I didn’t have the pudding so i used vanilla keto chow. I used the core one. My oven is broken so I used a countertop oven and cut the time to 7 minutes. Turned out great and less carbs. You may need to adjust your oven time if you use a regular oven. I measured out 1.7 oz of the vanilla cream keto chow. I will make these again.
I made a batch of these this afternoon and I’m truly impressed!!! I love everything about them. I did cut back on the brown sugar a little and used about 1/3 of chocolate chips and it was perfect. You’ve got a winner, Victoria!!! Thanks.
I love your method since you simply add everything all at once, and then mix, which is very different than a traditional cookie recipe, where you have to cream the butter, add the egg, add the dry ingredients, then the chocolate, etc. I also hate baked goods that are made with almond flour so I'm excited to try this. Good job!
I just made a double batch this morning and I think they are the best thing on your channel! I made them smaller because I have a diabetic husband who is never satisfied with just 1 cookie, it has to be two even if they are smaller. It’s a mind game. He agreed they were the best ones so far. So thank you. I managed to get 50, 2.5 inch cookies out of the double batch. So I figure each one was about 1.3-1.5 carbs. I also agree with the other comment about maybe not using so many chocolate chips. Never thought those words would come out of my mouth; but knowing my love of chocolate that could easily change 😂. I'm so glad you are using Simply Delish pudding + not the J..... brand! That J. one has Maltodextrin in it = a higher Glycemic Index than sugar!! I have a favorite chocolate chip cookie, but I will definitely try these. Thanks for the great recipe video!

I was attempting to make a crisp biscoff cookie from a keto butter cookie recipe on ketospoon and thought you might like to try something similar, as what came out was a light melt in your mouth shortbread cookie. They used 200g soft butter 4 T powdered sweetener and 1 cup Oat Fiber. I ran out of Oat Fiber so used only 1/2 cup Oat fiber plus 1/2 cup bamboo fiber.....I added Cookie Butter emulsion (tastes like Biscoff). They were soooo good after cooling and refrigeration. Not sure if they work with all bamboo fiber....but I am hoping.
came back with update: used all bamboo fiber and 1/8 t of xanthan (1/4 C of Einkorn for structure) to recipe along with butter vanilla emulsion drops.... ohhhhh my word....melt in your mouth shortbread cookies in time for Christmas. My husband is low carb and addicted to shortbread cookies....this is a winner.
Ok Victoria. I got exactly 13 cookies also, but I didn't flatten them enough and had to bake them a couple minutes longer. They're cooling now, can't wait to try them. Oh, the one change I made, I had Simply Delish chocolate pudding on hand, so used that. Extra chocolate, what's not to love?

So Sorry but I’m locked out of Facebook right now and it’s a lot of red tape to get back in. Also my flour is cup for cup however remember it’s gluten free so any recipe that relies on gluten “such as bread” needs its own recipe

Hello from AUS 🇦🇺! This keto pudding mix is difficult to get here & quite pricey if you can find it! It is however absolutely delicious & I LOVE LOVE LOVE it! It is particularly nice mix with CREAM CHEESE for a yummy cheesecake chilled pudding! I have searched endlessly & have not successfully come across any easy keto dry pudding mix recipe that could be used to substitute it! Just wondering if you intend on trying to recreate this Simply Delish pudding mix? I think it would be an another absolute winner!

allulose keeps baked goods soft. Erythritol adds crispness. The amount of monk fruit in the blend is very small as monk fruit is so much sweeter. The texture won't be the same with the blend you want to use.

Steve, can you let us know how they turned out? Were they chewier and did they hold together? I HATE erythritol too. But I don't taste the cooling in Truvia (erythritol + stevia). I made my own dark brown Truvia with molasses.
i had no Keto Pudding with clean ingredients from Amazon. But I had sugar free Jello pudding so i thought I would try that to see if it was worth it to order the pudding from Amazon. So, I just followed Victoria's instructions. These really are the best chocolate chip cookies I have made. And I have been low carb/keto for 13 years. Therefore, I have placed my order for the keto pudding from Amazon. Victoria, would it still be possible to just sub keto ingredients including your VKF in other regular pudding cookie recipes?
I did experience sugar craving from eating this cookie. But not because of Victoria's recipe At first I thought it was from my homemade dark brown sweetener. Then added to that was the Jello pudding with maltodextrin, cornstarch, and sweeteners: aspartame, & acesulfame potassium. But at least now I know Pudding Cookies are very good.
