Just wanted to say I made this and it was incredible!!!! It was honestly the best cake I have ever had, and knowing I made it myself felt so cool. I did use a simple buttercream recipe for the frosting instead (I don’t love creamcheese frosting) but the actual cake was so moist and lovely. Highly recommend!

This video had rekindled my desire to find a from scratch recipe for loft house cookies. In college there was a bakery that made light and soft sugar cookies with a light sugary (buttercream?) frosting that I still dream about.
I halved the recipe for the cake base and was able to easily make it in a standard 4.5 qt stand mixer and bake it in a 9x13 pan. So moist and tender, and as someone who prefers moistness over loft to my cake it's everything I want. And it was so much easier than fussing with creaming butter and sugar at the beginning! Subbed chocolate jimmy sprinkles and topped it with a half batch of chocolate cream cheese frosting from the birthday cake recipe and it made a perfect, easy, and flavourful chocolate polka dot cake.
