You're so awesome Claire, all your videos are so enjoyable to watch and of course they're so informative. Also, I would buy that "MMM" merch, regardless of what it is. You make Thursdays better, with Dessert Person and you're killin it.
Every time Claire tastes something she makes, I always say “mmm” in my head because she usually says it 😂. I love how she pointed that out. I’d love a shirt with cartoon Claire and Felix eating something and it says “mmm.” 🤍🙏🏻
Kind of the like the end of the intro where Claire and Felix are chilling and she's got the fork with a bite on it. But maybe adjusted to where she's taken a bite out of it, looking away wistfully with the bite in her mouth (cheek lightly poofed out indicating the food is there).
I really like how the editing team messes with Claire. I don't think she actually said big f*cking marshmallow, willing to bet it was fluffy, but it was funnier to put the bleep in :D
Ever since Claire started her own RUclips channel, my baking got better, the sky got brighter, grass was greener, the economy stabilized, my skin got clearer, I won an Oscar, StayC won a Grammy, I met Megan Thee Stallion, IU had a comeback, and Hotel del Luna got a second season.
They are so delicious. Once you have them homemade, it will be hard to ever buy them at the store again. Consider yourself warned! Nothing like hot chocolate with a delicious homemade vanilla almond marshmallow 😋
THIS IS WHAT I'M TALKING ABOUT! I've been daydreaming about the best marshmallow I've ever had since I was like 10 years old. Every time I look into recipes, they're always so heavy on the corn syrup that I know I won't like it. Thank you for blessing the 10 year old inside of me with this video
Corn syrup is not available where I live, so I replaced it with a 50/50 mix of sugar and water, or actually 1/4 cup sugar and 1/4 cup water, just boiled the sugar solution a bit longer. The marshmallow came out simply fabulous, never had it better in my life. Thank you, Claire, for the recipe!
Something I do with my hot chocolate is infuse it with a raspberry herbal tea so you get a chocolate and raspberry drink and its friggin delicious. Also very good with those chai tea mix.
@@tatertot5673 I usually put hot choco powder (cause Im lazy and think some brands taste pretty good) put the bag in, add 3/4 boiling water 1/4 coffee cream and by the time I stop mixing the bag has already given plenty enough raspberry flavour and voila. Super simple, cheap and fast.
Everything I have made from Dessert Person has turned out amazing except for the pomegranate and cranberry mousse pie - my whipped cream went kinda buttery and then I mixed it too much to get rid of the lumps so it lost a lot of air and it didn’t set. Was really disappointing but the silver lining was that I’m starting to understand why things go wrong and my baking generally has never been better - so thank you Claire! Would be great to see how you tackle some of these more risky recipes, or the ones were things can go wrong with one small hiccup. Adore the book and can’t wait for the next one (when?)!
Proof that you don’t need a fancy kitchen to create delicious things! That being said, I would totally love to see what you end up doing with the space ❤️
I would give absolutely everything just to spend a day with Claire and Vinny in that little house in the woods, drink some hot chocolate and "mmm" our way into the evening.
Tried this for the first time today and they turned out soooo good. I used a 2:1 ratio of sugar to water because it's hard to find corn syrup where I live. Then I piped them into hearts for valentines day! They were way easier than I expected and I'll definitely be making these again.
weirdly, this is one of the things I truly miss after going vegetarian. I've tried to make vegan marshmallows before and it just... no. it is SO hard. but heck yes homemade marshmallows are elite.
I was wondering how these would work with agar. I’ve only had an agar Jello once and I wasn’t crazy about it because it was super hard and grainy. I haven’t had marshmallows or gummies for the last 8 years now 🙈
From someone who's made marshmallows more than an amateur probably should, some tips: - you will need read a lower temp on a candy thermometer than an instaread thermometer (learned this the hard way: Claire uses 245 F, while the candy thermometer I use would need 225 F) - make sure you use the right amount of gelatin (scrape it *all* out of the container you're using to hold the melted stuff) - hot chocolate/cocoa isn't the only drink you can have with marshmallows (my personal favorite is homemade eggnog and orange-nutmeg marshmallows) - toppings after putting it in the pan are better than mix-ins because they won't defluff the marshmallow - layering is possible but hard and you need to get the texture right on both (or more) layers for it to work And then some personal favorite flavor combos: lemon-rosemary (using rosemary simple syrup), orange-nutmeg-almond, lemon meringue pie (1/2 lemon, 1/2 vanilla, crumbled graham crackers in between), and of course vanilla (but using vanilla paste instead of extract so that you can taste it more clearly and it leaves those signature little black specks).
Claire i haven't seen you in years since I stopped watching tv and absolutely love to see you in your home baking exactly the way we both do. It's like I found a long lost friend!
I used Italian meringue for my lemon meringue pie this past Christmas and my husband said it was perfect. He admitted my version was better than any his mom ever made. 😅 Now I want to try this and make marshmallows for my family to go with out hot chocolate!
That looks delicious! Also, I’m glad you also do half milk and half water. I recently tried that because I found myself not finishing hot chocolate because it’s so thick and heavy, but my husband thought it was blasphemous to use water hahah. I’m not into 100% water hot chocolate, but some water helps lighten it up!
A few weeks ago i hadn’t seen bon appetite or you in years, so I checked but you didn’t do it anymore. My RUclips must of found you and out it on my interested list. I’m excited I found this RUclips channel because you are one of my favorite cooks/bakers

But it's been over ten years now and I have Claire's guidance so... it may be time to re-attempt! That square of marshmallow looked so divine 😍
OK, you know you’re deeply engaged when you lick your own fingers when Claire does after touching the marshmallow! Thanks for making this so approachable.
Every time I make this its so satisfying! Such a great recipe! Except the oil lining the pan anything, but that! Mine kept liquifying as oil ate away at them after I wrapped them no matter how many times I coated them in the sugar and starch. This time I skipped that and piped them onto a tray with a spiced cocoa and powdered sugar mix and they look great.
I followed Claire's tip about using the marshmallow as a topping for a lemon meringue pie and it was a hit! Delicious and fun to toast just before serving with friends. Will definitely be doing this again :)
I've been wanting to try making marshmallows at home for a while and this made it feel like it isn't as scary and intimdating as it sounds. I love how accessible you make patisserie recipes!!
OMG. I made these marshmallows yesterday. I coated them in chocolate and put them in the freezer. They are so good!! Pillowy soft with a hard chocolate shell. Mmm … Mmm … MMM!
I was just talking to someone about making homemade marshmallows and wishing for a Claire video on how to make them! And here we are! I can't wait to try this out and make S'mores with the over abundance of graham crackers we have in the house!
I love marshmallow, and watching you make it was so interesting. I’d love to see you make some of those diff shapes, toppings, and flavors (Lemon! Who knew?) that you mentioned.

I’m excited to try this recipe! 💜 #claireifiedquestion when you said to mix in corn starch with the powdered sugar. Like how much? A pinch into however much you use? Or like a quarter of whatever amount of powdered sugar you use?
The corn syrup (glucose) keeps the sugar (sucrose) molecules from forming crystals and keeps the marshmallow from becoming crunchy or grainy. (Thank you Alton brown)
I am so glad that professionals, or maybe just Claire, also have trouble getting their attachments off their stand mixers like I do. Also, I would 100% purchase MMM merchandise, I'm talking sweatshirts, coffee mugs, dish towels, you name it!

The tip where she explains how to make a proper merangue. I made the same mistake where I put the sugar/syrup in way too soon and was constantly whipping it but never got a fluffy consistency. Luckily my great-aunt told me I was doing it all wrong and had to start all over. Great memories cooking with her
I'd you didn't catch it, or it wasn't explained in detail, Whip the egg whites until it's semi-stiff peaks. Only then can you add in your sugar/syrup. Your egg whites will refuse to cooperate. Anyways, best of luck!
Is corn syrup absolutely necessary? I have some homemade golden syrup (think Lyle’s) and wasn’t sure if that would be a good substitute, given that it is an inverted sugar. 2:47

Hey Claire! Really enjoy your episodes at the cabin. I gotta qns is it possible to keep the marshmallows in the refrigerator to let them set? Coz im living in a hotter climate (Singapore) which is the best way to let them set and to store them? Thanks 😊
Hi Claire, i have a tip you may find helpful with your chicken yard! Put down an 8” layer of wood chips and feed them your veggies scraps. They constantly scratching and pooping and mixing it all up and creating a great layer of compost! It’s a lot easier than using a bin. I hope you see this and that it helps!
I tried this with Trader Joes liquid egg whites (since I wasn't sure whether I'd use the yolks and didn't want to waste them), and boy was that a terrible idea. Didn't work at all and when adding the hot sugar mixture it completely liquified. Real egg whites worked perfectly on the first try.
Good Afternoon! How is everyone doing today?

What happened to Felix? 😭
Hi Claire! Have a good day! Thank u for always showing us the ropes ☺️
“Obviously this is like a big fu**ing marshmallow” made me laugh more than necessary.
She probably said "big fluffy marshmallow," which makes it even funnier!
great editing there lmao
SAME! I want Claire to curse more. Claire Swears!
Same 😂
I keep thinking of how wholesome her videos are, and then we hear her talking like a sailor. 😂
Need like a 20 minutes video of those nature sounds and Claire just drinking hot chocolate and reading a book or something that was relaxing.
The new Lofi girl
Yeah, I inadvertently spaced out during "room tone" time and went "Man, I need that on a loop." Very peaceful

nah lol i read her lips and she said it lmao. she curses frequently tho so it's not that inconceivable :')
They’re so funny, the crashing noise when she tossed something in the sink got me

That shot of Claire sipping the hot chocolate was the most beautifully calming thing I've ever seen.

I've seriously never thought about making my own marshmallow before, but now I wanna give it a go.
If you like marshmallows, homemade will blow them out of the water
My mind is now focused on how I'm going to be able to show off that I can make homemade marshmallows.
Same here!
I love cutting them with cookie cutters!

I NEED “Verdict: MMM” merch !!! It has made an almost daily appearance when my bf and I eat anything good haha
Idk how Claire manages to figure out what thing I have been thinking of cooking. I was looking up how homemade marshmallows are done the other day.
Her cherry pie video went up one day after i was thinking i should make a cherry pie. Jedi mind tricks!!

From someone who's made marshmallows more than an amateur probably should, some tips:
- you will need read a lower temp on a candy thermometer than an instaread thermometer (learned this the hard way: Claire uses 245 F, while the candy thermometer I use would need 225 F)
- make sure you use the right amount of gelatin (scrape it *all* out of the container you're using to hold the melted stuff)
- hot chocolate/cocoa isn't the only drink you can have with marshmallows (my personal favorite is homemade eggnog and orange-nutmeg marshmallows)
- toppings after putting it in the pan are better than mix-ins because they won't defluff the marshmallow
- layering is possible but hard and you need to get the texture right on both (or more) layers for it to work
And then some personal favorite flavor combos: lemon-rosemary (using rosemary simple syrup), orange-nutmeg-almond, lemon meringue pie (1/2 lemon, 1/2 vanilla, crumbled graham crackers in between), and of course vanilla (but using vanilla paste instead of extract so that you can taste it more clearly and it leaves those signature little black specks).
