I made this with gluten free flour (King Arthur flour) and they turned out awesome! Soft but not crumbly, and the lemon flavor was perfect! More lemon dessert recipes please, it’s such a great summer flavor 🤩
John I remember the first lemon cookies video you made years ago I made them so many times! So good! I love the lemon zest and sugar mixture! I could eat it by itself...and you know what, I have. That's right, I made the lemon zest sugar just to eat by itself. I said what I said 😤 😂😋
Have you tried the Lemon Bars? Those are the best and they’re pretty easy. Everyone likes them. I haven’t tried the cookies yet but they look so good. Not the ones with the food coloring 😵💫 though. I have to wait for my lemons to ripen

5:40 Try transferring the dry ingredients to parchment (could even be the parchment you'll use for baking), then transfer the dry ingredients on the parchment to the mixing bowl by folding/bending the paper into a cone/funnel shape. You won't spill the ingredients on to the counter. 💖🌞🌵😷

I used to LOVE “Archway ‘Frosted Orange’ Cookies”!! Sadly, the soft, melt-in-your-mouth cookies were “discontinued” DECADES AGO!! I can imagine your recipe for “Lemon Cookies” is “on-par” with their “old” version of “Lemon Frosted Cookies”!! Do you have an “orange-flavored” version??

I miss those orange cookies too. I would think you could sub orange zest, extract and orange juice for the lemon. This recipe is for soft cookies, so I think its worth a try!

That little bit of yellow dye really cranks up the visual appeal. I guess it depends on who you're serving these to. Pale yellow might be more natural but also be perceived as less lemony. As the saying goes, people eat with their eyes.

My only suggestion for this recipe is DOUBLE IT!!!
(Using a 1-1/2T scoop, only makes about 20 cookies, so maybe 40 is a better choice 😂)
240 g flour
0.5 tsp Baking powder
0.5 tsp Baking soda
0.5 tsp salt
113 g unsalted butter (0.5 a cup)
3 tbsp lemon zest
150 g of granulated suger (3/4 cup)
2 tbsp lemon juice (30 ml)
1 egg
Yellow food coloring (optional)
Icing :
Powder suger
Lemon juice
I like lemon myself.Lemons make up for every food.They add the right touch.

I made this by hands and did way less whisking than the machine he was using and they still came out perfect.
And just listen to the ingredients.
Don't add, more lemon juice because these cookies have the perfect amount of lemon.
If you add more it'll be too lemony.

You said you can put the dough in the fridge overnight, or freeze it, I put the dough in the fridge overnight and baked the next day, not a good idea. I think the flour was too absorbed and they just melted as they cooked.

Hi John. I prefer the one without food coloring. The one with it looks fake. Also something I recently learned with the ka mixer. I got a small very shiny stainless steel bowl and put my dry ingredients in it. While adding it to the mixer and tapping it like you did I was surprised it slid right into the bowl. I got it all in and nothing on the mixer head like I usually do lol. In case you wanted to try. So frustrating about those mixers!
A lot of produce is not only covered in wax, but in Apeel. Please look into this. NOT safe.
I’m wondering how this would be with some cream of tartar for a bit more of a snickerdoodle-type texture? It sounds great as is, I just can’t help but wonder as a different take on it.
