    Couple tips I picked up from making these a couple times:
    1. Add a little bit of salt to the batter
    2. Chill the batter a little before baking. Makes it easier to roll into balls
    3. These taste 100 times better cold so eat them the next day!

    Regarding the coconut flour, for anyone who does not know, 3/8 of a cup is 6 TBSP.

    1 stick of butter (melted)
    1 & 1/2 cups almond flour
    1/2 cup powdered erythritol
    Splash of vanilla
    1.5 teaspoons baking powder
    1 & 1/4 tbsp Beef gelatin powder
    1 egg

      I made these and my suggestions are to use coconut flour (almond flour comes out more grainy), add 1 extra egg, 1 pinch of salt, and way less baking time....i baked these at 350○F for 7mins.

    I made KetoConnect chewy cookies last week and took them to the bowling alley. I made both the almond flour and coconut flour versions. The overwhelming opinion was coconut flour was the best. The almond flour version was grainy. Yes, I sifted. Everyone loved the coconut version low carb or not.

    I've been making these for a bit now, and they are pretty good, but with some slight variations to the recipe, I find they are significantly better. I substitute Knox Gelatin instead of Beef Gelatin, and Brown Swerve instead of plain Erythritol (or sometimes I just add a 1/2 Tbsp of Molasses). I also add a 1/2 tsp of salt. I think this makes them taste much more akin to a regular chewy chocolate chip cookie. My favorite spin on these is to add about 2oz of chopped pecans, and 1/4 cup of unsweetened coconut. I don't drink coffee, and one of the ways I'll get my MCT oil fix is to use one of these cookies to soak up a tsp of it. I find its a nice way to get my MCT when I don't have time to really prep something.

      @@lisag1829 Originally I used a whole packet(approx 2.25 - 2.5 tsp), but I cut it back to half a packet, and I think the results are just as good, if not better.

    I just put the coconut version in the oven because I am allergic to almonds. I used unflavored Knox gelatin since I had it on hand and I added an extra egg and a pinch of salt as others have suggested.. I will update on how they were :)
    UPDATE these have to be the best keto cookies I have ever had. Seriously you can almost think these were made with regular sugar and flour

    AMAZING! I love that I am able to offer a low carb choice for our coffee bar at church tomorrow. We have many people following a keto lifestyle and these cookies are a game changer! I doubled the batch and was able to make 45 decent sized cookies. Thank you for all your hard work!

    1/2 cup or less of erythritol came out very sweet, I suggest 1 1/2 tbs, also 19 minutes in the oven for a crispy texture. Amazing Coconut Cookies. Thank you.

    If beef gelatin grosses you out just use one teaspoon of Xantham gum for the same chewy effect ...😁

      Could I use flax meal instead? I have used flax meal instead of xantham gum in other recipes, but they said I could substitute the xantham for flax meal.

    I made these yesterday. They were perfect and this will be my go to chocolate chip cookie recipe from now on! I didn't have chocolate chips, but I had a bar of Lily's chocolate, so I just chopped them up. I also didn't have a stick of butter, but I had ghee, so I used that too. I used a little bit less than half a cup.

      samantha wilson I added a Tbsp of ground flax and 1 Tbsp of all purpose flour and 3 Tbsp of almond flour and 2 tsp of collagen. And cut the baking powder in half. PERFECT!!!

    I made the coconut ones. Delicious! I used 1t Xanthan gum in place of gelatin and 1/2T of molasses in place of Erythritol and added 1/4t pink salt. Soooo goooood!!

    Made the almond flour cookies today. Got blanched almond flour from costco and brown sugar erythritol from Target. I just used 2 Knox Gelatin sachets (not sure if it's equivalent). 1 and 1/2 cups of almond flour didn't seem to cut it. I had to go 2 and 1/4 cups of flour to get the right consistency. I like thick chewy cookies, so made huge scoops and spread them out a little. Some of them I rolled into a ball with my hand and then flattened. Both varieties came out great! Next time (oh I'd definitely making these again) I'm going to use just the scooper and not ball them up by hand.
    Thank you so so much for this recipe! The cookies are delicious and very very heavy. I had one for lunch with a glass of milk and I was instantly full and very satisfied.

    I just made these for the 3rd time and they are always great. My daughter wanted to help and put everything in a bowl so i just melted the lilys chocolate chips for a few seconds and just mixed it all together and the cookies came out like a fudge brownie cookie. Yummy 😋 Now i have chocolate fudge brownie cookie recipe

    Oh my, oh my. I made these and we loved them. (definitely let them cool) My husband and I are kind of old and wanted to try pecans and cinnamon (we are from the snickerdoodle generation)...Oh my goodness, so good... I added a tiny bit of cream cheese on top of the pecan cookies before baking and that was just an added Yahoo!!! Thank you so much!

    thx for the low carb high fat cookie recipe.
    ***update I made these cookies 3x and want to share my experience to help others***
    -coconut flour instead of almond (almond is more grainy)
    -I added 1 extra egg as others mentioned.
    -i used "zint beef gelitain" i bought on amazon because i dont eat pork, no beefy flavor.
    -You can taste the baking soda with the 1 teaspoon amount, so id decrease it to 1/2 teaspoon~
    -i made 3 diffrent flavors, choco. Chip, snickerdoodle, and unsweetened coconut+ almonds. All great
    - Very Important- i cooked these the first time for 15 min as he recommended and they burnt, so i tried again and 7-8 minutes was absolutely perfect
    , 7 min for that slightly underbaked center.
    I'll be keeping this as a base recipe with my alterations! You can probably make brownies out of these since its more of a cake like cookie texture. delicious Alhamdelillah.

    Thank you so much guys! I substituted Almond flour for Finley ground almond meal, Erythritol for a little less monkfruit granules & beef gelatin for regular gelatin powder & they turned out amazing! I also added a some chopped up walnuts & a little extra butter 😊

      I've been looking all over Austin Texas and I just now came across your comment. So thank you very much. They are $1.98 per packet and of course you can buy smaller packages. It doesn't have to be the one pound bag. Happy camper here!

      @Tekkerzs he is exactly right when he says they spread when they cool but help them out a little. Mine were not thin at all. The Knox gelatine comes in a 1oz box which is 2tbsp. I doubled the recipe so I used 6 packets.

    We've made these three times now and we used ordinary supermarket gelatine powder and they were perfect. The first time we used chopped walnuts instead of chocolate chips and they were just the best cookies ever. The next time we made two batches, one with shredded coconut instead of chocolate chips, and the other batch with raw cacao powder and cacao nibs. The chocolate ones were a tad on the dry side so next time we will adjust the measurements of the other ingredients. Thanks guys xx

    I just made the almond cookie...ok I changed up something. I added coconut flakes and 2 tbs cream cheese. A few drops of buttered toffee stevia I just bought. It's not too strong so I doubt I'll buy again.
    But....the cookies are the bomb

    I made these cookies yesterday, with almond flour. In stead of confectioners Swerve I used light brown erythritol. Also I didn't have beef gelatin, therefore I used 1+1/4 tbs of psyllium husk.
    Amazing taste, big success!

    I just made the almond flour version of these cookies and after waiting for them to cool I have to say and my husband agrees that these are the best! I have tried many other recipes and the secret ingredient really is a game changer. It can be pretty expensive to bake Keto so I'm really happy with the texture and flavor of these cookies. I used unflavored knox gelatin since that's all I had. Amazing results. Thank you Keto Connect!

    Ok.. so I tried the recipe as described and the cookies came out ”Ok". For the second batch I made some changes that made this a really great Cookie!
    1. Brown the butter on the stove top and blend in the swerve until light in color to aerate it.
    2. Add 1 tsp of maple extract and 1/4 tsp of cinnamon! It makes up for the lack of Brown suger. In the original recipe.
    3. Add cocanut flakes and chopped walnuts.

    Found the gelatin cheaper on Netrition. Have to pay shipping, but if you're ordering other stuff, comes out cheaper. I found Lily's chips and also Pascha unsweetened chips on this site...Lily's chips are much cheaper on Netrition also. Excited to try these recipes!

    Made both of these! SUGGEST: For the sugar I used 1/2 SUKRIN BROWN SUGAR (buy on Amazon) and 1/2 Swerve. For the almond flour ones I used 1/2 each. In the coconut I used 2/3 Swerve to 1/3 of the sugar called for of the Sukrin Brown sugar. Both came out AMAZING! Yes, Lilly's are super expensive. But I found them in a local store for $6 a bag. You only use about 1/2 a bag for a full recipe that is packed with the chips. You can also buy a Lilly's bar and chop it up (which I do for making coffee chip ice cream). I use a full-tablespoon, leveld off, for the right size for me (both recipes). It yields more than suggested in the recipe. I thought this was perfect!

    I made a batch earlier this evening, so I could take "dessert" with me..oh my goodness, so good..I did add a few more things..to the original almond cookie recipe, I added 3 tablespoons of cocoa powder, half cup walnuts, a pinch of salt and two tablespoons heavy whipping cream. I didn't have "Lily's" chips, so I used Hershey's sugar free (I know, they are not the best ingredients, but they work for me)..I used one third cup xylitol, and half cup erythritol..batter was not sweet enough, so I added a bit of stevia, and 2 tablespoons of Pyure. 350 at 15 min, turned oven off and let cool. Oh my goodness gracious!

    Been on Keto for two weeks and had to have a cookie, made your recipe, right in the middle I realized I didn't have the beef broth so I used 1 tablespoon xanthan gum and they turned out perfect. Very soft and tasty.

    I've added orange extract to kill erythrytols metallic aftertaste and I think it's a game changer for most baking recipies. Very tasty. Thanks for sharing! :)

      nioxi orange chocolate chip cookies? Yikes. But other extracts would work too. Maple, rum, butter even banana extract sounds better than orange. But then again I don’t get an aftertaste from erythritol S

      I don't understand why they don't just use monk fruit. It's 1:1 sugar in sweetness and it has zero net carbs. It tastes exactly like sugar and there is no after taste. 🤷

    OMG. I tried this recipe - not the one with the coconut flour. However, I used my Ninja Foodi XL Pro Air fryer. I set it for 350 degrees but only cooked for 14 minutes. I made giant cookies - a total of 7 cookies. They were very soft when I took them out. But I set them out to cool for 30 minutes. They firmed up and are super chewy. I can't wait to taste! Also, I used Allulose instead of erythritol. OMG. I just tasted my cookies. They are HEAVENLY.

    Just made this. Did a almond and coconut combo (instead of 1.5cups of almond flour, used 1 cup almond and 2 tbsp coconut). Used a scoop on a silpad. Then got a paper towel, folded it, lightly sprayed with cooking spray and used it to flatten the dough. Cooked for like 20-25 mins for those extra crispy edges. The texture is AWESOME.

    Oh wow, this is perfect. When Megha was making the coconut flour cookies, I was doubtful of the outcome but it surprised me in the end result. It was hard to tell the difference by the look...they both look delicious!

    I tried your recipe. I didnt have beef gelatine so I used the unflavored gelatine and also added swerve brown sugar and unsweetened coconut flakes. I cant stop eating them! Next time I wont add so much gelatine cause they were too soft but oh so good! Thanks for the recipe! 🥰

      Travis In Canada I take gelatin in my tea ir coffee everyday. Two teaspoons a day. You will never have loose skin. Consistency is key though

    Matt and Megha: Made these cookies today with almond flour... had only unflavored gelatin but it worked 👍👍👍aaaaand I have to say "awwwwwww", they are soooooo delicious 😍😍😍 even when I have to say, that my cookies are more crispy instead of "chewy" buuuuut I have to say I loooooveeeee them that way 🤗😁☺👍👍👍👌👌👌😘😘😘 ... my cookies got pretty dark even when I followed Matt's instructions 350F for 15 minutes "maybe longer" .... more than 15 minutes and they would be burnt 😱

    Yooooo! I just ran to the store to get sugar free chocolate chips (because I had everything else) and made them. These are bomb! The only thing I replaced was the beef gelatin powder with regular unflavored gelatin. But they are so good. Can't wait until hubby gets home so he can try them. It made 20 with a little leftover for me to eat raw! This is going to be my go to now. Thanks y'all for the hard work!

    Hands down the best keto cookies I've ever made. Thanks Matt, I made the almond flour ones and used regular gelatin instead of the beef collagen. I also made a couple with nuts and cinnamon. They are both delicious and if you leave them out a bit they're crunchy like a real cookie. Awesome!!!!

    I wonder about mixing the flours. I find mixing flours and sweeteners sometimes makes for a better texture and sweet profile. I am gonna try that secret ingredient. It seem weird but last week I made the scotcharoos from "All day I dream about food"....using pork rinds ...and it was hands down one of the best sweet treat I have made on keto, rich and decadent and so like a chocolate covered peanut butter rice Krispy treat!

    These were the bomb as snickerdoodles rolled in erythritol and cinnamon as another viewer commented... the coconut flour worked out well but my cookies did spread somewhat. it was tough not to eat the whole pile at once! Thanks for the recipe :)

    1 stick of butter
    1 & 1/2 cup almond flour
    1/2 cup monk fruit sweetener
    Splash of vanilla extract
    1 & 1/2 tsp baking powder
    1 & 1/4 table spoon of beef gelatin
    Mix and then throw
    1 egg and mix

    I made the coconut flour cookies with flavorless gelatin and it was amazing! After I put the chocolate chips into the batter, and stirred, I squeezed liquid stevia into the batter. It gave it an extra sweet 'kick' to my cookies. AMAZING! Thank you so much for this recipe!

    Okay, just made the almond flour version, and they are pretty darn good! I subbed out 1/4 C powdered Swerve and 1/4 C brown sugar swerve...and I loved the flavor. Next I’ll do Megha’s coconut flour version.

    Can collagen powder be used in place of beef gelatin powder??

      I was wondering the same thing. Apparently gelatin is created by heating up or cooking collagen peptides. Worth a try.

    Thank you for this recipe. It’s easy, delicious and chewy. For anyone who doesn’t have the beef gelatin, I used an unflavored gelatin with 0 calories, 0 sugar, 0 everything. Works the same and is cheaper.

    These are so amazing! I just made them and I’m so so so thankful! Unfortunately my dad who has a MAJOR sweet tooth and is a diabetic is just too darn picky for anything that simply isn’t cane sugar in his baked goods. Lucky me tho!!! Loved them!
