  • Masa for tamales is typically made with manteca (lard) and a meat-based broth, but plant-based tamales are just as delicious and can easily be made to appeal to every palate and dietary preference. This recipe for vegan tamales from Mariana Alvarado of Masazul uses vegetable broth, with refined coconut oil as the fat, and a delicious filling of rajas con elote, topped with cashew crema. The filling combines the sweetness of fresh corn with a bit of kick from roasted poblano peppers, and the vegan cashew crema provides a decadent, creamy balance. As always, we're using masa harina for the tamal dough, which lends an especially delicate, tender texture to the tamales.

Good recipe. Had to tweak it a fair bit to suit my tastes but that's just me.
I've found that the vegetarian refried beans from Rosarita also make for an excellent filling ingredient.

So I have never made tamales bc I honesty never had the desire and my mom isn't the best teacher but since they hit Mexico this year my sis and I said let's try it youtube will assist! She does eat meat so chose a traditional pork recipe which really was tasty and I chose a vegetarian one but must admit hers were more flavorful! Also out of the many videos her lady did not use a mixer and her dough was thick and she used her hands; I went this mixer route and was not at all please with how the masa came out so....I think I will have to go no mixer route next time and just use mis manos! Sorry not sorry but I did order a yellow bag of masienda and look forward to making corn tortillas with it!
