Korean side dish (banchan): Soy braised black bean (Kongjaban)

  • This simple, easy side dish is one of my favorite banchan. My mom always packed this for my lunch growing up in Korea. It’s sweet, savory and packed with protein. This can be made in a big batch and stored in the fridge for several weeks. It is so delicious.
    Ingredients:
    1 cup dry black beans
    1 cup water
    1 tbsp olive oil
    2 tbsp Korean soy sauce for stir fry
    1 tbsp Yondu, vegan sauce
    2 tbsp sugar
    2 tbsp Mirim
    1 tsp sesame oil
    1 tsp sesame seeds
    1/2 tbsp Oligodang
    *This dish can be made with yellow soybeans or chickpeas.
    *Rinse the black beans before soaking.
