Next time, try flipping the pizza over after you bake it in the oven and then put the toppings on the brown side. This will give the other side, the soft white side time to brown when you put it back in the oven. Maybe then, when both sides are crusty, the texture will be firmer to hold like a real pizza. Something worth trying.

Not necessarily….I use the Daisy low fat brand, b/c I add cheese and olive oil. I get my fat macros just fine without needing full fat cottage cheese..

I have ADHD and grew up with SKIM MILK.I had major blood sugar crashes because everything was LOW FAT THIS , LOW FAT THAT. No one says anyone when you eat sugar but FAT? omg, the world ends.. We need to shift our way of thinking about thigns. It is SUGAR that is the problem, not fat.
Adding some mozz/parm cheese mixture (about half a cup) works wonders on this recipe (as well as college peptides, or beef gelletan). It gives it more structure, as well as flavor (cheese). For mine, I also put in a teaspoon of baking powder to floor it up. Also, borwning the top with your broiler is a good idea as well.
Full fat is what I use. It makes great waffles too if you add a flavoring. I used almond extract but I'm sure you could use vanilla extract; I just don't like vanilla. I just use one egg, however and it's not so runny. Works better for me.
I made this today and for the first time, I like a carnivore bread-like recipe. It would be nice to have a sandwich type of thing again. Mine was a bit too soft. It may be because of the brand of cottage cheese I used. I am thinking that I will add a T. of gelatin to the next batch to see if I can get it a bit firmer. Thx for the recipe. It's a keeper.

This looks like an improvement over my other cheese-crust pizza, which I finally gave up on (tasted too strongly of the colby-jack cheese it was made from, AND I could never get it thin enough). Blander cottage cheese would have to be better tasting. I'm gonna try this. But I think I will flip the crust over onto a second piece of parchment paper to brown both sides (split the time between the two bakes). It would likely get rid of yet more moisture - a good thing in a pizza crust.
I suggest you try Lillie Kane's pizza recipe. It uses 6 oz of shredded mozzarella (mild flavor) and 2 eggs for the crust. You can spread it pretty thin if desired.

I tried an almond flour, eggs, parm cheese and some thickening agent and it was good but probably like this one not strong enough to just pick up like a real slice. I don't mind eating pizza with knife and fork but kids do. I wonder if you've tried COMBINING different techniques such as part cottage cheese, park riced cauliflower, some almond flour, thickener, parm cheese etc. I don't think the flavors would be too strong and maybe it might hold up like real slice. I'm also wondering if somebody to just reduce carbs combines regular pizza dough with lower carb methods. If we could cut carbs in half or better yet 1/4 and had solid crust would be awesome!
I like that this one is so much easier than a cauliflower crust. That one is so much effort and mess. The almond flour/mozzarella crust is another one I really like. Never thought to combine them!
I have given cheese to every dog I have owned. You should explain yourself a little more, your dog couldn’t have died from taking a bite of cheese,either they ate a ton , became constipated and bowel complications or allergic to dairy
I've given my dogs cheese without any problems. I didn't give them huge-mongus amounts. They beg at the dinner table - and I might've given each a small piece smaller than say, a dime sized piece. They love cheese, but I'm the human, and they're the dog, and I know that too much of anything will kill anybody/anyone/anything. LOL
I gave this a go but it didn't work for me, it cracked apart as soon as I touched it and my second attempt wasn't much better and I didn't enjoy the taste of it. I have since discovered avocado bread which I thought that I would hate because I don't like avocados but it was actually really good and made a great sandwich, is definitely going to be my go to for bread.

I tried this on a copper silpat and it burned (350F for 30 min) - warning to anyone who is thinking of using that instead of parchment. I'll be trying parchment tomorrow.
I have seen it done both ways. I did not have an issue with the wrap sticking to the parchment paper. Before it cooled, the wrap felt like it wanted to stick to itself if you were to fold it over, but was not sticking to the parchment paper.
For the whole crust! That is less than a normal pizza crust and less than or comparable to a wrap if you use half. The point is to be more low carb and high protein.

Go cold turkey for 6 months and enjoy the freedom of the shackles that come off. 3 years later I’m not even interested. I just cook the pizza topping in a casserole dish once every 6 months or so, who needs crust?
Did you read the ingredients list of your cottage cheese? Take that number plus one. That is how many ingredients are in it. Still a much healthier crust than most pizza crust.

Mine turned out good . I tried mine with sliced turkey and mozzarella cheese.

It depends on the breed as to issues. Some breeds are high risk for things like pancreatitis, in severe cases it can be fatal.

Could be a lighter baking pan or a difference in the cooking time

It is not crispy and much thinner than naan. I’d say it’s similar to a thick crepe if that makes sense
