Just made this. Had to modify it a little based on what I had on hand but it turned out great. I did make a beef broth using soup bones and beef shank first. Not sure if it's all in my mind or what but this soup actually makes me feel physically and mentally well. Homemade broth to soups are probably completely underrated and overlooked. Okay, here's another way to describe it: it's the exact opposite of how you feel when you eat fast food and have that sudden feeling that you really shouldn't have done that, as you now feel sick and sluggish. This soup makes you feel nourished on a deep level and positive energy goes up.

Yum! I have everything but the carrots. This is going on my "to make" list. Glad I vacuum sealed and froze a bunch of Chuck Roasts when the were $4/lb!
I made a few substitutions, but I followed your recipe as closely as possible. I had several baggies of shaved steak in my freezer that I wanted to use up, so I used three 12-oz baggies full of shaved steak instead of chuck roast and only simmered it for 45 minutes rather than 2 hours. Instead of using only carrots, I used 3 carrots and 2 parsnips. And I didn't have fresh spices so I used dried ones. I used 4 bay leaves (3 large and 1 small one). I used 1 tablespoon of parsley. I used 1 teaspoon of rosemary. And I used 1.5 teaspoons of thyme. Otherwise, I followed your recipe to the letter and it was delicious. I'll probably make this once a month from now on. It was that good.

My son and his wife had their second child this week, so my wife and I took several helpings to them. They really appreciated this meal especially after getting home from the hospital that day. My mum made the best beef and barley soup. She put turnips and parsnips in it, along with mixed veggies, and it was amazing. I've tried and tried to recreate her soup but so far I'm falling short. It's good, but not my mum's. I'll keep trying. 😊❤
One of my childhood favorites. I really love the herb bundle touch. At about 8:45 into the video, I noticed you used a bench scraper with sides to put the veggies in the pot. I love that! I’m always dropping chopped veg on the floor, lol. Did an Amazon search and found out Rachael Ray put this out. Just ordered it, thank you.❤

The vinegar would be good to add (like you mentioned) and anchovies go well with tomatoes. It would be the perfect thing to add during cooking or as that last little bit of extra flavor in your bowl. Sometimes it is not worth the extra item to clean for just one thing. I have a tendency to use my hands instead of bench scraper too in this situation.
I think I will like this recipe. There are not so many vegetables. The problem with putting every vegetable you can think of in a soup is that every soup then starts to taste like every other soup.
I'd put tomato paste in the soup before putting in all those tomato chunks but that's just me. Not a fan of tomatoes in soups except for a delicious tomato bisque.

I've had barley in my pantry forever... I guess I've been waiting for this recipe LOL

I use balsamic vinegar instead of red wine. Great depth of flavor and does not take much.
