I made these and they are by far the best tasting. Only tweaks I did was used brown butter and replaced the xanthan gum with 2 packages of unflavored gelatin. They came out amazing.
Hello from Malaysia new LCHF dieter. Hahaha. Just wanted to drop a msg to thank you for this wonderful recipe. I used your recipe to bake my first keto biscuit. It's pretty good. Not really a sweet tooth person so I only used 60g erythritol as sweetener. That also, to me is a little too sweet for this batch of cookies. I would use 50g next time. I substituted cocoa chips with sunflower seeds. Crunchy cookies. It's good. Crunchy outside and slightly chewy inside. I used vital wheat gluten btw. I managed to get 36 small cookies using teaspoon measurement. I believe seeing more and eating more pieces make me feel or at least trick my brain to think that i would feel more satiated. Thank you once again. With love. Btw baking with oven, 170DC for 15 min.
I used an almost exact recipe from another Reddit user until I tried yours. The difference? Vital wheat gluten, wow, it added a chewiness like a regular soft cookie. Never thought to use it. Thank you!

I need assistance using VWG in cookies. I've found this cookie that only uses Anthony's Vital Wheat Gluten as the only flour in the cookie. When I attempt difference variations, the result is usually the same -- the cookies are stretchy and seitan esque. Do you have a tips to use vital wheat gluten to make cookies but for them to maintain a cookie like texture?
I've never even used a hand mixer/beater to beat anything in my life. But I tried this! And man oh man, these are amazing. If I can do it, then anyone can. Luckily found a local store with wheat gluten, Ingles, in case someone reads this and has one near them. I added 110 grams chopped walnuts too. So good!
I feel I just have to comment here on this recipe… it is the first one I have tried where the cookies don’t spread all over the sheet ( I did also chill the dough overnight) Thank you so much for this recipe.. it will be my go to now.. oh yeah, by the way, they are also delicious 🥰
Followed the recipe to a tea but my batter is too soft unlike yours, what did I do wrong? So I live in the Philippines, did it have to do with the hot weather? Did I have to freeze or put it in the fridge first before baking? I added rolled oats on the last batch I made just to have the same consistency

But, while I'm here, the highest carb things in there are wheat gluten and molasses but if you divide the gluten for example, 14 carbs per tbs, by the amount of cookies, 15, that's about a 1 gross carb per cookie. I wasn't saying whether it was high or low, just giving you some math. Have a good day =)
I don’t usually make comments about recipes, but I watched your video and found you very convincing. I followed your instructions to the letter. The outcome? Disappointing. I’m not sure how these can be compared to a regular chocolate chip cookie in any way. They are ok in their own right however so it wasn’t a waste. Maybe I was expecting too much.
Each recipe that you make is done with detailed information, you make it look easy, and I just want to reach through the video and steal the damned cookie or those croissants! Or any of the recipes. If someone robbed your house, (I pray it never happens), it would be to steal all of your keto goodies!!! They would leave everything else!

The most thoughtful RUclips posters include a one-way inclusion of: ingredients/quantities/instructions. Who has time for 45 pages? You want more subscribers? Work on efficient presentations.

Hi, I’m not sure what you mean about shut-down.. my blog has been successful and had very kind support for years. The ads were how I made my income and most of my followers support that. Also, I have a jump to recipe button on my posts that I lose money on but provide it so you can skip over the ads. Also, if you’d just asked nicely, I will always let you know that if you click “print recipe” you can view it on its own with no ads on another page. Anyways, I really hope you heal whatever negativity you are feeling, as I could never comment something so harsh on someone’s video, especially a small business owner just trying their best to make a living. Plus.. you still enjoyed/used my recipe, so I really don’t understand all of the hate.
I understand the use of ads to make money, but there is a limit to how many ads are acceptable on a page. I think you have more ads than the material that you want to present and it makes people not want to visit your site which means less income. @@samanthabriden6310
Hi Eli, I'm sorry that it was so difficult to scroll through a page where I earn a couple cents from each view to access a free recipe that took me hours to test, bake, film, edit, write the written portion for and share here. I will not be posting the recipe in the comments because developing recipes is my job. Like any job I need to make a living and it's not much to ask to support me by scrolling down a page. Also please note, 95% of my recipes include a "jump to recipe" button (which I lose income for having but I add it to make it easier for readers who wish to directly view the recipe). This was just an original blog post from years ago designed with another application so it's missing the button. With all of this said, I would be more than happy if you never "get a recipe from me again" if these are the kind of comments you plan to leave on mine or any other food bloggers' videos.

How much wheat gluten do you use and what is that in place of?

Yes! Just add a couple extra minutes to the baking time if baking from frozen or let them come to room temperature before-hand. 😊

Chewy Keto Chocolate Chip Cookies
Ingredients:
1 cup(112g) almond flour
1/4 cup + 2 tbsp(54g) coconut flour
1 tbsp(10g) vital wheat gluten OR 1/4 tsp xanthan gum
1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1/4 cup + 2 tbsp(90g) unsalted, room temperature butter
6 1/2 tbsp splenda (OR another sweetener that measures like sugar) * See highlighted Ingredients above
3 1/2 tbsp truvia (OR 6 tbsp of a sweetener that measures like sugar) *See highlighted ingredients above
1/2 tsp blackstrap molasses (optional-adds brown sugar flavou)
1 tsp vanilla extract
2 eggs
1/4 cup(60g) stevia-sweetened chocolate-chips (I use THESE or THESE)
