  • In this video, I share my favorite way to use up Zucchini when we just have so much on hand. This video is apart of an open collaboration, Zucchini 4 Days.     Fritters are my fav way to store squash & zukes. I freeze them in regular ziplock freezer bags, seperated by wax paper squares. They reheat amazingly well in an air fryer and quite well in a regular over or toaster oven. While they are usually a side dish, I love a fritter burger!! Dress it just like a hamburger!

    Those look fantastic, LeAnne! What a good idea for using zucchini, or even summer squash, too. I think I'll be trying this out very soon!

    Fantastic! I've only made a similar dish once. Yours looks much better. I can't believe you did not add onions though ! I don't have a garden, but I'll get some & try it. Definitely like the idea od diced & shredded together for texture. As usual you are the great.

    Love these! I have been making these for years. You can also take them and make a casserole like eggplant parm with the fritters! Yum! I always shred it all vs dicing them. They get crispier. Yum

    I was so over run with zucchini in a good way this year. My first crop finished up but I have the bumper crop in the works. These fritters look amazing and I bet they are delicious.

    Haven’t had zucchini fritters in a long time. I don’t grow them since I’m the only one that eats them. I do get them in my CSA when I want them though.

      I have a Kitchen aide 13 cup but the dicer attachment is pricey.

    I never get an abundance of zucchini. The squash bugs destroy my plants and I only get about 3-4.

      I doubt they make it any more but it’s a 13 cup Kitchen aide with an 4 cup bowl on the side.
