    I have been gluten free for 30 years because of gluten intolerance. I bought Einkorn flour a year ago because I’d heard it would not cause a reaction, but was afraid to try it. Well, I made your flour with it and baked a loaf of bread. To my amazement I had no reaction to it. I was fine after eating it. I don’t eat it often because I don’t want to push it. But I am thrilled with the results. Thank you!

    I used your Einkorn Flour and made ATK biscuits. I ate 2 biscuits with ham and measured my glucose level before and an hour after eating them. My glucose level only went up a couple of points. I tested my glucose levels on 2 different occasions when eating 2 ATK biscuits with ham and each time it was just a couple of point rise in glucose levels. For a Type 2 diabetic, I call this a success.

    I've been using your Standard Keto Flour with the Einhorn Wheat Flour, and everything is DELICIOUS !!! I share my Keto Bread( your great recipe) with friends who are allergic to gluten, and THEY ARE PERFECTLY FINE, and are OVERJOYED that they can finally eat bread !!! Because of the carbs, I haven't allowed myself to eat bread for years, but go on and on when I eat your wonderful bread !!!! 😋

    I got a mill and am using soft and hard wheat berries, because the good parts aren't taken out it reduces the effect of it for my diabetes. Game changer I can make bagels and English muffins without a blood sugar spike. And feel normal. Thank you for your help victoria

    Even though you felt that you had to explain yourself, which you didn’t, you did a fantastic job, and now I do understand even better, because I wasn’t trying to be keto for the reason of any medical other than insulin resistance, and possible gluten intolerance. God bless you and your family❤

      @Mary-Mercedes - We live in a very ultra processed world and a lot of people have different types of physical ailments. The original keto over 100 years ago didn’t involve recipes requiring ultra processed flours. People are used to eating flour-based products daily. They forgot that for thousands of years, people ate organic plant foods and regeneratively raised and wild caught meat/fish. I have not tried this recipe, but all the foods required for this recipe don’t need to be in a persons daily diet. It’s just a once in a while flour recipe. If you like to eat flour products every day, that is your personal decision. Your personal diet has not been the diet that humans have been living on for thousands of years. So, try not to criticize others for wanting a balanced diet that doesn’t need to be pizza and bread or cakes and cookies every day. When I do try this flour, I would try the flaxseed version (almond has too many oxalates) and I wouldn’t mind making a pizza with it but I don’t need to eat pizza every day or cake every day or even bread every day. There’s so many other options out there.

      I guess I don't know the comments you're referring to - maybe I've missed them. But it sounds like what you want is for the channel to delete comments you don't agree with.
      Trouble is, this is Victoria's channel and she seems to be a VERY capable young woman. Perhaps she welcomes all comments so she can respond to them with her reasoning or perhaps she simply ignores them. Quite a few creators do because deleting comments from people who disagree is often perceived negatively. Of course, threats, profanity, etc do not need to be tolerated and IMO should be deleted. But I also know not all creators read all the comments. I say just let Victoria run her channel as she sees fit. She seems to be doing a great job without our help.

    I have made and used your einkhorn flour recipe. And after tweeking the bread machine recipe around a bit I actually got it to taste good! I thought your original machine recipe lacked flavor and didn't raise enough so it was too dense. And fidgiting with the cycles on my bread machine I figured out the system how to knead once..raise. then bake 1 hour. I follow a sort of keto program. Maybe dirty keto. It's more for my diabetes control than anything. First of all I thought the dough was a bit soft so I added an additional one half cup of your einkorn flour mix. I added 1.5 T of sucralose and 1 T of diastatic barley malt. To your machine recipe. If anyone is interested. That may change the carb count a bit. Keto followers do not like to use sucralose. But I do. Also yeast will react with sucralose. The barley malt in addition to adding flavor boosts the yeast activity. Other than those additions I follow your recipe as you have given it. Thank you Victoria for all you do for us!😊

    I love using einkorn Victoria! I haven’t gained an ounce since reintroducing it. I actually purchased 35 pounds of the berries just recently, and am happy I did.

    I am prediabetic. That is why I do the keto way of eating. I absolutely cannot have very many carbs at all. I try to stay under 20 per day. I ordered the einkorn flour, but I have not used it yet. I sure hope that it doesn’t make my blood sugar spike we shall see.❤️🙏

    I recently came across your channel and I'm so glad I did. I just purchased the VKF ingredients from Amazon and I'm very excited to make your bread in my bread machine! The price of egg white protein was kind of hard to swallow but hopefully it will go along way. Have you figured out how much it costs per loaf?     Victoria!!! OMGOSH! I'm just gonna repeat my comment from another of your videos: I have NO need to follow any other Keto channels after making up your flour! I ended up ordering Jovial Einkorn whole wheat flour (it gives me chills and fills my heart with joy to know it hasn't been changed in 12,000 years!) to make the Einkorn version of your flour. FANTASTIC results!!! I have just one question though... when calculating the carbs per cup, I ended up with 10.27, whereas you had calculated 17 on the recipe card on your website. Now, I am in NO way being critical of you at all, but wondering if you're measuring total carbs or net carbs? I'm going to attempt making a successful sourdough bread before I invest in the berries/flour mill attachment for my Kitchenaid, but you have inspired me soooooo!!!

    IMO too many people are not very knowledgeable about what keto actually is and your explanation was spot on! The label of keto is a misnomer and I see people buy "keto" products for the name and yet if they read the ingredients they would find it contains many things that are no different than the same product without the label keto.     I’m so sorry you’ve been attacked over Einhorn. It is actually OK just regular old wheat flower, except that you have to calculate the carbs. So people get so focused on the thing. Certainly hope the best for you. You are the first person who actually has epilepsy that I’ve run across that is giving us good nutritional information. Thank you. In particular childhood epilepsy runs in our family so if I can get my children to understand that to reduce their children’s carbs will help them control. The episodes of their children are having. Thank you again.

    FYI; last night I made the ATK (America’s Test Kitchen) recipe from HighFalutin Low Carb using as he recommended your Bamboo flour with the Einkorn blend (without the psyllium) which turned out FANTASTIC. Next day I toasted a leftover one up to make breadcrumbs to use as a binder in a stuffed peppers which my family LOVED. 🎉 😁 Thank you.

      @@plant-a-holic I don’t remember what the difference is, but there IS a difference between them. I used: “It’s just EGG WHITE PROTEIN nothing else” which I ordered from Amazon ($23 for 8 oz but it lasts quite a while). It’s a white package with large black letters. I’ve found Amazon is cheaper than most health food stores. I also made from Carolyn’s site: all day I dream about food her ham & cheese scones, substituting Victoria’s flour for Carolyn’s almond /coconut flour. I needed to add a bit more milk to make it stick together, but considering it’s the first time I ever made scones, they turned out great, disappearing fast in my house. 😋 Oh, I didn’t want to waste the extra yoke, so I actually used 2 whole eggs, not 1 & 1 egg white. Still turned out.

    I made the flour mixture the other day, and instead of waiting until all the ingredients were in the bowl to mix them up. I mixed them up with each added ingredient, and it turned out better for me!! I hope this helps anyone else!!

    Something I do when using baking soda in a recipe I like to add some kind of vinegar/kombucha/ or yogurt and it seems to make it a lot lighter

    Hello Victoria, I'm not sure I understood correctly...if I don't have a flour mill and before possibly investing in a model like yours I want to try the Einkorn how do I measure the flour to have 1 cup 1/2 do I remember that you already mentioned in your first recipe that a cup of flour equals 96g so 240g for 1t1/2? please enlighten me

    GREAT VIDEO VICTORIA....and yes I have 4 different types of Lupus and get Chemo for that so I totally understand its what your body can handle and ketosis etc I know other people who have various diseases that their doctors told them DO KETO I look forward to recipes that include the newest flour I have a problem with the older recipes and new flour but Im getting there.....Thank you for all you do and your hard work and understanding for all the questions God Bless You ........Julianna NC

    Hey Victoria, do you use the Jovial recipe for making their einkorn sourdough bread. I am only asking here because I do not have my FB anymore. I use it and I made up the jovial einkorn sourdough starter as well. it is the easiest and the best tasting sourdough starter I have ever made. I also have a cast iron dutch oven and I bake my sourdough in that.🥰🥰

      You can use my einkorn keto flour but this VKF using einkorn at 1 1/2 cups is the best due to the fact it contains more einkorn

    Does your whole psyllium husk already look ground up in the container right after you buy it? Because I was not sure what to do with my (now brand whole psyllium husk) as it seems to already be ground and I tried grinding it up in a coffee grinder some more and it doesn't shrink down in size at all, it just gets finer but just doesn't shrink down.

    OK, so let me get this straight. If I am buying the Einhorn flour already ground, I can just substitute this in the flour recipe on a one-to-one ratio with the almond flour correct? So for how many cups of almond flour, just replaced it with that many cups or grams einkorn flour?

    So I have a REAL question. You say don’t buy psyllium husk POWDER, rather get the husk and then grind that down. I assuming if I have a nutrimill that will work. But my question stems from Amazon…the husk doesn’t show a nutrition guide but the psyllium powder shows like 5 grams of carbs and all of that is fiber. I’m not trying to be nitpicks but when you consider the actual breakdown are those 5 grams really going to knock you out of ketoses?

      @@margaretlewis8189 it has nothing to do with carbs as to why I don’t use the powder. The powder creates a gooey undercooked middle in things u bake with. When u grind your own husk it doesn’t turn into a powder it’s more like tiny flakes. But it has nothing to do with carbs but everything to do with the properties of whole psyllium husk when ground and baked.

Many folks in the diet/weight loss/lifestyle community have lost their freaking minds in these last few years with their black-and-white, all-or-nothing, know-it-all attitudes about what and how and when we should eat. Thank you, Victoria, for giving us a dose of reality of how we can incorporate our favorite foods into our eating regimen, within reason, without feeling deprived (as happens in so many dietary regimens). You are a beacon of light in this grim world!
    One of the best things that ever happened to global society in modern times was back in the '90s when someone thought it would be a great idea to make a keyboard+internet combo affordable and available to the masses.     Victoria, I’m just now working on putting this flour together and the einkorn is giving me a headache. I purchased the Jovial whole wheat flour already ground and 144 grams is NOT measuring out to 1 1/2 cups but more like 1 1/8 cup. What am I doing wrong? Also, the einkorn bag shows 17 grams per 1/3 cup

    PLEEEEASE . Pretty please, could you tell us if dried egg white powder can be used instead of the egg white protein powder??!! One company of an egg white protein product told me that it was made of dried egg whites , but with some of the glucose content removed? They thought egg white powder could be substituted, but I wanted to be sure by asking you the recipe creator, since the ingredients are so expensive, and we don’t want to be disappointed, in case they are not ??!! Really hope you can answer this question soon??? I have been waiting to try this recipe and now have everything, except, I got the egg white powder instead?? Thanks for all you do ! When I called the Company that manufactured the egg white protein, they said the only difference they thought between egg white protein and in dried egg whites, was that an egg white protein some of the glucose is removed? But they did say the egg white protein is made out of just egg whites.?! I don’t want to go ahead and make the flower and then make all the recipes only to find out. There’s some kind of scientific reason why it won’t work not sure the company that had the egg white protein said she thought it would work, but she could not guarantee that I should reach out to the recipe creator… Which I have a couple times? I understand she’s busy… But if you put out all these videos repeatedly, you should be able to answer some of these basic questions?

    Your keto flour recipes look great! Can I use my coffee grinder to grind einkorn berries into flour or do I need a flour mill? I just read that you can make an 'einkorn rice' with the berries also? Have you ever tried that? thanks!

    I have been baking several of your recipes, such as scones, chocolate chip cookies, brownies, muffins, etc. mixing your latest flour mixtures, some including the Einkorn flour, and your recommended sweetener mixtures (Boca & Truvia.). So far, in everything I've baked I found there to be a "zing" especially as an aftertaste. It is sort of like what you get when you eat radishes, a little sting. Would you know what flour or sweetener causes this and if you can, what can I substitute for it? Would the measurement be the same? I find I cannot eat what I bake because of this. Other people don't seem to detect it or mind it but it bothers me a lot. I'm new to baking and I love your videos. I would like to try many of your recipes but if I continue using the same ingredients, I won't like what I bake. Thank you.

      Are u allergic to peanuts? Some ppl with food allergies find themselves allergic to bamboo fiber. Might not be a sweetener thing at all.

      Thank you so much for your quick response. I've never had an allergic reaction to peanuts or any other nuts or foods, but I will mix my next batch of flour without the bamboo fiber. Do I use the same grams of all the other ingredients and just leave out the bamboo fiber, or do I need to add a substitute? if no substitute, should I change the grams of any of the other ingredients? If so, which and how many grams? If that doesn't do the trick, I will try the allulose. Again, thank you so much.@@victoriasketokitchen

    Most doctors do not know what is good…they only have 1 semester of nutrition. I said Doc, if I eat grass fed, grass finished, and organic everything else, how will my health possibly be worse…the ASD didn’t exist back in the day…he agreed to let the bloodwork tell the truth.

    Thank you! I really like the 17 gram per cup einkorn version. I was looking for a lower carb bread not no carb and this is very tasty. I Love sourdough so I bought the jovial starter to make sourdough with but can't get the ratios right, but I'll keep trying. Open to any suggestions. Thank you again

    I made your improved keto flour with the bamboo fiber and wanted to test it in a ciabatta bread recipe. I did add the 1T vital wheat gluten per two cups of flour alternative but it didn’t come out very well. Any recommendations? I have made this ciabatta using the called for ingredients and it is a beautiful bread, so suggestions to achieve a close match would be wonderful!!

    I love what you do. ❤ Even though I cannot do Einkorn, being diabetic, my body converts this into sugar and prefer your other flours better. These are results from glucose monitoring. The only one I haven’t tried is with the bamboo fiber, but I heard it makes you fart. So I really didn’t want to spend more money on farting. Ha! Ha! 😅 You do you Boo. If you can do Einkorn, then do it sweetheart. ❤ Take care

    Hello, I need to be low low low carb under 10-20 total a day. Working on that. I've had some hiccups so I know how high my sugar goes. You gave the net carbs but not the total carbs per loaf/slice. Net carbs can be deceiving and be more total carbs than you think. I would love to have bread again and not sent my sugar levels into the 300 +. would you help with that on a future flour making video.
