This looks lovely, and I’ll make it tomorrow - just one question - why do you throw out the mushroom stems? Apart from any dirty edge, I use all of the mushroom. Also broccoli stems, cut smaller, they are delicious and nutritious…Thanks for this recipe, I just came across your site…🌼
Oh my word!! I just made this and I added sundried tomato's over the veggies. And I used cayenne pepper instead of hot sauce, and like you did I added plain Greek yogurt on top. It was sooooo delicious i couldn't believe it!! I made it for my dinner for the week. I used goat cheese feta cheese block. Thank you for sharing such an amazing meal!!!

i was introduced to the use of CREAM SHERRY, as a condiment of sorts, when sautéing mushrooms and onions, 40 yrs ago, and having been using it ever since. it really adds great flavor to the mix. have found adding it to the mix once it is good and hot works really well. i usually add about one quarter to one third of a cup of sherry to a large skillet of the veggies.
I tried your recipe tonight for dinner and it was absolutely delicious!!! I share a home with my fiancé and his father (two country boys) who are picky with their food. They both loved it and went back for seconds!!! Definitely making this again, thank you 🙏

Just got home from purchasing all I need for this casserole and would love to have more recipes of this nature. I'm gluten-free and very low carb so this is right up my alley. (note: I don't count carbs but try to stay under 20-25 gm daily. Being gluten-free helps with that goal). I'll be 75 in 4 months and I've been able to maintain a good weight and excellent hgA1c the past few years by limiting carbs. All of that said, I don't have grandkids, I live alone, eat on my own schedule so that makes it much easier. Much less snacking temptations.

Made this yesterday and was amazing! Normally I find quiche too heavy/dense when I make it but the addition of cottage cheese (I don’t like cottage cheese on its own) made it feel light and so much flavour. Thank you!!!
This is awesome! Low carb, well no carb really, for Type 2. I did everything in a rectangle cast iron dish, so one pot from start to finish. Added chopped pancetta pieces. I've added this to my regular arsenal of one pot dishes. THANK YOU.🤩🤪

I just turned 59 and the weight loss battle has been just that a battle. Up 3, down 2, up 4, down 2 and so it goes. Id like to shed this weight before turning 60, I have 70 pounds to loose. I am very fearful for my health. I have been a full time caretaker for the past 10 years of my aging and very sick parents and loss both of them, I am also raising my young grandchildren. I have lost myself somewhere in between all of this and trying to take care of me. Time to put the oxygen mask on so I can still take care of my family and myself.

After years of up and down weight and many different diets, I finally found Keto, lost 65lbs and have kept it off. I know it’s not for everyone but for myself and many others, it reset my metabolism so I no longer gain weight while eating a normal healthy(higher protein) diet. I made this recipe and really enjoyed it. I swapped mushrooms for bell pepper and used frozen spinach instead of fresh but otherwise as per recipe. This is so much easier than fiddling with muffin pans to make egg muffins. Thank you for a great recipe.
Five days in the fridge?! How awesome is that! As a single person, and so I don't get sick of it, I may need to halve the recipe, but still: what an awesome recipe to whip up on a Sunday to ensure some awesome, quick meals during the week; yum! EDIT: I"ve done this halved, with four servings (so about 1.5 eggs per serving) but I still keep the greens at about 120g. I blitz those in a food processor first, rather than wilting down in a pan. I also go for a mix of spinach and rocket (arugala) because I love the latter, but appreciate I need the former for health (blah 😅). I also omit the mushrooms because blech, for me at least. It is very green, but also very delicious. Highly recommended 😋

I often use mushroom soil in gardening. I know how much manure is in it. I don’t care if mushrooms absorb water. I am washing them. The dish looks good, btw!
This sounds amazing! I'd probably add swiss, cheddar and or bacon to the top too! A tip for people who are sensitive to oxalates, throw the spinach into boiling water and cook a couple minutes then drain, rinse and squeeze out as much water as possible. then chop it up and add it to the pan.

A nurse I used to work with many years ago gave me a recipe similar to this but she used shredded chedder cheese and canned green chilis. It was so good.

Looks wonderful. I do mushrooms same way, no washing, just wipe and very little to no oil, often just dry saute. And totally agree on feta blocks, very easy to just crumble, keeps longer in the brine and tastes better.

Nice suggestion of using the blender to blend the egg and cottage cheese. Texture might through some family off. I will be trying these to have them saved for on the go healthy breakfast
Love the difference in size different countries are used to 😂 That „small onion“ is considered a large one in my country - our small ones are about half the size 😅

@anychaffey2048-got board with chicken too and baked Amish chicken thighs seasoning the meat and wrapping the skin back over it. I chose a wire copper short basket (used to bake French fries) with a pan to catch the drippings. Adding little drizzle of oil over chicken, placed tinfoil lightly over it at 350 ° for 30-35 minutes. The wire of the basket created a nice texture without the drying out of the meat. Then later used the bones, skin ect and added onion powder, little turmeric and pepper and boiled to down to make a nice broth 35min.then cooled to weed out bones skin and saved broth an tiny bits of chicken to make a lentil soup. Adding more veggies. Yum.

I did this but put a dollop of salsa over top. I absolutely love the way salsa makes eggs taste. I also added a bit of bell peppers! ❤

FYI for those that don’t like cottage cheese, kwark/quark is an excellent alternative .. high protein content, much better taste, less salty

@anychaffey2048-got board with chicken too and baked Amish chicken thighs seasoning the meat and wrapping the skin back over it. I chose a wire copper short basket (used to bake French fries) with a pan to catch the drippings. Adding little drizzle of oil over chicken, placed tinfoil lightly over it at 350 ° for 30-35 minutes. The wire of the basket created a nice texture without the drying out of the meat. Then later used the bones, skin ect and added onion powder, little turmeric and pepper and boiled to down to make a nice broth 35min.then cooled to weed out bones skin and saved broth an tiny bits of chicken to make a lentil soup. Adding more veggies. Yum.
