  • Sure, Dave! I'll compare several keto donut recipes using cottage cheese and incorporate feedback from comments to create the best possible solution. Let's get started:
    Base Ingredients
Cottage Cheese: 1 cup (blended smooth)
    Almond Flour: 1 1/2 cups
    Coconut Flour: 1/4 cup
    Baking Powder: 2 tsp
Erythritol: 1/2 cup (or preferred sweetener)
    Eggs: 4 large
    Vanilla Extract: 2 tsp
    Butter: 1/4 cup (melted)
    Salt: 1/4 tsp
Cinnamon: 1/2 tsp (optional for added flavor)
    Nutmeg: 1/4 tsp (optional)
    Method
    Prepare the Cottage Cheese:
Blend the cottage cheese until it is completely smooth and creamy.
    Dry Ingredients:
In a large bowl, combine the almond flour, coconut flour, baking powder, erythritol, salt, cinnamon, and nutmeg. Mix well.
    Wet Ingredients:
In another bowl, beat the eggs until fluffy. Add the melted butter, vanilla extract, and blended cottage cheese. Mix until well combined.
    Combine Ingredients:
Gradually add the dry ingredients to the wet ingredients, stirring until a thick batter forms. Ensure there are no lumps.
    Prepare Donut Pan:
Preheat the oven to 350°F (175°C). Grease a donut pan with cooking spray or butter.
    Fill the Donut Pan:
Spoon the batter into a piping bag or a ziplock bag with a corner cut off. Pipe the batter into the donut pan, filling each cavity about 3/4 full.
    Bake:
Bake in the preheated oven for 15-18 minutes, or until the donuts are golden brown and a toothpick inserted into the center comes out clean.
    Cool:
Allow the donuts to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
    Glaze Options
    Classic Vanilla Glaze:
Mix 1/2 cup powdered erythritol with 2-3 tbsp heavy cream and 1 tsp vanilla extract until smooth.
    Chocolate Glaze:
Mix 1/2 cup powdered erythritol with 2 tbsp unsweetened cocoa powder, 2-3 tbsp heavy cream, and 1 tsp vanilla extract until smooth.
    Cinnamon Sugar Topping:
Mix 1/4 cup erythritol with 1 tsp cinnamon. Brush the donuts with melted butter and dip them into the cinnamon sugar mixture.
    Feedback Incorporation
Texture: Many comments highlighted the importance of a smooth cottage cheese blend to avoid a lumpy texture in the donuts.
Sweetness Level: Some users found the original recipes too sweet or not sweet enough. Adjust erythritol to taste, starting with 1/2 cup and adjusting as needed.
Moisture: A few recipes were reported to be too dry. The addition of melted butter helps keep the donuts moist.
Spices: Adding cinnamon and nutmeg was suggested to enhance the flavor, making them more donut-like.
Glaze Variety: Offering multiple glaze options was a common suggestion to cater to different preferences.
    Tips
Piping: Piping the batter into the donut pan helps achieve an even shape and size.
Storage: Store the donuts in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
This recipe should give you a delicious, moist, and perfectly sweetened keto donut with the added benefit of cottage cheese for extra protein. Enjoy!

Just ran across your video. I really enjoy the fact that you stay in the moment with every step and not concern yourself with the outcome of the result, but the process of doing something new, whether it works out or not. Thank you, brother, for teaching us what joy in the kitchen is all about. 🫶

Word of advice. If you have a dishwasher, put whatever you want to spray with oil on the open door of the dishwasher, so whatever sprays outside the mold will fall on the door and will be cleaned when you wash your dishes.

    • @christineconley7903

I use allulose. It isn't as sweet as sugar, so you might need to use a little bit more. It also has some added health benefits. Another good thing about it is that it doesn't crystallize when making sauces and jellies.

    • @jbeargrr
      @jbeargrr 2 месяца назад +6

I use allulose, it's a very fine granulation. Very close to powdered sugar. I use it instead of other powdered sweeteners. It dissolves easily, and doesn't tend to re-crystalize like erythritol does.
All of the "monk fruit sweeteners" are either erythritol or allulose, with a smidge of monk fruit to boost the sweetness. Monk fruit is way too sweet to use alone and has a bad aftertaste just like artificial sweeteners, if you use too much.
It may also have some additional health benefits, but there's not enough info on that yet.
Both allulose and erythritol are naturally occurring sweeteners, not artificial. Avoid aspartame and sucralose. Both are bad for your gut biome and sucralose has been found to be causing environmental damage as well.
Splenda is sucralose. But they're branching out into other sweeteners, like the erythritol & monk fruit one you just used. That one's fine. Just read the ingredients on those labels so you don't get something bad for you.

Hey Man. As someone else who tried keto to try to lose weight, huge word of caution. Don’t do such a high-fat keto diet. It can cause you to lose your gallbladder. I learned that the hard way. It almost killed me, and after having my gallbladder removed, all fatty dishes now give me the runs. If you’re going to do keto, take it easy on the heavy whipping cream. Look into the full-fat or 2% Greek yogurts and cottage cheeses instead. Avoid heavy whipping cream, cream cheese, etc.

What will help your ADHD, as it did mine, is to go all the way to carnivore.
I was able to get off my Adderall XR and Wellbutrin that I was taking for it. I still have my moments but I'm better able to remember stuff and not be so spacey. It also relieved my dysthymia and anxiety.
In addition to that stuff, my lifelong addiction to sugar has been taken away. Low carb/keto weren't enough to do it, but by going full carnivore, my cravings just disappeared!! I'm so relieved to finally have that monkey off my back!!
I was also able to get off the three blood pressure meds I was on and halve my thyroid medication. I'm hoping to eventually get off of it, too.
I no longer live to eat, but eat to live and it's given me my life back so I can concentrate on my family and the things in life that are important!!

Enhoy your videos, Dave. I only recently found out I am dealing with ADHD as well. So many ramifications, and it explains so much to me. Now I understand myself so much better. I wish it would help others do the same.
Our family's favorite doughnut recipe came from my mother-in-love, and it has no cinnamon, but 1/4 to 1/2 tsp. nutmeg to 1 3/4 c flour.
It is not overpowering but quite subtle. I would suggest starting with 1/4 tsp and adding more if desired.
We would then roll in powdered sugar, the favorite method, or cinnamon sugar.
We would make glazes once in a while... vanilla and chocolate.
Our family hosted fall events, like a hayride or hymnsing, and we made huge batches of these doughnuts. Fun times.
I am now keto, and I can't wait to try these!
I made another version last week, so I want to compare them.

Piping tip for when you make these for yourself: Stuff the bag into a large glass or plastic drinking cup and drape the edges over the top Then you'll have both hands free to scape the dough into the bag! Then cut the corner. (You can also use a plastic food storage bag, one without the "lock" on top. Just close it off by twisting the top shut. Though you'll have to keep a hold of that twist to make sure the batter doesn't come oozing out. The best thing about this way is, as you squeeze the bag, you occasionally twist the top more to force the batter down as you use it up.)
These look tasty, may try them tomorrow! Loved the vid.

Ok Dave! So I found you a couple of days ago and have watched a few of your keto cottage cheese videos. Today was the day to try one and I chose the donuts and ...OH MY! So yummy🥰 One easy tip to get the batter into the bag - put the bag in a glass and turn back the edge to hold the edges open - much easier to spoon in the batter. AND what do you think about using the donut pan for the bagels? Next recipe for me to try. Thanks for being real and bringing these recipes to us all!
