  • * HUGE TIP: You can cut the process in less than half the time by NOT using jackfruit in brine! Instead use jackfruit in water that just needs a good rinsing and break it up. (seeds an all!     Today I have a yummy tamale recipe! That will take you back to the tamales you used to eat as a child! These tamales are cruelty free with no animal products or byproducts! Anyone can enjoy these delicious tamales..
    I have a Jackfruit based chile rojo tamale & queso con rajas! (aka cheese w/ jalapeño)

    Ingredients used:
    *Guajillo Sauce Portion Needed:
    9 Guajillos
    4 Raw Garlic Cloves
    1 Tsp Black Pepper
    1/2 Tbsp Oregano
    1/2 Tbsp Crushed Bay Leaves or 1 Whole Bay Leaf
    1/4 Cup White Vinegar
    & 1/3 Cup Guajillo Water
    * Same seasonings apply
    (This makes roughly the cup needed for the recipe)
    40OUNCES OF Guajillo Sauce:
    *only make this amount if needed for multiple recipes!
    35 Guajillos
    15 Raw Garlic Cloves
    1 Tbsp Black Pepper
    1 1/2 Tbsp Oregano
    1 1/2 Tbsp Crushed Bay Leaves or 3 whole Bay Leaves
    1 Cup White Vinegar
    1 Cup Guajillo Water
    Jackfruit:
    3 Cans Trader Joes Jackfruit in Brine that has been pre-boiled for 2 hours to remove brine taste
    1 Cup Guajillo Sauce
    1 1/4 Cup Vegetable Broth
    1/2 Cup Diced Onion
    Jackfruit Masa:
    4 Cups Maseca for Tamales
    2 Cups Warm Water
    1 Cup Vegetable Broth
    12 oz Vegetable Shortening
    2 tsp Baking Powder
    1/2 Cup Guajillo Sauce
    Salt to tast

    Out of all the vegan tamales videos I've seen, this one intrigues me the most. I have had jackfruit before and can see it imitating fake pork. My sister and I plan to make tamales this season (without our parents who went to Mexico to visit their family) and I am hoping to try these out! I will let you know how they turn out!

    Thank you so much for your recipes! I made both over the weekend! They came out beautifully!! I gave some to my Daughter in Law, whose family is Mexican and makes the most delicious tamales. I haven’t been able to enjoy them since choosing to eat a vegan diet. I gave some to her and she raved! She said she would not be able to tell that they were vegan if she didn’t know. She said the masa texture was perfect! Thank you so much - can’t wait to make more of your beautiful recipes!!

    Just started watching your vlogs. I followed your instruction for cooking jackfruit. Tonite, I made a jackfruit tostada, it came out so very yummy. I loaded it with rice, retried beans, jackfruit, vegan cheese and some vegan sour cream , shredded lettuce.

    I’m allergic to meat and all animal products, my body basically forced me to become vegan, my family is hispanic and they still make most meals with animal products so it’s hard on me.     I've been binge watching your videos. Loving them. My question is if I got jack fruit in water do you think id still need to boil it twice?

      Thank you for watching ❤️ This method is great for jackfruit in brine because many people have access to it & it’s difficult to make it neutral tasting without this method BUT if you jackfruit in water has a neutral flavor out of the can ready to cook, then yes you can skip it! Good luck 🌱☺️

    I’m not Hispanic but I work at a Mexican restaurant and my boyfriend is Mexican. At work a lady would sell her tamales, manzana con crema, manzana loca, coktel de frutas, etc out of the back of her car. I turned vegan and now I can’t eat any of my boyfriend’s mom’s food or from the lady from the car. I miss tamales so I’m gonna attempt them on my own even though I’ve never made regular tamales.

    I can’t wait to make this dish. Please purchase ALUMINUM FREE baking powder . Aluminum is a heavy metal. Aluminum free is easy to locate at your local grocer. I love Mexican Food!! I’m OCD as well . I don’t like my food falling apart either. ❤

      Yes! ❤️ I freeze mine too 3-6 months tops. When reheating them, thaw in the fridge a day before & steam 15-20 minutes. If you reheat from frozen, do 25-30 minutes 💕😚

      Hi love! I don’t quite remember but it all depends on the amount you put inside! You can make like 15-20 tamales :)

    Airam, to soften the guajillos do you boil for the full 10-15 minutes, or bring to a boil and then simmer at a lower temp for the 10-15? I want to make the big version. I am assuming the sauce can be portioned and frozen.

      Yes it can be frozen! :) And No timing on the guajillo really, just eyeball them until they have softened. Boil, then simmer is great!

    Sooooo I actually made the 40 guajillo recipe bc I didn't read closer 😅 and I was wondering what can I do with the leftover guajillo sauce that isn't as time consuming to make like tamales? Help would be greatly appreciated lol. Also this recipe was delicious!

    can we use fresh corn husk? do we still soak it? i have fresh corn growing thought i could keep the husk for tamales

      Yes you can! Usually used for sweet corn tamales. I would suggest soaking them overnight or in hot water for an hour or so. Just until they are pliable! :)

      I have never used an instant pot but I would say keep an eye until the dough looks cooked an thats it! Maybe an hour? :)

    My husband hates vinegar. I can't even clean using it and if I cook with it, he can pick up the flavor. Is there a substitute I can use or will the other flavors cancel the vinegar taste?

      Honestly vinegar adds a tartness to guajillo sauce BUUUT, I personally have cooked without on an occasion that I didn’t have it. So you can not add it! It should work fine. Maybe add a tad more guajillo water in place of it 🙂

    Why do you try to get rid of the brine. Does it make the taste better when you get rid of the brine ?

      Hi love! It only matters in the jackfruit is IN brine. Some brine can taste like a pickling, like sour, bitter taste. Especially the trader joes brand jackfruit is pretty strong. When filming this video it was the only one accesible to me BUT since filming this video I have been using now jackfruit in water that needs no boiling method. I purchase online! All it needs is a good rinse and you can shred it hard parts, seeds & all & use as normal! It’s linked in the description if you want to use it ❤️ It cuts off that 2 hours cooking time.

      Usually the dry section of mostly any store! Or the “hispanic aisle” Like safeway, vons, walmart, grocery outlet, target, ralphs, etc !! The place that will forrrsure have them is mexican esque markets! Like food 4 less, superior groceries! Definitely depends what city/state/country you live in dear 💖
