Recipe:
Ingredients:
1 cup full-fat cottage cheese
4 large eggs
1/4 cup unsweetened almond milk
1/4 cup browned butter
2 tablespoons Greek yogurt
1/2 cup almond flour
1/4 cup coconut flour
2 tablespoons flaxseed meal
1/4 cup erythritol or preferred keto sweetener
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/4 cup sugar-free chocolate chips or blueberries
Streusel Topping:
2 tablespoons almond flour
1 tablespoon butter (cold, cubed)
1 tablespoon erythritol
Pinch of cinnamon
Instructions:
Preheat your oven to 350°F (175°C) and line a muffin tin with 12 paper or silicone muffin liners.
Blend the wet ingredients (cottage cheese, eggs, almond milk, browned butter, Greek yogurt, vanilla extract) until smooth.
Mix the dry ingredients (almond flour, coconut flour, flaxseed meal, erythritol, baking powder, baking soda, salt, and cinnamon) in a large bowl.
Combine wet and dry ingredients. Fold in chocolate chips or blueberries.
Distribute the batter evenly among the muffin liners.
Prepare the streusel topping by mixing almond flour, butter, erythritol, and cinnamon. Sprinkle on top of each muffin.
Bake for 20-25 minutes or until a toothpick comes out clean. Let the muffins cool, then enjoy!

Or sometimes with things like muffins, after putting the dough in the pans, I put the berries on the top and push them down into the dough just a tiny bit. They don't sink and the batter comes up around them. Or I do what you've suggested. Either works good, but I think my suggestion is more time consuming. 🙂

Mix the blueberries into the dry mix before adding wet. The flower coats the blueberries and helps them not sink

If you put blueberries in flour & then mix wet ingredients, they won’t sink to the bottom.
That was my thought also. Rather than regular flour I think the almond or coconut flour would work.
Hi~I too was planning to recommend coating the blueberries! I would suggest coconut flour to better coat them to stay suspended in the batter during baking. 🙋

Just mix the blueberries into the dry ingredients, then add the combined liquids - No need for extra 'flour'

To keep fruit from sinking in baked goods, coat them in a bit of flour before adding to batter - just sprinkle and roll them around, doesn't take much.

If you dont beat, whisk or stir the mixture so much you will probably get a better result. You do tend to overmix which removes all the air.

Dave, I’ve been baking cupcakes for many years, and I will tell you that they are always more moist and yummy when they’re made without the cupcake liners. Those papers draw moisture from the cake. So just do what you’re doing that works the best!
Add FROZEN blue berries dusted in a bit of the coconut flour and they won't sink to the bottom 😉 try individually popping 4-5 blueberries per muffin cup to have equal berries in each. P.s. love ❤️ your personality and quirky singing

Hey Dave. I actually made this recipe. They are sitting in my kitchen right now on a plate - tempting my butt off. They are delicious. YUMMY No they’re not like the muffins you buy at the donut shop. But they are a fabulous substitute. Yes I added the Greek yogurt as well. I even made the streusel topping. They could be a tad bit sweeter, but, I think if they were any sweeter? They would possibly be too sweet. I am new at this low-carb no carb diet stuff. And your RUclips channel and all your recipes are very helpful. Thank you.

Hi Dave. Great video! I will definitely be trying this one! Just a quick tip about sinking fruit/chips. Mix them in with the dry ingredients before adding the wet ingredients. They won't sink as much.

1/4 c or 1/2 stick of melted unsalted butter
1 tsp vanilla extract
Dry ingredients:
1/2 c almond flour
1/4 c coconut flour
2 T flax seed meal
1/4 c keto sweetener
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
Add dry to liquid
Add blueberries, 2 T Greek yogurt, or chocolate chips
Bake 350 20-25 mns

If you coat the blueberries with some flour they will not sink to the bottom. You just put them in a bowl with some flour and toss them.

Dave I love your channel and I'm getting close to having enough money to start trying more of your recipes (I'm unemployed at the moment but have a bit of income) 😂 I just wanted to share something for you because I two always add more chocolate than I probably need but something you can use as a resource for chocolate with really low carb is this brand called choc zero they make delicious chocolate and it's all good ingredients no alcohol sugars add sweetened with monk fruit

FYI: You don't count or worry about calories on keto. Cutting your carbs will automatically cut your calories. The important thing is your macros-carbs, fat, protein. 20 TOTAL carbs per day. Use Carb Manager. It has a Keto setting that will calculate your macros for you.
