And FYI, since sugar free chocolate chips can be pricey, you can easily make your own by combining 2 tbls butter OR coconut oil, 3 tbls dutch cocoa, and 1 tbls powdered sweetener of choice (can leave sweetener out or adjust to taste)... Melt all ingredients together over a double boiler, then put into a piping bag and pipe dots onto parchment, let set an hour and voila homemade sugar free chocolate chips, easy and cheap! (these will be dark chocolate chips). They are so good that sometimes i make them and just eat them by themselves just as a snack, I feel like I am cheating when I am not. LOL

I made these yesterday. I happened to have all of the ingredients on hand. Since I live in the south, chocolate can get soft when in the cabinet, so I store my chocolate chips in the refrig. Since my chocolate chips are cold, the egg yolks were cold, I didn't see any reason in waiting 45 mins to chill the dough. I bake them right away and they came out great! My favorite cookie bar since childhood was and still is ... Magic Cookie Bars! So, I had to make these, so easy too. They were so delicious, they exceeded my expectations! You can only eat about two cookies since they are so rich tasting. I did do something different, I added Lilly's White Chocolate Chips (unsweetened) along with Lilly's Chocolate chips and the Carmel chocolate chips. I think the 3 different chips would be even better tasting! This will be my go-to low-carb cookie for the holidays! Very happy with the results, usually I'm disappointed in most Keto or Low Carb desserts. Thank you!
This is an excellent recipe. I tweaked it a little, to great benefit. I added 1/2 tsp. salt (no sweet recipe is complete without salt IMO!), and 1/4 C. brown Swerve (it's like brown sugar) and that works really well with the nuts. Also, I toasted the nuts lightly in a hot pan, which I always do with nuts before I put them in a recipe--the flavor is far better, and it does a real number on the flavor of these cookies! This recipe is a keeper, great to bring to potlucks too, for others who are doing keto. Potlucks are a killer for us.
I just made these today and they ARE fabulous and easy. The video doesn’t mention it but be aware there will be a good amount of melted coconut oil on the parchment after the cookies are baked. I just let them cool on the baking sheet and took a pastry brush and brushed the tops with the remaining oil. Can’t waste all that good fat. I also baked them closer to 12 minutes because I love the coconut to be really toasted. They are a Great low carb treat. I ate 3 and they did not raise my blood sugar at all. Big win for me.

Looks great! I would only add one step to make these extra delicious and that is to toast the nuts and let cool before making the recipe. Toasted nuts just add so much flavor 😊

I made these and they were delicious! My hubby devoured them. I think they will be a staple. However, I did add a pinch of salt and I think that's always a good idea with sweets - brings out the flavor. I also made another batch that was a modified version by adding 2 tbsp crunchy peanut butter (melted with coconut oil) and reduced to 3/4 cup coconut flakes. BTW, the four egg whites left over are perfect for making a batch of keto meringue cookies. I bake them first while the keto magic cookie dough is firming in the fridge. Thank you for the recipe!!
Oh my! I made them just now. Not at all what I expected them to taste like with all the coconut in the recipe. I really can't describe the flavor except WOW. I used a cookie dough scoop and it made 18 smaller ones. I also mixed up different flavors of Lilly's chocolate chips - chocolate, white chocolate, butterscotch, and my favorite, salted caramel. These cookies are beyond wonderful! Thank you for sharing the recipe!
You just got my approval with the Lily’s! The only keto chocolate we do now. Lily’s does it right! Those salted Carmel baking chips are good for melting and covering peanuts in as well.🤤
I'm diabetic and celiac! Ty for this. I hope I don't react to the sugar alcohol like I normally do. Hoping that if it's baked, it won't give me the side effects. Worth a try. I miss cookies! Love them.
Great recipe. But why would I preheat my oven, till finished mixing everything up, if I'm going to set them in the refrigerator for 30 or 40 minutes after mixing? I just preheated 15 minutes before I took them out of the refrigerator. Thanks

Well, my oven takes FOREVER to preheat. (More like 20 min so agree 30-40 min is a bit early to turn oven on) C'mon, he does so much good for those interested in his recipes. Vids are done well. Seems petty to comment on the pre-heat instruction. Do what works for you. ☮️

Be careful about adding things in or taking things out because it can throw off how to cookie sets up when it bakes. Maybe use the peanut butter in lieu of the coconut oil.
Unsweetened coconut flakes, walnut, pecan has natural sugar=carbs, you added 1/3 cup swerve. 12 cookies. That's more than 2 net carbs per cookie. Also when cooked it was drowning in the oil even though I followed the exact measure. Next day the cookie were great it was not greasy! I did leave in fridge overnight. I will make again but put less oil.

@@tigerdeer no, not at all. They kind of reminded me of 7 layer bars, if you've ever had them. I ended making a batch for my house and a batch for my parents as well. They are easy, delicious, and satisfying. I ended up buying a variety of Lily's and Bake Believe chips to make more LOL.
Made these and they were so good but didn’t look anything like yours. Didn’t mesh together in a ball and spread on the cookie sheet and flattened out. But taste so very good. Thanks again for the recipe.
When I posted the above I followed the video word for word and did it twice. Third time I looked at the listed ingredients and followed that. In the video he says 1/2 cup of coconut flakes, written says 1 cup and that’s more like it. Family loved it either way.
Second batch in the oven. Hey! once every couple of weeks isn't bad! These are so good. I tweaked them a bit this time. Ground the coconut a bit finer, made them smaller, and flattened em a bit more. Any way they come out, we can still only thank you!
😆 I know huh👍🏼 The magic word is.... control. Set aside 3 to 6 cookies have them with your favorite beverage, milk, coffee, tea, water.... Do not exceed the 6 limit. Fill up on water. have a piece of fruit. grapes, watermelon, a peach,...apple or banana. Stick to your 6 anytime you have cookies. After 30 days you should be used to the 6 no problem. Yiu can then go for 3. It takes a discipline. Don't eat cookies instead of a meal. Because that's where we lose all control. 🙌🏼 You can do it! It's called control. I once took care of a seniot in her 80's who had a figure like a 21 year old!! She's a person who does not like missing her daily exercise routine! 😲 She called me out for having two pieces of toast for breakfast! She said "don't you think you eat too much!" 🙈 my word! Made me want to wire my jaws shut! This lady COUNTED HER POTATO CHIPS! 🙈 No more than 2 ! Well, she was in her eighty's. I wasn't. Maybe half her age. But you see she cared enough about maintaining her weight and her figure to watch not only what she ate but How Much! Good training for future food rationing.

Joe- I made them today and made some changes. 100 grams of coconut flakes was way too much I stopped at 85 also did about 60 grams each of the chips. Everything else the same and they are incredible. Thanks for sharing the recipe!
I just got my coconut chips in the mail today and I hope they soften up when I make the cookies. I tried to eat them straight and they were so dry! Wow...I guess the eggs and butter and the baking process will bring them to life. The cookies look amazing.
I made them and they them tonight, just came out of the oven, they didn't hold the shape but smell good. Can't wait to try them. I wasn't going to spend $10 on a bag of lilly's chocolate chips so I bought a 90% dark chocolate instead. Hope it works
Just made some. Delish! I added 1/4 tsp of powdered blackstrap molasses to my sweetener. If you like the Smokey taste of brown sugar that’s a good way to add that flavor with minimal carbs.
I absolutely love these cookies! I have made it several times. My batter actually makes 20. So less net carbs in each. It's my go to when I feel for a treat. I even make and freeze and use as needed.

I made these cookies today but during baking a lot of oil came out in the pan on the parchment paper... anyone else have this issue. Not sure what I did wrong. OMG I'm obsessed with these cookies. Have made them 3 times in 2 weeks because everyone in my family loves them. First time there was oil on parchment because I didn't have enough coconut flakes (ran out) also after that I weighed coconut instead of using measuring cup and they came out perfect and delicious.
Those look great! I’m not on a keto diet, but, I like to eat healthy. Will definitely make these cookies. I just made a ginger pumpkin pie with swerve, and it turned out great! Lemon bars, not so great. Something about the lemon mixed with swerve...the swerve did not melt, stayed crystalized. Kind of weird, otherwise, it is a great zero carb sweetener. Even used it in coffee and could not tell the difference.

I saw recipes with whipping cream and almond flour tlfor the bottom of the cookies. Have you tried those before is making it with egg better? Is it eggy?
@@mikeinthetruth I haven't tried those before. This recipe does register on the Eggy Scale. It's only very slightly eggy. Still good though. I only made 3 and froze the rest for later. I am going to look for the recipe you just mentioned.

I made these today. I’m not sure if this is supposed to happen or is somehow preventable, but when taking the cookies out there was oil/butter around each one. Not a major amount but enough to be cautious when pulling from the oven. This happened with another recipe and the oil was obscene in comparison. I’m curious why this is happening?

Did you add the brown sugar and the same amount of confectioners sugar Joe used?

@@tigerdeer no, not at all. They kind of reminded me of 7 layer bars, if you've ever had them. I ended making a batch for my house and a batch for my parents as well. They are easy, delicious, and satisfying. I ended up buying a variety of Lily's and Bake Believe chips to make more LOL.

Made these and they were so good but didn’t look anything like yours. Didn’t mesh together in a ball and spread on the cookie sheet and flattened out. But taste so very good. Thanks again for the recipe.
When I posted the above I followed the video word for word and did it twice. Third time I looked at the listed ingredients and followed that. In the video he says 1/2 cup of coconut flakes, written says 1 cup and that’s more like it. Family loved it either way.

Second batch in the oven. Hey! once every couple of weeks isn't bad! These are so good. I tweaked them a bit this time. Ground the coconut a bit finer, made them smaller, and flattened em a bit more. Any way they come out, we can still only thank you!

Do not exceed the 6 limit.
Fill up on water. have a piece of fruit. grapes, watermelon, a peach,...apple or banana.
Stick to your 6 anytime you have cookies. After 30 days you should be used to the 6 no problem. Yiu can then go for 3. It takes a discipline. Don't eat cookies instead of a meal. Because that's where we lose all control. 🙌🏼 You can do it! It's called control.

Oh, I so needed to see this. My husband got a Christmas gift basket from his boss. And it had some delicious looking oatmeal/raisin/apricot/seeds cookies. One night we were wanting to snack and I opened them thinking I’ll try one....4 cookies later (each) we finished the pack. Joe- I made them today and made some changes. 100 grams of coconut flakes was way too much I stopped at 85 also did about 60 grams each of the chips. Everything else the same and they are incredible. Thanks for sharing the recipe!

I just got my coconut chips in the mail today and I hope they soften up when I make the cookies. I tried to eat them straight and they were so dry! Wow...I guess the eggs and butter and the baking process will bring them to life. The cookies look amazing.

I made them and they them tonight, just came out of the oven, they didn't hold the shape but smell good. Can't wait to try them. I wasn't going to spend $10 on a bag of lilly's chocolate chips so I bought a 90% dark chocolate instead. Hope it works

Just made some. Delish! I added 1/4 tsp of powdered blackstrap molasses to my sweetener. If you like the Smokey taste of brown sugar that’s a good way to add that flavor with minimal carbs.

I made these cookies today but during baking a lot of oil came out in the pan on the parchment paper... anyone else have this issue. Not sure what I did wrong. OMG I'm obsessed with these cookies. Have made them 3 times in 2 weeks because everyone in my family loves them. First time there was oil on parchment because I didn't have enough coconut flakes (ran out) also after that I weighed coconut instead of using measuring cup and they came out perfect and delicious.
Try adding some collagen to the mix to make more gooey and chewy.

Those look great! I’m not on a keto diet, but, I like to eat healthy. Will definitely make these cookies. I just made a ginger pumpkin pie with swerve, and it turned out great! Lemon bars, not so great. Something about the lemon mixed with swerve...the swerve did not melt, stayed crystalized. Kind of weird, otherwise, it is a great zero carb sweetener. Even used it in coffee and could not tell the difference.

I saw recipes with whipping cream and almond flour tlfor the bottom of the cookies. Have you tried those before is making it with egg better? Is it eggy?
@@mikeinthetruth I haven't tried those before. This recipe does register on the Eggy Scale. It's only very slightly eggy. Still good though.

I made these today. I’m not sure if this is supposed to happen or is somehow preventable, but when taking the cookies out there was oil/butter around each one. Not a major amount but enough to be cautious when pulling from the oven. This happened with another recipe and the oil was obscene in comparison. I’m curious why this is happening?

4 large egg yolks
1 tbs or 14 grams of softened butter
3.5 tbs or 50 grams of melted coconut oil
Whiskify.
1/3 cup or 50 grams of confectioners Swerve
1/2 cup or 100 grams of unsweetened coconut flakes
1/3 cup or 45 grams of crushed pecans
1/3 cup or 45 grams of crushed walnuts
2/3 cup of 100 grams of keto chocolate chips
Spatulize.
Refrigerate for 30 to 45 minutes.
Make balls.
Bake for 8 to 10 minutes.
