I have been making the earlier recipe of these cookies, and they're already wonderful. I've changed up the recipe by using white chocolate (choc zero) chips with some macadamia nut pieces too. So good. Can't wait to check out the new recipe.

I did not have any chocolate chips, however, I added Cookie Butter bakery emulsion in rhe mix instead of vanilla and added chopped pecans....they smelled scrumdidly-umptious and the batter was so tasty. In the oven as I type.
Hoping to God for a tasty treat for my hubby.
Update:
They were lovely chewy, like a soft version of Biscoff cookies.
So very good! I've done two batches in two days and only have six left! Let me add this - on the second batch, I added a shake of cinnamon to the dough and then took a little keto caramel, sea salt, a pecan pieces to top them off after they baked, and wow! Victoria, you're so good! (Ah, somehow I'm posting from my dad's account! That's not me in the thumbnail!)

I made your chocolate chip recipe and shared with friends. They found them delicious! So did I ! I am a Chocolate peanut butter girl so I decided to make your chocolate chip cookies a little different. I made the batter chocolate adding about 2 tablespoons of unsweetened chocolate and then adjusted and added a little more sweetener maybe a tablespoon or two. I also added Lilly’s Peanut butter chips and some cut up peanuts, I’m here to tell you they were delicious! I was just wondering how I could send you photo of them? Instead of using erythritol, I creamed softened butter with Splenda brown sugar . And followed the recipe the rest of the way like she posted it and they came out perfectly!

Try doing this recipe with Brown butter probably would be super amazing. I made keto cookies with Brown butter. I will never do it any other way again.
I made your old Keto Chocolate Chip cookie recipe using the VKF. I didn't have allulose brown sugar (I used Sukrin Gold erythritol), and 1/2 C allulose. They got pretty brown, but tasted pretty good. I will use this new recipe next. Love You! PS My husband is not into low carb but loved them.
OK I used Swerve Brown sugar which is Erythritol, and Lily's chips. The Choc Zero stuff has always raised my blood sugar, ALOT. The Lily's do have a bit more carbs. They were great. My cookies did come out pretty big. 🙂

I found that erythritol has an unpleasant "cooling effect" in the mouth, making the cookies (and anything else) taste bad.
But worst of all, erythritol has been recently linked to heart attack and stroke.

I can’t eat ChocZero! I love it, but they use a sweetener that kills my weightloss. I use Lilys. Can’t wait to try this recipe. I love your recipes.
I've been using Bake Believe sold at Walmart. They have ethritol and cheaper than Lily.

Thank you so much me and my fiance are obsessed with these cookies I’ve already made 4 batches in two weeks lol 😂 I’ve always used your flower to make biscuits. And now I have a new favorite thing but I have one question could you maybe suggest a way to make double chocolate cookies by adding cocoa powder to the recipe ? Also I like to some times use less chips and I add some lily's peanut butter chips , I even might use some the peppermint ones for Christmas.

What brown sugar with erythritol are people using? I tried Splenda Magic Baker, they came out very dark, but were still very good.
@@vickieshilling9394 I’ve been making my own-it’s a little tedious but I can make it to the size batch I need. I use blackstrap molasses (tiny amount) mashed into powdered or regular sweetener; mixed until eventually it’s uniform. The more molasses the darker. But it’s a super tiny amount, doesn’t take much to still get the brown sugar effect. Same process as for regular sugar and molasses for brown sugar. Hope that helps!

Sorry my flour is a “white flour” substitute it is not a keto flour substitute the properties are very different
i made these again with bamboo fiber and they were much better. i think i can flatten them even more. not sure we can ever get the chewiness tho

Question: when you say “erythritol base” sweetener, do you mean 100% erythritol or that a keto sweetener blend should have erythritol as the first ingredient?

Hi Victoria, I have been greatly enjoying your videos, they have helped me on my Keto journey tremendously, especially knowing you can eat the same dishes but a lot healthier. Have you tried using Lupin Flour? I'm in the process of making tortillas, and I've heard that Lupin Flour is somewhat of a great substitute for cornmeal as far as texture goes. First sheet I pressed down a little bit but ended up with mounds. They didn’t spread, just rose. Second tray I smashed them and this tray came out looking like a choc chip cookie.

I have BB milk chocolate, semi-sweet and dark chocolate chips. I sprinkle them over my Lakanto brownie mix brownies straight out of the oven, they soften in just a few minutes (enough to spread), then I spread them over the top of the brownies to make an icing. They are soooo good!
Does any one know how many grams a stick of butter is? I googled it and it said 112 grams. That was way too much melted butter. I noticed the old recipe only used 8 TBS. Perhaps I will try that. It is sometimes really difficult to try to convert US measurements to metric. I couldn't even eat the cookies. It did not help that I used homemade chocolate chips. I think they were too fat heavy as well. So now I have some chips that I bought and will try again.
Cooling now - the hardest part aaaarrgh!!

How do you keep the bottoms from over cooking? Take out of the oven sooner and let them naturally cook the rest of the way?
They don’t brown any faster than white flour recipes UNLESS you use allulose. If you use allulose it will brown very fast and never get crunchy, they will stay soft

I made these cookies although the texture was good the cooling effect of the erythritol was something I just can't get used to. Unfortunately not for me ( I did make them exactly as the recipe called for) If anyone knows how to make a keto cookie with a different sweetener please let me know.

Do most of you bakers use the jelly roll aluminum pans to make cookies on? I use metal grey nonstick cookie sheets. My cookies come out dark even baked at the lowest suggested time.
Are u using allulose? Allulose browns super fast and it doesn’t work well in baked goods because it over browns too quickly
I used swerve brown sugar and now I see that Alluose is the second ingredient. They must have changed the ingredients and I didn’t notice. Thank you for your help.
I like gooey almost not all the way cooked chocolate chip cookies. Anyone try it with this recipe? Does just decreasing the bake time allot for the gooey-ness with this flour?

I’m a bit confused. Could you please help. I’d like to make these. You mention this recipe would not work with Almond flour, but recipe link calls for and you say use VKF ; yet it has almond flour in it ??? Also, I see below in comments, is does not work with VKF 2.0, and wondering why not. And, someone ask if we can use Einkorn flour recipe? . Would it work with your Einkorn flour. Than you Victoria. I’ve already watched that one as well. VKF 2.0 is linked there, and it obviously has Almond flour as well. Someone mentioned in these comments, VKF 2.0 does not work with this recipe. God Bless
Idk, maybe they did not use cup for cup with VKF 2.0
@@sketch9306 it works it’s just thinner. 2.0 doesn’t have psyllium husk in it so it doesn’t absorb near as well so things are more moist. If u use 2.0 use at least a full cup. If it is too wet add 1/4 cup more
I think you are amazing , and sincerely appreciate all you do,,, that being said, I agree with this person above… It would dispel a lot of confusion upfront, and you would get less questions. And could clarify , when you do a new video you explain then about the usage of WHICH flour recipe will or will not work for this particular recipe, your demonstrating.. And yes, I’ve already watched the video multiple times on questions and answers with the multiple flour recipes… just think it would clarify everything upfront if you just mention what flower recipe will work best. I recommend this recipe but add 40grams of ground down “whole psyllium husk” as well. It won’t be as good I’m sorry but hopefully it will work well. You won’t be able to follow my recipes by gram but you should be able to follow cup for cup “ish”

Erythritol tastes minty and weird what to do?
add a couple drops of liquid stevia, it helps to counteract the "cooling" sensation. At least it has for me as well as other KETO sites I've looked into.

Love you but please stop saying “a stick of butter” what is a stick?
Most butter, at least in the USA, is sold in a 1-pound package containing 4 individually wrapped "sticks" (one stick = 110 grams)
