    Every time Claire tastes something she makes, I always say “mmm” in my head because she usually says it 😂. I love how she pointed that out. I’d love a shirt with cartoon Claire and Felix eating something and it says “mmm.” 🤍🙏🏻

      They are so delicious. Once you have them homemade, it will be hard to ever buy them at the store again. Consider yourself warned! Nothing like hot chocolate with a delicious homemade vanilla almond marshmallow 😋

    THIS IS WHAT I'M TALKING ABOUT! I've been daydreaming about the best marshmallow I've ever had since I was like 10 years old. Every time I look into recipes, they're always so heavy on the corn syrup that I know I won't like it. Thank you for blessing the 10 year old inside of me with this video

    Corn syrup is not available where I live, so I replaced it with a 50/50 mix of sugar and water, or actually 1/4 cup sugar and 1/4 cup water, just boiled the sugar solution a bit longer. The marshmallow came out simply fabulous, never had it better in my life. Thank you, Claire, for the recipe!

    Something I do with my hot chocolate is infuse it with a raspberry herbal tea so you get a chocolate and raspberry drink and its friggin delicious. Also very good with those chai tea mix.

      @@tatertot5673 I usually put hot choco powder (cause Im lazy and think some brands taste pretty good) put the bag in, add 3/4 boiling water 1/4 coffee cream and by the time I stop mixing the bag has already given plenty enough raspberry flavour and voila. Super simple, cheap and fast.

    Everything I have made from Dessert Person has turned out amazing except for the pomegranate and cranberry mousse pie - my whipped cream went kinda buttery and then I mixed it too much to get rid of the lumps so it lost a lot of air and it didn’t set. Was really disappointing but the silver lining was that I’m starting to understand why things go wrong and my baking generally has never been better - so thank you Claire!
    Would be great to see how you tackle some of these more risky recipes, or the ones were things can go wrong with one small hiccup. Adore the book and can’t wait for the next one (when?)!

    Tried this for the first time today and they turned out soooo good. I used a 2:1 ratio of sugar to water because it's hard to find corn syrup where I live. Then I piped them into hearts for valentines day! They were way easier than I expected and I'll definitely be making these again.

    weirdly, this is one of the things I truly miss after going vegetarian. I've tried to make vegan marshmallows before and it just... no. it is SO hard. but heck yes homemade marshmallows are elite.

      I was wondering how these would work with agar. I’ve only had an agar Jello once and I wasn’t crazy about it because it was super hard and grainy. I haven’t had marshmallows or gummies for the last 8 years now 🙈

    From someone who's made marshmallows more than an amateur probably should, some tips:
    - you will need read a lower temp on a candy thermometer than an instaread thermometer (learned this the hard way: Claire uses 245 F, while the candy thermometer I use would need 225 F)
    - make sure you use the right amount of gelatin (scrape it *all* out of the container you're using to hold the melted stuff)
    - hot chocolate/cocoa isn't the only drink you can have with marshmallows (my personal favorite is homemade eggnog and orange-nutmeg marshmallows)
    - toppings after putting it in the pan are better than mix-ins because they won't defluff the marshmallow
    - layering is possible but hard and you need to get the texture right on both (or more) layers for it to work
    And then some personal favorite flavor combos: lemon-rosemary (using rosemary simple syrup), orange-nutmeg-almond, lemon meringue pie (1/2 lemon, 1/2 vanilla, crumbled graham crackers in between), and of course vanilla (but using vanilla paste instead of extract so that you can taste it more clearly and it leaves those signature little black specks).

    I used Italian meringue for my lemon meringue pie this past Christmas and my husband said it was perfect. He admitted my version was better than any his mom ever made. 😅 Now I want to try this and make marshmallows for my family to go with out hot chocolate!

    That looks delicious! Also, I’m glad you also do half milk and half water. I recently tried that because I found myself not finishing hot chocolate because it’s so thick and heavy, but my husband thought it was blasphemous to use water hahah. I’m not into 100% water hot chocolate, but some water helps lighten it up!

      Alton Brown's recipe is reliable, delicious and closer to an American marshmallow that people are used to. But you should try Claire's version too.

    When I was like 12 I tried making homemade marshmallows and they were pretty decent, except the sugar kinda re-crystalized and I had little flecks of sugar clumps throughout. But it's been over ten years now and I have Claire's guidance so... it may be time to re-attempt! That square of marshmallow looked so divine 😍

    Every time I make this its so satisfying! Such a great recipe! Except the oil lining the pan anything, but that! Mine kept liquifying as oil ate away at them after I wrapped them no matter how many times I coated them in the sugar and starch. This time I skipped that and piped them onto a tray with a spiced cocoa and powdered sugar mix and they look great.

    I followed Claire's tip about using the marshmallow as a topping for a lemon meringue pie and it was a hit! Delicious and fun to toast just before serving with friends. Will definitely be doing this again :)

    You can put frozen peas etc around your mixer bowl to cool your mixture. Same when you make Italian butter cream icing.

    The tip where she explains how to make a proper merangue. I made the same mistake where I put the sugar/syrup in way too soon and was constantly whipping it but never got a fluffy consistency. Luckily my great-aunt told me I was doing it all wrong and had to start all over. Great memories cooking with her

      I'd you didn't catch it, or it wasn't explained in detail, Whip the egg whites until it's semi-stiff peaks. Only then can you add in your sugar/syrup. Your egg whites will refuse to cooperate. Anyways, best of luck!

    Is corn syrup absolutely necessary? I have some homemade golden syrup (think Lyle’s) and wasn’t sure if that would be a good substitute, given that it is an inverted sugar.

    Hey Claire! Really enjoy your episodes at the cabin. I gotta qns is it possible to keep the marshmallows in the refrigerator to let them set? Coz im living in a hotter climate (Singapore) which is the best way to let them set and to store them? Thanks 😊

    Hi Claire, i have a tip you may find helpful with your chicken yard! Put down an 8” layer of wood chips and feed them your veggies scraps. They constantly scratching and pooping and mixing it all up and creating a great layer of compost! It’s a lot easier than using a bin. I hope you see this and that it helps!

    I tried this with Trader Joes liquid egg whites (since I wasn't sure whether I'd use the yolks and didn't want to waste them), and boy was that a terrible idea. Didn't work at all and when adding the hot sugar mixture it completely liquified. Real egg whites worked perfectly on the first try.
