A simple lemon slice is always a lemon lover crowd pleaser. Crushed biscuits, butter, lemon juice and zest. Make a layer and let it freeze for two hours. Then make a powdered sugar, lemon juice and zest paste layer onto and back to freeze for two hours. Take out and cut, delicious 😋 you can also top it with shredded coconut.
If you roll the cookies in granulated sugar first, then roll them in the powdered sugar, the powdered sugar won't dissolve (as much). The granulated sugar acts as a barrier that protects the powdered sugar from being absorbed by the wet cookie dough.
Good advice, but the cookies are already sweet enough unless you care about how they will look like at the end. I always find John's baking recipes sweet. It's also most of my friends and family feedback after I bake something for them. :') To add, John says roll the balls a second time later before tossing them in the oven ;)
Just made these lemon delights: they do not disappoint! I scaled the online recipe to make 48, but they yielded about 100 since I made them about a tablespoon each. 16 to a sheet to cook. Pillowed perfectly. Don't overdo when rolling; think this is why other bakers cookies are flat Lightly roll 8-10 times just enough to achieve spheres. Also left all 16 spheres in sugar then when transferring to sheet, rerolled and HEAPED each with sugar. Perfect crinkles! I cooled my trays in the freezer for about 6 minutes between batches and the unused dough in fridge Used zest from 2.5 fair sized lemons. Next time will use 3. I think working the zest into the sugar is the game changer for this cookie as you counsel John. Bravo!

@bananoxaloni I'm a baker at a Cafe that just opened, so time is always super important and I was hesitant to put the in thr freezer, I didn't want them to freeze or not bake right in the oven. So far they're a huge hit and takes way less time

OMG! I just stumbled upon this recipe while skimming through this channel for something to try. These cookies are amazing. The powdered sugar adds a beautiful taste. I used a small glass cake dish and let the rolls cookies set in the ordered sugar. Until they were all rolled.

these are DELICIOUS! Mine didn't crinkle enough because the dough sucks the powder sugar in very fast, and I was too lazy for round two - but that didn't stop me from inhaling these 😄easier than lemon bars and satisfies that lemon craving nicely

It was pointed out to me by a very outspoken colleague years ago, that the correct pronunciation is turmeric., although I hardly ever hear someone say that, and if they do say it incorrectly I let it slide because in the realm of things that's just not that important. I also find the feeling of rubbing sugar and lemon zest together to be very soothing and relaxing.

Personally I would not add turmeric. It has a slightly bitter flavor but try these with a homemade blueberry compote. Oh my, gosh!
