I made vegan tamales yesterday and used jackfruit so it would be like traditional Chile verde tamales and they are crazy close to the real thing! Everyone loved them! The bean mixture looks really good, I will try it next time!

The only tamales I’ve had are the ones I had while living in New Mexico. Pork simmered in NM Hatch peppers was the filling. Some people used the broth from the pork chili mix to the masa for extra flavor. Huge, Ginormous batches were made at a time and sold by the dozen to eager buyers. (Like me). The Chili’s were actually roasted in batches (a big burlap bag full of chili’s)in big round metal screen cages turned over a flame till charred, then returned to the burlap sack to take home and peel the skins off. Right in the grocery store parking lot! Thanks for a vegan option. They are time consuming, but oh so delicious! I just might make these 😍
