I’ve kinda had this recipe in my back pocket for a while, just made it. I used a Serrano and a jalapeño. I cook and use these peppers all the time, so I am amazed how much heat this brine has! The boiling soy mixture must really bring out the most intense flavors! They’re in the fridge now and can’t wait until tomorrow to try one. Fantastic video thank you!!

@@janem3575Don't you know there's an indicator that you can place it into the pot with the eggs that'll show you exactly how done the eggs are? This indicator had never failed me despite the sizes of the eggs.
Dear Helen, thank you for taking the time to give a very detailed run down on how to cook Mayak eggs. My boys love them and kept asking me to make some (I have never tried or eaten before). Just to clarify, for the braised eggs, the soy sauce broth is before or after adding the cut vegetables. If adding the eggs after the putting in the cut vegetables, and then braising for another 15 minutes, wouldn't the vegetables be over-cooked? If before adding the vegetables, then when are the vegetables added - after it has cooed down or just after the braised 15 minutes. Thank you for the clarifications.

My daughter really loves this. She asked me to make some more after making it the first time. In fact, she likes all your recipes that I've made so far. It's a breath of fresh air from our usual stuff.
I agree about Korean food being a breath of fresh air from average, usual meals!!! Korean food is so addicting because it tastes sooooo Amazing!!! I'm super bored with my regular meals these days, I'm always adding sesame oil/ vinegar/ brown sugar/ soy sauce in some combination just to add an extra something! to my otherwise (what I've now come to view as) Bland meals. E.g. I added these combos to microwaved chicken pot pie and let me say! I never had such a Deeeelicious chicken pot pie!!!

Thanks for sharing this recipe! Do we need to use special organic eggs for the soy sauce fermented egg yolk? Since the yolk is completely uncooked, would there be bacteria?

I just wanted to thank you for this recipe and explanation. I know in the states if some food is inexplicably good and addicting, we’ll joke that it’s like crack. Thinking about it, I’m not completely sure why that’s funny. I made these eggs for the first time three days ago and WOW. I honestly wasn’t sure I’d like it, I don’t care for boiled or fried eggs. I prefer soft scrambled, omelet and…..steamed egg is MY FAVORITE. But I actually ENJOYED these marinated eggs. The strong egg white and yolk taste was lessened as well as that boiled egg smell was gone. I still can’t believe I liked it lol. Thank You for sharing your recipes and always sharing a story behind the food. I really love Korean food and I’ve learned a lot from your content. Our foods, why we cook it, and how…..when shared with others, it invites people in to who we are and makes our cultures accessible. I think it really makes the world smaller. I literally ALWAYS have in my fridge- Homemade Kimchi, or Kkakdugi, pickled veggies, and now I can add these eggs (Which my mom also enjoyed). I love cooking and I always appreciate adding something delicious to the menu.

Good question! I would ‘resue’ more eggs within the first week. If beyond that, I would reheat the broth, bring it to boil and then add the eggs. But doing this will change the broth to be more salty. In general, I would only reuse the broth within a week of making it.
