- This recipe can make18 pieces of snowy mooncake(48g each)
配方可以做18个48g的月饼
1. Custard奶黄:(450g=25gx18)
* 3pcs Eggs 鸡蛋
* 80g Sugar 糖 1/4cup+2tbsp+1/2tbsp
* 90g Milk 牛奶 6tbsp
* 60g Heavy whipping cream 淡奶油 1/4cup
* 30g Wheat starch 澄粉(小麦淀粉) 4tbsp
* 30g Cake flour 低筋面粉 4tbsp
* 30g Milk powder 奶粉 4tbsp
* 50g Unsalted Bbutter 无盐黄油
2. Dough面团:(407g=22.5gx18)
* 50g Sweet rice flour 糯米粉 6tbsp+2tsp
* 30g Rice flour 粘米粉 4tbsp
* 30g Wheat starch 澄粉(小麦淀粉) 4tbsp
* 30g Sugar 糖 1/8cup
* 20g Condenced milkd 炼乳 1tbsp
* 30g Oil 油 1/8cup
* 230g Milk 牛奶 3/4cup+3tbsp+1/2tsp
* 5g Matcha powder 抹茶粉 1tsp (宇治抹茶粉)
* 5g Cocoa powder 可可粉 1tsp
3. 2tbsp Sweet rice flour 糯米粉
mold size:50g mooncake mold

前几天做了这个,真的特别好吃,皮很软糯 奶黄馅奶香味十足,我只意思意思地减了五克糖但完全不会过甜,连不爱吃甜品不爱吃冰皮月饼的朋友都一口气吃了两个后 问我什么时候再打算做。看来以后我们会在不是中秋节的时候经常吃这个月饼了。
友情提示:揉面团的时候全程必须戴手套,如果你的面团黏的话在包月饼的时候可能也需要戴手套。然后做好后隔天吃口感是最好的,如果隔天吃不完建议做好后就冷冻,想吃几粒解冻几粒。而且一定要放在密封的容器,不然会干或者会沾上冰箱的味道。如果家里没有微波炉的话,糯米粉可以多炒一些备用。

小面疙瘩是刚开始没有搅拌均匀,这样的话下次你可以过滤一下试试

最好是奶粉,主要是为了那个奶香味,牛奶不香。不过如果不是为了口感的香味,其实放啥都可以。

Thank you for this recipe, but I do have a question.
I've made that yesterday but the dough was much stickier than in the video.
I've used the same amounts as the recipe but mine was softer and stickier.. I used plastic gloves but the texture still didn't change much.
It turned out really good, apart from the being a bit soft, did I do something wrong? I might have steamed it for a bit longer than 25 minutes, could that be the cause?
I do want to make that again without making any mistakes..

Did you cover it when steam? Maybe steam water entered thats why its much moisture and sticky
@@allychai6709 I did cover it.. maybe the temperature was too high that it caused the steam to drip? could that be it?
Not sure if this will help, but I found out that the main issue is the glove, type of gloves matters a lot! Look for those with a shiny or 'oil' like coat, slippery type instead of rubbery. Once you use that, you will be able to handle the dough like she does in the video.
Mine is very sticky and soft too. I think it is due to the recipe with solid content at 33%-35%, lower than other recipes (~40%).

I follow the recipe but could not immediately do the mooncake so I put the mixture into fridge foe a few hours when I return I took out to continue make. After finished and put into fridge for 2 hours, felt that the skin a bit hard. May I know is it because I place the mixture too long?

你放冰箱的时候你要密封的放进去 不然表皮会硬 还有就是冷藏的话保质期是3天 如果放冷冻库保质期是1个月 要吃的时候拿出来解冻就可以了
