I just found a pamphlet that my doctor (now retired) wrote and gave me 8 years ago because I was pre-diabetic and should be doing keto. Of course I didn't listen at the time, but I finally started keto exactly 3 months ago. My favorite bullet point in the pamphlet "You already ate your lifetime of carbs". 👍😂
He sounds like he was a good doctor! Treating disease and ailments through diet/nutrition 👍🏼 Most doctors now will just recommend a prescription for some meds and send you on your way.😔

Yes ! I use parchment paper alot now for easier clean up so the water idea is alot better. I hate cleaning greasy pans !!! 😂❤

I saw that Shredhappens also added garlic to his recipe for the flatbread. I just made this this morning using Shredhappens exact recipe, and it was marvelous! 1 cup cottage cheese, 2 eggs, 1 clove garlic and a small handful of cilantro. I used a 9x13 parchment lined baking pan, and it turned out perfectly! So glad you featured this flat bread recipe. So simple, and all ingredients are at the ready always in my fridge👍🏼. I used lactaid cottage cheese and my mixture stuck to parchment paper. Was I suppose to spray the parchment 1st ? Anyone can help TIA
@@rosabotello9676 that may have made a difference. I usually use full fat cottage cheese. Try leaving it less time also. The cheese will spread as it heats, that’s a given. It takes a bit of tweaking to find what works for you. Sorry I wasn’t much help. Oh just remembered, to firm it up you could try adding some protein powder. I do that a lot lately, and have had excellent results.
Yall could do a jelly roll sammie and slice it up into pinwheels!!! Those are so nice for party treats!

I learned a trick re: parchment paper. Wrinkle it into a ball then spread it back out.
I wet my parchment paper and then do the same as you - it works a treat for me!

Mine had burnt edges and was super floppy. Added a bit of shredded cheese and it was much more flatbread-like. That’s the only way I’d make it now.

This flatbread recipe is a game changer, with many possibilities!
For instance, I wanted to share an amazing dessert I made by layering 3 inch squares of the flatbread with lemon cream filling. 1 oz softened cream cheese, 1/2 cup Greek yogurt, juice of half lemon, zest of whole lemon, and sweetener. It was like a lemon Tiramisu. There is enough protein to have as a meal. Filling and delicious!

Putting a little water on the pan before laying out your parchment on it will help it stick, too. 😀

That's what I'm going to try. I've been trying everything to find a good replacement for sandwich thins since i tried the Arnold Keto Thins. The 90-second recipe on my Aldi Almond Flour pouch has been a decent replacement for English muffins, but it's a little dry.

Just bought some cottage cheese last week 'cause everyone seems to be doing recipes with it right now including several sweet recipes from KetoSnackz! In general, I use cream cheese for everything, so getting my mind around cottage cheese 🤮

@TacklingTheGiants I tried it with baking powder. It rose a lot in the oven but deflated out of the heat. But I felt like it held together better and had a little bit better flavor. I had to really grease the pan though for it to not stick.

Was looking up cottage cheese breads and muffins etc right before seeing this! Very cool. Making it tonight with dill, and veggie hash w/dill lemon and Greek cheese with over easy eggs as a dipper for the yolks.
I made it and was a bit short on cottage cheese so added 2 tbsp mozzarella and 1 tablespoons almond flour. Loved this!!

I just want to say I made chaffles using your most recent recipe. But I used Kerrygold Dubliner natural cheese from Costco. OMG. It was incredible. You have to let them cook longer to get crispy. (Like 8 min.) Also it only makes 2 chaffles I think because it's a lighter cheese. I put a tiny bit of salt and a good amount of cracked pepper and Italian seasonings and garlic.
Then I mixed 2oz rotisserie chicken,1 tb ranch dressing 1 tb, no sugar sweet relish with lettuce.. I served it with tomatoes. So so good! You gotta try it with this cheese.

This looks good, because it’s relatively easy to make. And you can pair so many things with the “bread”

Thanks for the video ladies. I tried it twice today. The first time was a crash and burn. The "flatbread" stuck to the parchment paper even after cooling down. I guess not all parchment paper is created equal. The second attempt using cooking oil spray worked out nicely. Going to try chaffles next, can't give up my smash burgers.
I saw on one video somebody added a little parmesan cheese to the mixture for extra flavor. So many possibilities and I love watching your videos

I tried this today and it was perfect for my Beyond beef patty. No egg taste. I messed up and had my toaster oven on toast! Once I corrected it I got it looking good. I did have to flip it to get it toasted on both sides.

It looks like it would be eggy so I'm so glad that you both said that it doesn't taste like egg or Cottage Cheese. Will definitely give it a try and I agree that 1/2 would work for a meal. I'm not a fan of cottage cheese, but its more of a texture thing ...its weird.
Ladies.. thank you so much for spending so much time on us. I figured, if you didn't screw up the cottage cheese flatbread.. and noses weren't turned up at it.. I'd give it a try. That is my go-to now. The S/O doesn't like cottage cheese.. but he chows down on that flat bread!! I agree... season the heck out of it... I'm also slightly prone to adding other cheese... freshly grated parm.. dust the parchment with it.. pour it on top... dust it on top... best dipping sticks ever... also super keen on the whole deli sandwich idea... have not been brave enough to make roll up with it.. but.. hey- you never know what tomorrow brings...

I am also happy to see the old Nutribullet coming out. We have gotten a lot of use out of our Nutra Bullet... despite also having a VITAMIX. LOL. (I want to use my Vitamix more but we don't have much kitchen space and it is tucked away.
Watching this video now. Omg! I want to have bread but I can’t I had weight loss surgery a month ago. And I’m on soft foods. I think this cottage cheese and egg bread would stop the want for regular bread. I think I’ll bake it just like you did. Then try to crisp it up a bit in the air fryer. Wish me luck! That looked pretty good. After watching you make it, I think I'd probably flip it after maybe the 30 minute mark? And let it cook for 15 more minutes. It might give it a little more structure (and browning). Yours turned out way better than other people that have tried making this cottage cheese bread on other channels. Two thumbs up.

Made 1/2 recipe right after watching. Unfortunately, the only cottage cheese I had was the low fat version - purchased by mistake when in a hurry - but it seemed to work okay. Tastes fine but I think it has a few more carbs. Well, a success nonetheless. Thanks.

I use the same brand of roasted red peppers and also their mild banana pepper rings. They really add loads of flavor. Unfortunately, I’m still addicted to carb balance tortillas but I’m trying to break it.
