comments, just wanted to throw out there that I've tried making custards with a few different plant-based milks and so far I think coconut works the best - the kind that comes in the can! you CAN have delicious dairy treats
@@BS-pd9hk Lactose-free milk isn't actually free of lactose, it's just fortified with lactase which usually helps with digestion but it doesn't work for everyone! it would be a good option for those who do use it though, yes!
I believe there are several brands of newer (albeit more expensive) lactose free milks that are ultra filtered, where the components of the milk are physically separated, the lactose removed, and the milk is recombined (often allowing them to have more protein, etc), also making them taste more "normal" than milks like lactaid. the most common brand is probably Fairlife

Before I got w my boyfriend I had never had farm fresh eggs right from the chicken. His family lives on a farm and now I absolutely love all the chickens and swear by fresh eggs. Makes such a huge difference, even in color.

Having had chickens all my life, I found Claire figuring out her chickens to be very entertaining. XD
Also, when your chickens lay their eggs they will most likely make very loud sounds, almost like they're screaming whilst clucking. So, when your chickens get uncharacteristically loud, go check for eggs like ten minutes later.

Depending on what school of thought you are using, eggs might not be vegetarian. One difference is as you said, using your own chickens.
In some parts of the world they flat out aren't vegetarian.
I mean I would agree since if she is getting eggs from the chickens naturally it really doesn't count as animal abuse since it is the natural way.
technically lacto-vegetarians have given up on eggs but the rest yeah they wouldn't have

I always thought you’d be someone to get chickens! Congratulations! Also, in case you didn’t know- there are chickens that lay blue, green, and pink/purple eggs.... they’re very fun. And another note, if you have problems with hawks trying to get the chickens, get a large people friendly, older rooster(at least 1.5 years old). You can also cover their area with orchard/bird/deer netting. I got a rooster to help protect from hawks- he alerts the hens and has scared away many hawks. So far he hasn’t had to fight any, but they have been scared off by him(he’s a hefty 10lbs- enough to deter them from even trying to get the hens)
I'd love to see Harris and Claire do a video together where she walks him through cooking one of her recipes. They're so cute together!

I remember that a couple years ago I made a flan that was like this one. I was pretty proud of it, and I took it to my parent's house for christmas, they all loved it, and my mom said it was just like the one her grandmother used to make! I swear I'm never gonna get a better compliment about my baking than that one.

I love this woman. Who doesn't? She is bright, funny, has the best sense of humor, and boy, she cooks. I have been making crème caramel for 40 years, a pretty delicious dessert. Claire's nailed it, and the same with many other ones. Congrats, it looks yummy. I bet BA people regret a lot losing her.
FINALLY THE WAIT IS OVER!
This was the most anticipated event of the past few weeks.
Made it yesterday. It turned out A-MAZE-ING!. I usually bake it longer but I thought I would trust you on the 'wobble' although it looked liquid when I was taking it out. It set beautifully in the fridge overnight and is the most delicate and smooth creme caramel.

this is further proof that you can live an incredibly fulfilling life without children (human ones). what a delight to watch claire joyfully jump into a new and exciting faze of her life. she is my safe space and i am so thankfull.

hey y'all, if there are any fellow lactose intolerants in the comments, just wanted to throw out there that I've tried making custards with a few different plant-based milks and so far I think coconut works the best - the kind that comes in the can! you CAN have delicious dairy treats
Or you could just use lactose free milk
@@BS-pd9hk Lactose-free milk isn't actually free of lactose, it's just fortified with lactase which usually helps with digestion but it doesn't work for everyone! it would be a good option for those who do use it though, yes!

I believe there are several brands of newer (albeit more expensive) lactose free milks that are ultra filtered, where the components of the milk are physically separated, the lactose removed, and the milk is recombined (often allowing them to have more protein, etc), also making them taste more "normal" than milks like lactaid. the most common brand is probably Fairlife

Before I got w my boyfriend I had never had farm fresh eggs right from the chicken. His family lives on a farm and now I absolutely love all the chickens and swear by fresh eggs. Makes such a huge difference, even in color.
