  • Cottage Cheese Flatbread Recipe
    Ingredients:
2 cups full-fat cottage cheese (excess liquid drained)
    4 whole eggs
    1 teaspoon garlic powder
    1 teaspoon Italian seasoning
    1 teaspoon black pepper
    Pinch of salt
    Instructions:
    Preheat the Oven:
Preheat your oven to 350°F (175°C).
    Prepare the Flatbread Batter:
In a blender or food processor, combine cottage cheese, eggs, garlic powder, Italian seasoning, black pepper, and salt. Blend until smooth and well combined.
    Bake the Flatbread:
Line a large baking sheet with parchment paper and spray with non-stick cooking spray. Pour the doubled batter onto the sheet and spread it out evenly to about 1/2 inch thick.
Bake in the preheated oven for 35-40 minutes, or until the flatbread turns golden brown and is firm to the touch. Let it cool for 10 minutes before removing it from the baking sheet.
    Add Toppings:
Once the flatbread is baked and cooled slightly, you can divide it into sections and add different toppings or make multiple flatbreads if desired.
    Topping Ingredients:
    Mediterranean Delight
    1/2 cup hummus
    1/4 cup Kalamata olives, sliced
    1/2 cup cherry tomatoes, halved
    1/2 cup cucumber, diced
1/4 cup red onion, thinly sliced
    1/4 cup feta cheese, crumbled
    2 tablespoons olive oil
    1 tablespoon lemon juice
    BBQ Chicken
    1/2 cup BBQ sauce
    1 cup cooked shredded chicken
1/4 cup red onion, thinly sliced
    1/2 cup shredded cheddar cheese
    1/2 cup shredded mozzarella cheese
    2 tablespoons fresh cilantro, chopped
    1 avocado, sliced (optional)
    Classic Margherita
    1 tablespoon olive oil
    2 cloves garlic, minced
    1/2 cup fresh mozzarella, sliced
    1/2 cup tomatoes, sliced
    Fresh basil leaves
    1 tablespoon balsamic glaze
By doubling the batter, you should achieve the desired thickness for your flatbread. Enjoy your cooking! Let me know if you have any more questions or need further assistance. Here are some of my favorite Products - Affiliate Links below

😮i cant believe the amount of rude people who come on these comment sections. I just want to watch peoples ideas, i dont intend to tell them how to do it better, or criticize someone who is spending their own time and money, trying to try something out. Its just sad that people have the nerve to just go to these videos, just to give an unwanted opinion.

The same brand bbq sauce you used here~ Sweet Baby Ray's~ makes a sugar free version that's amazing, even better than the regular, imho. Of course, my opinion is based on not wanting to pour corn syrup & sugar down my throat, so there's that. It's sweetened with allulose primarily, w/a little splenda (sucralose) as well. Allulose is a rare natural sugar which does not raise blood sugar because it is not metabolized by the body. Good stuff, again, imho~ excellent in so many different applications/recipes.
*Great job on the flatbread btw~ I think we might like it a bit thicker, like yours. Also appreciate the variety of toppings you put together~ well done mister...quite "elevated & artisanal" indeed =)

Hey, Dave. Try crumpling up the parchment after you pull it off the roll, then open it up again. Much, much easier to manipulate into whatever vessel you’re using to cook or bake. Spritzing with water also works. I totally agree with buying flat parchment sheets, been doing it for years. I buy them in bulk from my local restaurant supply for better value, then store smaller quantities of them in the bottom of a drawer in kitchen for easy access. Hope this helps! Thank you for the recipe! I try to eat gluten free when I can. I tried the margarita and I don’t know what I did wrong with the ‘ flat bread ‘ I put it in the oven for 40 minutes and tested it and thought it was ready, it was very eggy, the flavor was delicious but the texture was definitely not like flat bread. Do you think I should have kept it in longer?

Kalamata are far different than black olives, they are very salty and YUM

You should have stuck with your original pan and jiggle the pan a bit to get it to spread out. I used to bake a lot and I've created plenty of new things by misreading recipes; just call it "Faux-caccia" (focaccia) 😅 I found your presentation entertaining 😊

    • @RV-there-Yet
      @RV-there-Yet 3 месяца назад +2

If you ever need to drain cottage cheese, you can use cheesecloth to do so. Also can use a fine metal seive, if you have one of those.
*Cheese cloth is usually available in baking section of stores, I know Walmart sells it, but maybe not all grocery stores. It's available on Amazon as well.
