Hi! I just made these soy eggs and had my first taste. I did dot expect to like it because I didn't like the taste of the broth however, when the hard boiled eggs are paired with the broth, the magic happens. Oh wow!!! They are seriously delicious! I put the eggs in the refrigerator so that the broth can macerate into the eggs more. I can't wait to try it! Thanks for another great recipe!

There are many chickens at my in-law farm so we have lots of eggs everyday. I usually cook the eggs and eat them lightly seasoned with a mixture of salt, olive oil and vinegar and sometimes oregano.My mother in law likes to make big glasses filled with boiled eggs preserved in water, salt and vinegar. I think she will like it very much if I bring her a glass with this recipe for 계란 장조림. Thank you for helping me find a way to peel the eggs without scratching them because that way they looks much more beautiful and yummy . Maangchi, you are the best.

I believe that soaking speed of the sauce is very fast compared to other ways of "eggs in broth." After supper I made another batch of Gyeran-jangjorim, and in your recipe I read "a cup of water." I found the reason why my eggs were gettig darker and darker so soon! I know it was MY fault. Ive been planting and weeding my garden for the summer season and have a peach tree full of blooms aka pollen. I have sinus issues so of course I now have a sinus infection and cant see my Dr until tomorrow. Soooooo Im making this soup to help open my sinuses some (plus its one of the few foods I can eat when Im sick). Being in a small town I cant get dried anchovies so instead I use fish sauce (Id use the dried ones but its not an option for me). Im to sick to go get some jalapenos so I use the ones that came in my pickled quail eggs,lol. I also need a lot more garlic for my sinuses and well I love it so I used fresh and powdered. I need broth as well so add beef boullion. Anyway regardless of what you have to use or need to use Maanghi makes some good grub. I am SUPER picky about food but Maanchi is one of the very few foods/recipes I love and eat. Id invite her to my house anytime! Oh yeh I also have to make all my food gf so theres that too.

+Beth Kittle As a native Korean, my mom prepared this without anchovies, she only used onions, garlic and green chillies. you can cook with this recipe without Anchovies. It doesn't seriously worsen the recipe at all. personally I prefer the recipe without anchovies, cause it has little bit clearer taste than with anchovies.
This looks good, but getting the dried anchovy would be time consuming for me. I imagine I could tweak the recipe to work with anchovy fish sauce I already have 🤔

Maangchi If you take the eggs and set them long ways in the carton while they are warming up to room temperature you don't have to stir them around because the egg yolk settles to the center of the egg.

I love putting abit if brown sugar for that sweet taste. I also add abit of sesame oil and scallions on top of egg when it’s time to eat it with rice. Yum!
Those eggs look so delicious Maangchi! Did you use fresh eggs for this recipe, or were they a little older? My mom always told me to use older eggs for hard-boiling, since they're easier to peel, but we never used your peeling trick!
My Mom likes to make these too but she puts star anise in the soy sauce and sometimes she also cooks other things in the broth along with the eggs like chicken feet or tripe and daikon. Theres also another one called Cha Ye Dan (茶叶蛋) in China where they crack the shell and then let it sit in the broth. When you unshell them later on they look marbled and so cool.

It doesn't seriously worsen the recipe at all. personally I prefer the recipe without anchovies, cause it has little bit clearer taste than with anchovies.

This looks good, but getting the dried anchovy would be time consuming for me. I imagine I could tweak the recipe to work with anchovy fish sauce I already have 🤔
Use chicken or beef stock instead of water, then you can skip anchovies.

Maangchi If you take the eggs and set them long ways in the carton while they are warming up to room temperature you don't have to stir them around because the egg yolk settles to the center of the egg.

The secret of peeling eggs is making sure the egg is completely cooled. If it isn't cool then it'll be harder to peel the egg

I love putting abit if brown sugar for that sweet taste. I also add abit of sesame oil and scallions on top of egg when it’s time to eat it with rice. Yum!

Those eggs look so delicious Maangchi! Did you use fresh eggs for this recipe, or were they a little older? My mom always told me to use older eggs for hard-boiling, since they're easier to peel, but we never used your peeling trick!

My Mom likes to make these too but she puts star anise in the soy sauce and sometimes she also cooks other things in the broth along with the eggs like chicken feet or tripe and daikon. Theres also another one called Cha Ye Dan (茶叶蛋) in China where they crack the shell and then let it sit in the broth. When you unshell them later on they look marbled and so cool.
