Vegetable beef with barley is my all time favorite soup! I love it with a really good cold it sandwich or a club on toast. It’s honestly great any time of year!
Barley is great at thickening. If my chili is looking a bit thin, I throw in some barley to thicken it right up. Same for soups, hotdish (casseroles for you non-Minnesotans), etc.

I used leftover leg of lamb, onions, celery, carrots, rutabaga, barley, half chicken and half beef broth, a can of diced tomatoes, parsley, bay leaf, a pinch of rosemary, all cooked together in the instant pot for 30 minutes. 😋😋😋
G'day LeAnne. Finally finished watching. It looks great and we just about always put pearl barley in out broth style soups with a meat and veg. Something my mother used a lot and my wife was hooked on it when she first had my mother's soups. Howard left us waiting a while there, but was there really any doubt that he'd like it. 😁 We are creeping into colder weather in this part of the world and I'm going to be going back through your recipes. We love beef barley soup! It's been hard to find barley anymore at the stores! I've never seen it in a bag like that before! Maybe I've been looking in the wrong place in the stores! All that's missing is a good old piece of cornbread to go with the beef barley soup!

I make a very basic beef barley soup, it’s my family’s favorite we have at least twice a month during the winter. My beef barley soup is beef,barley, Worcestershire sauce onion and beef broth and I didn’t look at any recipes just threw what I thought should be in it and my family loves it

I have to say there only time I have used barley is in beef barley soup! I do mine in a dutch oven and sloe cook it. I love the texture and flavor of barley so I really need to do some recipe research to see what else I can use it in. Good to know you can do a shelf stable version. Thank you LeeAnne 😊

This looks actually good. The only barley I've ever had was as a kid. My mom made potato barley soup that I absolutely hated. I did like Campbell's beef & barley but it wasn't my first choice so I have just never cooked it. This looks good

We do a beef and barley soup but we use ground beef and tomatoes along with Worcestershire sauce, beef stock, carrots, celery and potatoes.
Made beef barley soup a lot when times were tough, I made it with ground beef and it was so good!

Barley can’t be safely can because it’s a grain.
You could can beef soup, and then add the barley after you open it (or add a flour roux to make stew).

Barley isn’t safe canning food for home canning. But you can cook it and add it after you open the jar.

I have not done it yet but yes you need to cook the pasta first then dehydrate it. I do have a video on canning beef.
