    Blueberry muffins are such a favorite of mine! They are great for breakfast or as a yummy snack. Sourdough makes them easy on the stomach and adding half whole wheat can make this a hearty delicious treat. I love turning every day delights into sourdough treats, and I've dedicated my channel to sharing ideas of ways you can use your sourdough daily. What delicious treats do you want to make sourdough?     Sourdough Blueberry Muffins
    Ingredients
    1 C fed starter (you may get away with unfed, they may be more dense)
    1/2 C honey
    1/2 C milk (or 3/4 C if you are using half whole wheat flour)
    2 C flour (all purpose, or 1 C all purpose 1 C whole wheat)
    1 tsp salt
    1 tsp baking soda
    1 1/2 tsp baking powder
    1 tsp cinnamon
    2 eggs
    1/2 C melted butter
    2 C blueberries
    Instructions
    1. Add starter, honey, and milk to a large bowl. Mix until the starter is dissolved in the milk. Then add the flour, and mix thoroughly until combined. Allow to ferment covered on the counter overnight, or at least 8 hours.
    2. In a small bowl, mix salt, soda, powder and cinnamon together. Add this mixture to the large bowl and mix until thoroughly incorporated.
    3. In a separate medium size bowl, combine eggs and melted butter. Then add this mixture to the batter.
    4. Mix batter until all of the ingredients are completely incorporated. You can use a spoon, your hands, or a stand mixer.
    5. Gently fold in the blueberries gently so you don't break them.
    6. Using a muffin tin, fill muffin paper cups 3/4 full with batter (or you can generously grease the muffin tin and put them directly in). Cook at 375 for 25-30 minutes until brown on top. Enjoy!

    Just made these and are so good! So healthy too! Make them for my husband's work and so much better then store boxed!
    I do better with weighed measurements so I was able to figure out each ingredient in grams for anybody else that is interested
    188 g honey
    230 g starter
    200 g milk
    240 g flour
    Everything else the same. This made the perfect batter that stayed moist!

    Yay! Breakfast muffins are great now that my oldest is in school. It’s a perfect quick breakfast. I might have to try it with chocolate chips instead of blueberries so he’ll actually eat them.

    Delicious recipe! And healthy! Congratulations and thank you very much for sharing.
    I only made small adjustments:
    I used a starter already fed the night before.
    I added to the starter: honey, the mixture of egg and melted butter and stirred well.
    The flour mixed with other powders came last.
    And no extra milk needed to be added.
    It worked for me and I hope I'm helping others. :)

    Oh, this looks so perfect! I am going to try it with my gluten free starter. It looks somewhat similar to the regular banana muffin recipe I have. I am going to try adding sourdough to that recipe and using this one as a guide.

    I made these muffins first thing this morning and they are super moist and smell incredible! Love this recipe. Also, I definitely had to add the quarter cup of milk.

    Have you ever tried with frozen berries? I was thinking of making them for Christmas morning with some frozen blueberries and raspberries that I have on hand. Thoughts? Looks like another wonderful recipe

      My only thought is that frozen berries let out more liquid than fresh, so it might be worth letting them defrost first and then draining off the extra liquid! Other than that it should still taste delicious!

    you can get oil spray now that is non aerosol so have no chemicals

      I bought a sprayer that I can add avocado or olive oil to and it somehow makes it seem like aerosol. It works great!!
