I tend to not take the meat off one side without releasing the fillet from the other side so the spine does not slump due to the head being on. The fillet left on supports the other side before taking both fillets off the spine at the same time.

I love when you give your opinion. Who would have ever guessed that you preferred Spanish Macs over Wahoo - at least raw. SM are easy and cheap to catch and very plentiful versus Wahoo which require quite a few gallons of fuel and lots of dollars in tackle spent before boating one.
Sailing across the pacific we looked forward to catching wahoo. On one occasion we served up curried wahoo to some friends who hated all seafood. I told them it was chicken and then they were curious were we found such chicken in remote islands.

I have my wahoo commercially processed on San Diego and they always trash the fish. I've started telling them to not skin the fish which gives me a better product. I wish those guys would watch your video.

If you leave the meat on the frame you can rip / pull the skin off, then cut the filet. Works well with tuna, dorado and larger jack's.
great tip for the second side, definitely dont want a tear in the wahoo :p
