Thank you for the chocolate cookie recipe. As an 80 year old retired man who hasn't done much baking in the past, I found these cookies to be worth the baking effort. The first time I did them I wasn't sure I wanted to spend the time as it seemed like a hassle to me, However, they turned out very well, I enjoyed them, and the next time I baked a batch I realized if I followed your instructions a little better, the hassle was less. Anyway, these cookies are definitely worth the hassle of baking and I don't have to be concerned about the ingredients that may or may not be good for us in store bought cookies.
So I made a 2nd batch and only had 1/2 cup Swerve brown sugar & about 1/4 cup butter….so I added Stevia to the Swerve and then some coconut oil to the butter. They came out so good. Either way they are great!! Thank you for this recipe!

Of all the healthy chocolate chip cookie recipes I made in my life,this is by far my favorite (and my husband agrees!). I didn’t have swerve but used coconut sugar. They spread and had more of a moist consistency when setting them up on a baking tray but they turned out so delicious! Thin and crispy on the outside but chewy and tasty as you bite into them. I have yet to try swerve as my sweetener! Thank you so much!

I just tested this recipe (with some modifications of my own - collagen powder, cinnamon, unsweetened cocoa powder, golden flax seed and added unsweetened almond milk to the egg) and it is sooooo yummy!!! so hard to wait for the cookie to completely cool! HAHAHA

I just made these and oh my goodness these are so delicious and taste nothing like keto at all. This is by far the best keto cookie recipe I've had 🤤 And so super easy to make!! This is forever my go to chocolate chip cookie recipe. Now to make your other recipes!! I can't wait. I made 14 cookies and lesson learned, they spread sooooo much and they're huge. Next time I'll make 18 cookies instead by using 31 grams of batter per cookie. Thank you for a phenomenal recipe!!
2nd try was definitely the charm. My only change was to not pat them down. I left them on the cookie sheet as lil balls. They did spread and came out like traditional cookies with a little thickness to them. Absolute perfection!!!

I will try them with monk fruit brown. Not a fan of all erythritol (swerve), too much of the cooling effect. At least cut with monk fruit it's not as bad.
I just made these cookies tonight, and OMG, they are so good! Chocolate chip cookies are my all-time favorite cookie, and I haven't had a decent one in the two years that I've been living a keto lifestyle. That changed tonight! I followed your recipe exactly. The only thing that I did differently was that I refrigerated the cookie dough balls for an hour before putting them in the oven. They came out perfectly round, thick, and chewy. I just made them now and they turned out a treat. I added cocoa powder because I like them chocolate. I used less sweetener because I find American recipes far too sweet for me but didn't have any brown sweetener so added some genuine Canadian maple syrup to account for the lack of brown sugar and the extra dries in the cocoa. They are perfect! Made a coffee to have with my 2 cookies and a sit down!

I know what I'm about to say goes against the goal of this video, but I didn't have any almond flour, Swerve brown or sugar free choc. chips. I really wanted to make these cookies. So, I used 150 grams of spelt flour, 50 grams of bread flour, regular brown sugar and regular choc. chips. The cookies turned out amazing. Very light (thanks to the spelt flour), and a delicate sweetness. I was also surpised how easy and quick this recipe was to put together. At my next opportunity, I will get the recommended ingredients and make them again. I certainly don't need the extra sugar when there is an alternative. Many thousand thanks for a great keto recipe.
I just finished making these for the first time. I made 19 from the mixture. I tasted one and it was so delicious that I ate three more. I know that's totally wrong for keto but they are sooo amazing 🍪❤
I have made these cookies with Bob's fine almond flour and they bake up nicely though the almond flour doesn't seem have a lot of flavor. I did measure 200 grams and add more vanilla than the recipe calls for.

Just attempting the recipe now for the first time. Easier prep than regular choc chip cookies. Followed the instructions to a T. Just put them in the oven. I will update once they are done and cooled enough to taste. *edit: I used Swerve brand brown sugar. A lot of it ended up on my hands from rolling the cookie dough into balls before placing them on the parchment paper. I also used a good organic local brand of almond flour. I used Lily’s brand stevia sweetened semi sweet (45% cocoa) chocolate chips.
Just tasted one. They are pretty good. Not quite as sweet as regular chocolate chip cookies but they are still a good keto alternative. Light and airy and cakey texture when they are still hot from the oven. Not sure if they will get a little more dense/chewy upon cooling, but hopefully. Maybe next time I will use a little more chocolate chips and no pecans.
Sounds good. Feel free to add more sweetener. The tricky part is that everyone tastes sweet a little differently... so some people like less and some like more.

Holy crap!! Brown the butter yall. It takes these cookies to level mars 😮plus i made my own keto chocolate and broke it into chunks and added walnuts . YES like someone else said put them in fridge and dont push the down on the pan ( they come out way better and thicker if kept round)

Hi Carolyn, I recently tried your keto cowboy cookies and I absolutely loved them! The chewiness from the gelatin added a unique texture that I really enjoyed . Now, I’ve been eyeing this recipe and I’m curious. If I sneak in some gelatin here, do you think it’ll give that same chewy kick? Or does this recipe inherently have that chewiness already? I’m asking because I’ve noticed with some other recipes (from other people), the cookies tend to harden after a day or two. I’m more of a soft, chewy cookie fan, so I’m always on the lookout for ways to keep that texture going.

@@justmanette2152 If I had an actual routine, it might make sense. As it stands, I do functional fitness (CrossFit style gym, no longer associated with actual CrossFit brand) three times per week and I do whatever the WOD tells me to do! I also run 3x a week and walk/hike a lot.
Not bad, not bad at all. The texture was definitely there and the taste but we can't seem to get past that 'cooling' sensation, (which interestingly enough no one seems to mention), after eating the cookies. Two of our friends experienced this also. It doesn't feel normal to us but perhaps it takes some getting used to. Otherwise, is there an alternative sweetener we could use that doesn't have this cooling sensation? We're not on any keto diet, but rather just trying to keep our sugar intake under control. Many thanks for taking the time to fine-tune this recipe and share it with us.
These were amazing. My first time using this specific sweetener but it did taste like brown sugar (I haven't bought brown sugar in years). The cookies were soft & delicious. An extra bonus is that it doesn't require a bunch of ingredients. It's a must try
I didn’t have walnuts but I had pecans, also I didn’t pack in the erythritol so I added a few drops of vanilla stevia, and they are the best cookies I’ve made so far!!! And not a complicated recipe!!! Thank you so much for this recipe 🙌🏼
Ah, so it's just like the real choco chip cookies that use brown sugar. Never knew such a sweetner existed. Only Stevia. Is the texture gritty from the almond flour? I used to use almond flour a lot for desserts and it always had that gritty texture. Thanks!
I tried these cookies I used Superfine Blanched Almond flour and they do taste gritty and the dough did not look like her's maybe I used the wrong almond flour

Amazing Recipe ty so much! I've replaced the chocolate chips because they are only 50% and as far as I know anything below 80% isn't really Keto. Instead I used 100% cholate bar that i just bashed to pieces and mixed with the dough for a yummy but more healthy result.

Ok so I made these today and this was my experience. I did everything and followed the video completely. I found the dough a little softer than hers so I added more almond flour just so that I could roll them. They were soft not crispy even though they firmed up as they cooled. I wish I could say I fell in love with these cookies but the Swerve has an after taste and that’s what I got from these. I’m sure you’ve all had success but I just didn’t like the texture or the taste
Do you use a special kind of almond flour? Mine came out very gritty and cake like, my cookie dough was also very sticky, course and slightly runny consistency and didn't look like yours.

I made the cookies and they are really delicious. For my taste I prefer them less sweet, so I'll make them with 1/2 cup of sugar instead of 3/4 cup. I don't know why they weren't round like yours.

Yep. Finally! I've had terrible luck with keto cookies, maybe partly due to my high altitude. But these turned out great and the first that have ever turned out for me.

Holy crap!! Brown the butter yall. It takes these cookies to level mars 😮plus i made my own keto chocolate and broke it into chunks and added walnuts . YES like someone else said put them in fridge and dont push the down on the pan ( they come out way better and thicker if kept round)

Hi Carolyn, I recently tried your keto cowboy cookies and I absolutely loved them! The chewiness from the gelatin added a unique texture that I really enjoyed . Now, I’ve been eyeing this recipe and I’m curious. If I sneak in some gelatin here, do you think it’ll give that same chewy kick? Or does this recipe inherently have that chewiness already? I’m asking because I’ve noticed with some other recipes (from other people), the cookies tend to harden after a day or two. I’m more of a soft, chewy cookie fan, so I’m always on the lookout for ways to keep that texture going.

@@justmanette2152 If I had an actual routine, it might make sense. As it stands, I do functional fitness (CrossFit style gym, no longer associated with actual CrossFit brand) three times per week and I do whatever the WOD tells me to do! I also run 3x a week and walk/hike a lot.

Not bad, not bad at all.
The texture was definitely there and the taste but we can't seem to get past that 'cooling' sensation, (which interestingly enough no one seems to mention), after eating the cookies.
Two of our friends experienced this also.
It doesn't feel normal to us but perhaps it takes some getting used to. Otherwise, is there an alternative sweetener we could use that doesn't have this cooling sensation?
We're not on any keto diet, but rather just trying to keep our sugar intake under control.

These were amazing. My first time using this specific sweetener but it did taste like brown sugar (I haven't bought brown sugar in years). The cookies were soft & delicious. An extra bonus is that it doesn't require a bunch of ingredients. It's a must try

I didn’t have walnuts but I had pecans, also I didn’t pack in the erythritol so I added a few drops of vanilla stevia, and they are the best cookies I’ve made so far!!! And not a complicated recipe!!! Thank you so much for this recipe 🙌🏼

Ah, so it's just like the real choco chip cookies that use brown sugar. Never knew such a sweetner existed. Only Stevia.
Is the texture gritty from the almond flour? I used to use almond flour a lot for desserts and it always had that gritty texture.

I tried these cookies I used Superfine Blanched Almond flour and they do taste gritty and the dough did not look like her's maybe I used the wrong almond flour

I've replaced the chocolate chips because they are only 50% and as far as I know anything below 80% isn't really Keto.
Instead I used 100% cholate bar that i just bashed to pieces and mixed with the dough for a yummy but more healthy result.

Ok so I made these today and this was my experience. I did everything and followed the video completely. I found the dough a little softer than hers so I added more almond flour just so that I could roll them. They were soft not crispy even though they firmed up as they cooled. I wish I could say I fell in love with these cookies but the Swerve has an after taste and that’s what I got from these. I’m sure you’ve all had success but I just didn’t like the texture or the taste
Do you use a special kind of almond flour? Mine came out very gritty and cake like, my cookie dough was also very sticky, course and slightly runny consistency and didn't look like yours.
Oh and Swerve Brown isnt around where i live in Australia so i just used Stevia with a nice squirt of molasses. Perfect 👌

I made the cookies and they are really delicious. For my taste I prefer them less sweet, so I'll make them with 1/2 cup of sugar instead of 3/4 cup. I don't know why they weren't round like yours.

Thank you for such great recipes!! This is my favorite chocolate chip cookie recipe. BTW, I use a Breville air fryer oven, and with the temperature you said, my cookies easily get yellow within 6 minutes. Does the temperature change if I don't use the oven?
