- You're right! Integrating ranch seasoning into the dough would further enhance the flavor throughout the chip. Based on additional research, adding powdered ranch seasoning directly into the dough can give the chips a stronger and more consistent Cool Ranch flavor. Let's adjust the recipe accordingly:
Updated Ingredients for the Chip Base (with Ranch in the Dough):
1 cup cottage cheese (strained and blended)
1 cup almond flour
1 tbsp psyllium husk powder
1 tbsp whey protein isolate (for crispiness)
1/2 tsp xanthan gum
1 tbsp olive oil
1 tbsp powdered ranch seasoning (this adds ranch flavor directly to the dough)
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp smoked paprika
1/4 tsp salt
Cool Ranch Seasoning (for tossing after baking/frying):
1 tbsp powdered ranch seasoning
1/4 tsp smoked paprika
1/8 tsp garlic powder
1/8 tsp onion powder
1/4 tsp salt
1/4 tsp dried parsley (optional)
1/8 tsp cayenne pepper (optional for heat)
Instructions:
Prepare the Dough: Blend the cottage cheese and combine with almond flour, psyllium husk powder, whey protein isolate, xanthan gum, olive oil, garlic powder, onion powder, smoked paprika, and salt. Mix until you get a cohesive dough.
Roll and Cut: Roll the dough between two parchment paper sheets to about 1/8 inch thickness. Cut into triangle-shaped chips.
Fry or Bake:
Frying: Heat avocado oil to 350°F. Fry the chips until crispy and golden (about 2-3 minutes), then drain on paper towels.
Baking: Preheat the oven to 350°F. Bake the chips for 12-15 minutes or until golden and crispy.
Cool Ranch Seasoning: In a small bowl, mix together the ranch seasoning, smoked paprika, garlic powder, onion powder, and salt.
Coat the Chips: While the chips are still warm, toss them in the Cool Ranch seasoning for full flavor.
Cool and Serve: Allow the chips to cool fully to achieve maximum crispness. Store in an airtight container for up to 5 days.
Don’t worry about using Walmart brand stuff. You keep doing these recipes for us and the more expensive stuff would add up quickly! It’s not fair for anyone to complain about it. They aren’t eating it. If they choose to use a different brand that’s their business! I bought aldi almond flour for like $5 or so. My grocery store wants minimum $20 for the other brands! So far I’ve made a bunch of things but only one was almost edible soooo I make a $2.50 mistake not a $10 mistake! 😂
So your fans gifted you with the opportunity to say keto Doritos another hundred times for kicks and giggles
I can judge people who shop at the cause of American Manufacturing decline and the company that has its workers on welfare programs rather than pay them a living wage.
@@ElyonDominus well those workers who don’t make a living wage need to buy cheap almond flour somewhere. 😂
@@user-wi3xh8pt5q Walmart workers cannot afford to buy almond flour at their employer's location and you think that's funny? You think it's funny that we directly fund Walmart's work force? That we subsidize the Walton's vast family fortunes? That's funny to you?
@@ElyonDominus so they must get their alternative grains down by the docks when the boats come in. Both this comment and the previous were lighthearted responses as to not start anything on Dave’s comment board. ( sorry Dave)
I’ve got no problem with your rhetoric. Our problems stem from those who can afford to but refuse to buy goods that are sustainable, reusable, made in America , for the good of the worker etc…. Manufacturing has been outsourcing forever. Walmart is a juggernaut of industry and, while I agree that there are problems with it all…. The industrial “revolution “ that is taking place has happened because large corporations “trickle down” effects don’t work and they aren’t sharing, allocating for the betterment of the world/workers/environment. Think of those who hold wealth now…. They aren’t producing goods to aid humanity. ( Kellogg invented cereal grains to help those sick from eating unrefridgerated meats, American cheese gave sustainable calcium cheese to troops in WW) today, Their products like social media platforms serve to make them rich. Meanwhile, advertisers pay for user data making them richer. They do not add to society only to the ills ( self esteem, paranoia, data mining, scammers, snake oil salesman, ppl who pick fights with strangers on a keto dorito video). And they pay no taxes, in fact I just read a company had a $400M + REFUND on their taxes after not paying a dime. It’s not just Walmart but many ceos who feel that every dime belongs to them and only them.
Dude, I’m gonna buy what I can afford. I have to use alternative/GF flour. $5 it is.
I started using ricotta instead of cottage cheese. No straining or blending and it is delicious.
I do the same thing. ❤
Oooo, good suggestion! I will have to try Ricotta cheese.
Me 2
Has even more protein
FYI lots of us keto people are poor and go to Walmart and Kroger. The people who push expensive brands don't understand that. Love the videos. You're doing great with the variety of recipes!
If you are buying groceries these days… you ain’t poor! 🤭 You are just grocery poor! Anyone who pays $20 for the same item they could get for $10
Is foolish… not very smart in my opinion! If your family is on assistance (food stamps, it is called here in NC) they are getting 1/2 of what they did before for their food stamp dollar! It’s crazy so let’s just let everyone buy what is smart to buy and if you can buy a healthier something because it has 10% less salt… good on you! Leave our Dave alone!
If you spritz the chips with a little oil and air fry they taste like fried. I bought a spray bottle for oil, that way you don't get too much oil.
You are truly the modern version of The Galloping Gourmet. You crack me up and are so entertaining!
And he isn't even drinking like the Galloping Gourmet did! That was a blast from the past.
I LOVE YOUR VIDEOS!! You know there are ALWAYS gonna be keto police that feel their way is the only way.... You just keep on keeping on. ❤
Don’t beat yourself up is right. I was Leto/ carnivore for almost 2 years when I got cancer and the chemo affected me badly. I ended up eating rice and crackers bc it was all I could keep down and I went off my diet for almost a year. I’m back on now again and feel wonderful and myself once again. If you let that guilt trip you up you can’t just get back on that keto wagon again so easily. Good for you.
The Keto diet is the best, reversed my moms type 2 diabetes and soooo many other health benefits. My husband used to love Cool Ranch Dorito's, but now he eats Carnivore and is back to high school weight. I may make these for a special occasion. I plan to fry them in tallow, though. Ty, this looks amazing ❤
People that look down on people that get great value brand are just being elitist and trying to feel better about themselves by putting others down. Walmart doesn't make anything, great value stuff literally comes from the same places that make the name brand stuff
Hey Dave. I seen your comment on Acre Homestead yesterday. I had to come check out your channel. Love what I am seeing. I would love to stay connected with you. I hope to see you on the other side. I will definitely see you in your next video. ❤❤❤
Tip to stop parchment paper from curling on the countertop is to wet the countertop, then place the paper on top.
Tip #2 Maybe pricking with a fork before cooking will prevent puffing up. Not sure, just a thought!
Hi Dave- Just a helpful hint....
Form ur dough into a circle mound then press out.. easier cutting of the chips
Don’t think of having ice cream a fail but a reward for being on keto for 10 weeks. Love your channels!!
0+0= 00. 😆 love your sense of humor 🤣
Keep going and get back on that horse.
Vacations can be a challenge. I make a lot of pre-made meals and snacks. Preparation is the key to success.
And…don’t share with those who won’t appreciate what you have and eat junk anyway. That is being practical, thrifty and definitely not selfish.
Love to watch you fumble in the kitchen.
Thanks for the videos.
Another way to drain the cottage chees is to drain it in a fine sieve over a bowl. You won’t lose as much of the cheese. Enjoy your videos
That's how I do it, same with turning regular yogurt into Greek-style, :)
Your chaotic, disordered, "Eh, et's wing it" method of cooking is EXACTLY with the world needs. the world needs more Dsve cooking anything. Thank you for being, somehow, more chaotic than me in a kitchen
It’s always ok to restart!👌👍Because after a restart, you will automatically finetune the trigger that started the enthusiasm in the first place 🥇
I really enjoy your videos, including your dialog. Entertaining and informative. I'm not interested in going keto as a diet change, but I do plan on trying some of your recipes.
You do realize that now we'll all be using our mixers and singing that song 😂

If there's less than 0.5gr of a macronutrient power serving, it can be listed as 0g. So if it has 0.4, and you eat 4 servings, it's actually 1.6gr, not 0x4. It's sneaky.
Sure, but you use xanthan gum in such low quantities its still going to be close to 0. He used a double so lets say its worst case and .49 so .98 grams across 100 chips, of .1 a serving.
Yay you used the cheese cloth! It’s awesome!!
Absolutely don't beat yourself up going off Keto for a bit. The main thing is you get back on that train.
Found and subbed to Wandering with Dave, nothing came up for Eating with Dave. Please link that to this description. I love following your channels!!
Hands down your recipes you use are the BEST ❤
Man i missed it. On replay. THANK YOU DAVE. I WAS HOPING YOU WOULD DO THIS.
Excellent recipe! It looks delicious, thank you🎉🎉
Ouch, it’s hot because I preheated it😂
Love the videos!!! Thanks ✌️
Dave, you just continue on my friend. I love your channel, your content, your personality & especially ALL your Keto recipes! Thanks again for another fabulous recipe. Can't wait to try this one out.
Fold up the edges of your bottom parchment paper and then roll the dough into the folded edge - voila! Easy straight edges. These look yummy! You can spray oil onto the chips then airfry at a little lower temp - gets closer to that deep fried texture... thank you for helpful chip dough recipe!
Love yours video, down to earth, authentic, easy to relate individual.
You are a little messy but I love that,I am a little messy too when trying to follow new rescepie 😎
Oh thank you!
Peter Piper picked a peck of parchment paper...lol
We all have messed up in keto and failed. But as long as you keep getting better and making slow progress. Your good 👍
I use my air fryer frequently. I don’t know if it would work, but perhaps you could spay a little avocado oil on the chips and cook them for two minutes and add an extra minute if needed. Thank you for the time and effort that you out into your videos.
I definitely want to try these fried in beef tallow😊🔥 I think my way of eating is ketovoir🤷♀️ would love to go totally carnivore 😊🎉 I'm a addict😢 sugar and carbs😒 been off my bp meds for 3 months. Hip pain gone, lost 35 pounds🎉🎉
Very nice. Been Carnivore myself for seventeen weeks!
Great job!
@lexiatel awesome I hope you are seeing benefits.
@@dellzywillis3001 oh yes, down two sizes, 15lbs, no more ibs, and most my joint and muscle pain is gone. Plus, no more food addiction or cravings!
hi Dave, I love all your recipes. I think they are awesome and believe it or not I have actually learned some things from you which is great and I find when you strain cottage cheese it’s better to leave a little liquid. I find that my product ends up a little too dry and I usually end up having to add some liquid to it and to me that just means that the cottage cheese was strained too much so give it a try I think you’ll find it a lot better. You just don’t want it look like it’s dry. You still want a little bit of moisture in there, looking forward to more great recipies 😃❤
Am wondering, would the recipes work if you just bought farmer cheese. It is basically cottage cheese without the liquid…..
I'm so glad you popped up in my algorithm! I love the dialogue!
Hey! Love watching your videos and I noticed that you don't use the handles on your rolling pin, is that intentional? Also where did you get that rolling pin, I need it in my life. Thank you! OH! Also, do you think you'll get around to doing other Dorito flavors? Chili lime sounds like it might be really good, or another of the spicy varieties. Or pickle! ...now I just want Doritos :/
Rule of thumb for Air Fryer: fryer temperature needs to be lowered 10 percent on the original oven temperature.
So 200 degrees Celsius becomes about 180 .
and then cooking time about half the regular time plús 10 percent of the original time. So 40 minutes in half is 20, plus 4. Start with 24 minutes and see if its cooked properly. That’s how I learned to use an air fryer.
Hi Dave, great video! 🤗😋
So what's hilarious is we are planning a trip to Orlando and we were looking for videos on keto and sugar free options at Disney and Universal and we came across your video last week. I just realized you're the same person lmao. I knew you looked familiar lol
I just love you Dave! I’m going to search out all of your channels! Keep doing keto and don’t worry about the slip up. I’m also going to try these out!! Hey! I tried searching out Eating with Dave and Wandering with Dave and nothing showed up. Are these called something else?
Thank you for the cool ranch episode, those look great just like the cheesy doritos! It's been my experience with air fryers that you have to reduce the temperature on smaller batches since there's less food to heat up - basically less volume needs less heat to cook due to the convection action of an air fryer. Great job with the cheese cloth!
I'm literally going to have your videos streaming in my kitchen on my tablet from now on.❤
Thanks so much! Appreciate it
Cheesecloth is reusable. Just wash with water thoroughly hang to dry.
You're killing me Smalls!
Wad the parchment paper Into a ball, then flatten. Works like a champ. Also, prick the dough with a fork to reduce the puffing.Keep the good times rolling with more recipes.
Hi Dave love your videos! Small world, I live in Sanford! 🙂
Another great job, Dave!😋👍 Have a blessed week 💜🙏✌️🎶🤗🍁🎃🍃
can you make a Keto Playlist? Personally im Carnivore but I’m interested to watch your Keto Recipes - if it’s easy like in a Playlist… good luck with it all💪🏻💪🏻💪🏻
I have the same air fryer, it cooks things VERY fast!
I love it!
LOL Love your channel. I HAD to say this because you made me say it when you were struggling with the parchment paper. Pick a peck of pickled peppers. LOL Great recipe and you are a fantastic creator and you're hilarious!
OMG I just love you..... “Everyone is sleeping” Sooooo funny!!! I make the most noise in the middle of the night when most people sleep 😂😂 are u late night or early riser cooking lol
Xanthan Gum is definitely low carb.... it is used in most keto recipes to thicken it. BUT it can become gummy/slimy if you use too much.... at least in my experience
Oooooo! Try cottage cheese regular potato chips using OOO Mashed Potato Flavor Concentrate! Don’t let the smell deter you. That stuff is awesome! I add it to my Cauliflower faux mashed potatoes.
Could put the cool ranch seasoning in a shaker bottle and get better control over seasoning the chip. Just a thought!
Thanks for your videos. How much did it cost to make your chips?
It sounds like you have a bunch of “Karens” watching your videos!! 😂 😂😂 I think you’re doing a stellar job!! ❤😊
I recently swapped from that exact air fryer, and the difference is stark in cook times compared to recipes went away. The fan isn't the only aggressive thing; the basket is directly under a whole electric stove heating coil. It's not so much an electric fryer as it is a small scale convection broiler.
When using psyllium husk powder you need a little less than when using the fiber. It is more absorbent than the fiber and can cause recipes to seem like you don't have enough liquid.
Tong, tong, tong, tong 😂😂 I think im here for the humor more than the recipes!
I wonder if Farmer's Cheese would work, but it might be difficult to find these days. It's a dry form of cottage cheese that a lot of people here in upstate NY used for home made pierogi. It's a bit salty, too.But doesn't need straining.
Your videos give a really hectic Joey Foo energy 😂
I think he’s in FL too. Y’all could be bros
Next time, try the air fryer again, but this time spray the chips first with Pam olive oil spray before cooking. A mist coating of oil may make them taste a bit more like "fried"
I think I will try these using dry curd cottage cheese instead of the type with the extra cream added after making the cheese. Basically, could also use farmers cheese or bakers cheese, though these cheeses taste a bit saltier due to the lack of added cream. They are also pressed into blocks which removes even more moisture. However, they are essentially the same cheese as cottage cheese without the added cream.
Can't wait to try them😋
Hope you enjoy
Yes avocado oil is the one to use.
I spray everything in air fryer with avocado oil. Might make them taste like fried. =)
Looked for Eating with Dave and didn't find it. Also maybe don't use popping a pimple analogy when referring to the food 😮
You should buy curd cheese, it's the same as strained cottage cheese 😄 less hussle
Hard to find it in my grocery stores.
I was thinking of using a soft cheese, like Gouda
It's more $
@@brixmortar I wonder if paneer would work as well, since it is pretty crumbly and dry. Serious Keto did a tortilla recipe a year or so back with a fathead type dough he did with paneer instead of cream cheese and called it panhead dough.
You need to spray/coat the chips with oil before you air fry them, otherwise you're just air(convection) baking them. I think that would improve the texture.
I wonder if you can use this dough to make crab Rangoon 🤤
Dave, get a big scooper for your chips to take all of them out of the oil at one time. Make your life much easier 😊
Looks good!!!
You should put your air fryer on the top of your stove if your microwave has a vent to draw hot air and smoke. Mine does but I live in an RV…💋🧚🏻♀️❤️🇺🇸
Dr. Ken Berry who is a keto Dr. Says if you can do keto with hot dogs and cheap meats im sure a walmart brand is going to be ok too
HVR makes a fiesta variety. It smells and tastes EXACTLY like Doritos.
Tong, tong, tong, tong toooonggsssss was my favorite part of this video lmao 🤣
😆
So you're subscribers gifted you with the opportunity to say keto dorito another hundred times for kicks and giggles
Hehe
Couldn't find eating with Dave. Can you give me a link please.
Did not find your cheese cloth link on this or the prior Doritos video. 😊
Thank you thank you thank you!!! my favorite Doritos
Made it. Loved it!
Why don't you just rinse the cottage cheese off with water you will end up with the curds in a strainer?
Thank you my brother❤❤❤❤❤🎉🎉🎉🎉🎉
The fried ones definitely have more calories then calculated for the other cooking methods.
Hello, the question that I have for you is, what is your reason for being keto?
just put cottage in a strainer and rinse it
Is there an alternative to using almond flour for those with nut allergies?
My liquidity is fair, hoping that my cottage cheese usage will bring it up
You can use clean tea towels too and they can be found anywhere in even the dollar store, no cutting just throw in the wash and reuse.😊
Unless you're like me and have an indoor dog and no dryer. Ain't nothing getting rid of that fur 🤣🤣🤣
Seriously where do you get your thumbnail pics from????????????
The price for a normal size bag of chips has gone through the roof! Unless on sale here too they are like $6 or $7 bucks like 8oz? 12 oz?
Dave!!!! Save the cream from the cheese. Add dill, minced garlic, salt and pepper. Instant Keto-rito dip!
To make you parchment paper fit the cookie sheet better make a small cut at the four corners of the paper.
Proven fact... carbs eaten while spending quality time with loved ones don't count. The laughing and love burns them all away.
There is also dried curd cottage cheese😊
What else can you use besides almond flour how about protein powder maybe?
Some stores carry cry cottage cheese. It's hard to find but sometimes you luck out
