Tried this! Honest review in case anyone wants to know before committing to ingredients. It's mildly sweet, a little more on the bitter chocolate end, and tastes more like a brownie with cheesecake. I would add semisweet low carb melted chocolate and a little extra keto sweeter to taste. If you want it less moist add a little coconut flour. I'll be experimenting with the recipe some myself.
The thing is, pure cocoa is bitter. True keto lowers the desire for sweetness in our food items, so if you’re still craving sweetness, then you should probably look at why? As an alternative, a Dutch processed cocoa powder yields a better tasting cake product. A brown keto sweetener substitute will help with adding that little extra sweetness you may be looking for. If it’s erythritol based, then powder it first or it will crystallise again once cooled. Good luck with it all. 😘
@janeababe I use Stevia Confectioners, and while I'm on true keto, I still try to balance flavor. Not just bitters. I am at the point in Keto where most candy/cake is almost sickeningly sweet. So if I'm craving sweetness then it's probably just a little too bitter and needs a partner flavor to balance it out somehow and take some punch out of the cocoa's strength.
Thanks for trying it. Dutch process Coco powder is not as tasty as black cocoa powder. Black cocoa powder is how Oreos get the Oreo flavor. And it’s true if you’re craving sweetness, that’s typically a sign that you’re not getting enough salt. Carbs help you retain salt, keto has you lose salt and so it needs to be added back in. A dash of salt can also better bring out the flavor.
After watching all these amazing perfectly organized cooks it’s humorous and entertaining watching a guy making it up as he goes along for a recipe he hardly knows. It’s very authentic even as he shares he gave up Keto …..

Also, I used 1/3 cup sweetener and added chopped walnuts! You are a genius because the amount of almond flour was exactly the perfect consistency for a brownie I’ve been searching for since starting keto!! All other recipes were awful!!! Thx!!
Whenever I bake with almond flour and most powdery ingredients, I put them into a three or four cup measuring cup and then dump them into a sifter and sift everything into a larger bowl. That way you don't have any large chunks or lumps and everything is a fine powder for ease in mixing. It's not a deal breaker, but it works really well for me. 🙂 I saved your recipe and am going to make these this week. Thank you!
I do this same recipe as a "mug cake".. it comes out perfect every time. I use a microwave (1100 watt) for 1min 04 seconds. Let cool for 1 minute before slicing.

Thank you for sharing this idea with us. I made this recipe today and it is delicious. I will be making this again and I will be using my Dash griddle to help save time. I believe that they could be cut into four pieces which is probably enough to curb your sweet tooth.
I made the recipe, but I used normal sugar instead. And After tasting the batter, I added 50% more sugar. It turned out great! Like a dark chocolate brownie/cake 😄

New sub. 😊 I’m going to put the ingredients into carb manager (sometimes Canadian ingredients have higher carbs than in the U.S) and hopefully the net carb level will be similar. If so, I’ll be making these. I love how I don’t need special / expensive ingredients (eg collagen or chocolate collagen). They’re simple and quick to make, so if they’re good, I’ll make them regularly. Thanks! 😄

Bake believe is the best. I love the milk chips and white chocolate chips. Trust me, melt them down, place in mini cupcake papers and add desired nut. Place in fridge til solid and you have keto candies that are chef’s kiss.
They sure are =) Sometimes I add a little heated heavy cream & a tsp of vanilla. The cream gives a slightly different texture, & vanilla just enhances everything. *Haven't seen the white chips for a while now, just the white "melting wafers"~ which are still good, but a bit different flavor for me. Bake Believe is also reasonable, compared to cost of others.
I made these twice now. 2nd time I just put the cottage cheese, vanilla essence and eggs into the blender and blended up to a smooth consistency. The rest I followed like instructed. Absolutely delicious. ❤ I also get 19 mini cupcake bites per recipe. 😊
In Czechia we buy the cottage cheese thats already chopped to smooth consistency. Its called tvaroh. So i only buy actual cottage cheese when i want it in those pebbles. Else i buy directly tvaroh.

We have tvaroh in Hungary as well called túró, but that's not cottage cheese. Tvaroh (túró) is not even considered as cheese in Hungary. But yeah it can be a substitute for it as you can by the creamy version of it. See more en.wikipedia.org/wiki/Tvorog
I have to say, when you spray any pan with nonstick cooking spray, you should always spray it over the sink or counter. I learned this when I sprayed it and my daughter slipped on the floor and did the splits. From then on anything I spray goes over the sink. I'm going to try and make these tomorrow 😊 thanks for the video

Just a mixing tip... I usually mix up my wet ingredients in the larger bowl, Collect all dry ingredients in a medium bowl. Then add the dry ingredients to the wet ingredients in the big bowl. Then there's plenty of room for mixing, and you only really dirty one bowl. Just wipe or rinse off the dry bowl. I like to clean as I go. That's how I roll

Dave, this is the first video I’ve seen of yours and I think it looks amazing. I was Keto for 6 years, then went LCHF for the past 3years and have unfortunately gained a little weight due to poor food choices, so I’m back on the keto wagon again. 👍🏻 A few tips I can give is always cook with powdered erythritol. It tends to crystallise again once the cooked item has cooled completely. Using a brown sugar substitute (powdered) for your chocolate cakes will add extra flavour to them. And lastly, although not as low card as pure cocoa powder, using a Dutch processed cocoa powder with result in an extra delicious chocolate taste. The added carb count to this recipe will be minimal due to an already very low net carb count. Thank you for this recipe. It looks amazing and I’m definitely going to try it. (P/S: Allulose is a perfect 1:1 keto sugar substitute and no need to powder it first, but a tad expensive 😉)
Allulose is not a 1:1 sub for sugar or sugar equal substitutes. It’s about 1/3 less sweet. To equal, use 1/3 more or blend with monk fruit extract or erythritol

I used swerve and nearly double recipe. Also, mine did not release from pain with and without spray. This makes a lot of muffins so I have one more batch in the fridge and I will try it again tomorrow with may be a little bit of melted butter. It’s not caramelizing, but it might be because of the swerve. They were pretty good, and this is the first recipe I made of yours so I’m excited that they at least tasted good.
Have you tried using butter in the muffin cups? Then put pan in freezer for 30-60 minutes. Put your Mix in frog for an hour. Then put straight in muffin cups, & stick in preheated oven. Some people dust the buttered muffin cup with flour & put in frig & continue as above. Hope it helps. 😊
Tried these today. Quick and easy. Mine were not very sweet, good for me but not so much for my husband, but we will both enjoy them. Have more cottage cheese to use up, going for the pretzel next. Love your channel!
Can you recommend a brand of pure monk fruit? Most seem to be mixed with erythritol and ones I’ve seen without it don’t seem to have great reviews. 🤷🏼♀️
@@kimsmart100Lakanto offers it but it’s not great for baking because there’s no volume. 1/4 tsp is equal to 3/4 cup of sugar. You can blend it with Allulose to equal the sweetness of sugar or erythritol. You can get monkfruit for baking blended with erythritol, Allulose and Splenda.

That’s why this really works for me anything too sweet does not go great with my belly.

Mixing tip you could’ve added eggs and vanilla to cottage cheese and blend then add the dry ingredients and blend.

Those sound delicious!! I use a small cookie scoop or ice cream scoop to fill the muffin pans...so quick and easy!!

I love these! I made 2 small additions: unsweetened coconut and 2 scoops of a 2 ingredient protein powder. Yummy and can be frozen if needed.

Have tried Ricotta? It is smooth and dryer! I also use allulose for sweetner (closest to sugar I have found). Loving the recipies!
Ricotta is also lower carbs!

What is protein compared to ricotta? I’m guessing is quite a bit more expensive

Seems like you could mix up the eggs and vanilla in your speedy little chopper along with the cottage cheese. This looks great. I’d love to make some right now, but then I would want to eat them… And chocolate keeps me awake at night and it’s 6:30 PM. Bummer! There’s always tomorrow. Daytime. 😊
Add some espresso powder. I think it's supposed to enhance the chocolate flavor.
Instant coffee will work, too. Cinnamon works great with chocolate, too.

I used swerve and nearly double recipe. Also, mine did not release from pain with and without spray. This makes a lot of muffins so I have one more batch in the fridge and I will try it again tomorrow with may be a little bit of melted butter. It’s not caramelizing, but it might be because of the swerve. They were pretty good, and this is the first recipe I made of yours so I’m excited that they at least tasted good.
Have you tried using butter in the muffin cups? Then put pan in freezer for 30-60 minutes. Put your
Mix in frog for an hour. Then put straight in muffin cups, & stick in preheated oven. Some people dust the buttered muffin cup with flour & put in frig & continue as above. Hope it helps. 😊

Try using monk fruit it's great for baking. No carbs and no erythritol which can cause gastrointestinal issues.
Can you recommend a brand of pure monk fruit? Most seem to be mixed with erythritol and ones I’ve seen without it don’t seem to have great reviews. 🤷🏼♀️
@@kimsmart100Lakanto offers it but it’s not great for baking because there’s no volume. 1/4 tsp is equal to 3/4 cup of sugar. You can blend it with Allulose to equal the sweetness of sugar or erythritol. You can get monkfruit for baking blended with erythritol, Allulose and Splenda.
