This recipe can make 20 pieces of mooncake
Ingredients:
1.Alkaline water:
* 10g Baking soda 2/3tbsp
* 30g Water 2tbsp
2.Mooncake skin:
* 120g Invert syrup
* 1tsp Alkaline water
* 32g Peanut oil 1/8cup
* 170g All-purpose/plain flour 1cup+2tbsp+2/3tbsp
3. Fillings:
* 20pcs Salted duck egg yolk
* Filling(35g) = Read bean paste + Salted duck egg yolk
4. Egg yolk liquid :
* 1pcs Egg yolk
* 1/2tbsp Water
mold size:50g mooncake mold
1. Preheat the Oven 200°C(400°F), bake for 5 minutes
2. Turn the oven temperature to 165°C(330°F), bake for 5 minutes
3. Keep the oven temperature on 165°C(330°F), bake for about 12 minutes

I'm not comfortable with recipe using lye water, 'kansui'. Checked with a friend and was told a must to add lye water. Almost given up not to make the traditional mooncake. So glad to see your recipe using baked soda bicarb that works well. Thank you. 👏

1 - When I make Bolo da Lua, I substitute the egg yolk for other fillings more to the western taste like fruits, chocolate, coconut, nuts etc. I pack it in delicate boxes and sell it. It has more output than American cupcakes.
I only have difficulties in finding variations of the molds for decoration.

感谢分享。。第一次知道枧水可以自己做。每年都是超市买一瓶,用一点点,第二年要用的时候又不可以。刚刚试了你的方法做五仁。。期待三天后回油后的味道。。想问下回油是在室温还是在冰箱里。然后你的糖浆是室温保存还是放冰箱里保持?
不客气哈,是的每年其实用很少一点就可以了,等你的反馈哈,室温密封保存不需要放冰箱,因为里面油很多不会坏的,自己做的转化糖浆一般2-3天就回油了
真正的廣式月餅要切開見月(蛋黃), 餡料綿密油亮, 甜度夠高可以久放, 餅皮金黃雕飾美觀, 包裝密封精美, 尤以蓮蓉.棗泥的為高檔;
不是一般鳳梨酥蛋黃酥綠豆椪...等天天見面的餅可以冒充.
最重要的是邀全家團圓品茗賞月, 並以各種口味切塊共享過節....

你看看里有没有油,如果没有的话大概600g豆沙馅儿+120g油,做月饼的馅儿里面油要多一些,不然会影响回油

不客气,这个皮你就按照这个比例,你可以做双倍几倍都可以,馅儿就看你的月饼做多少g的,如果是100g的话皮是30g,馅儿是70g,皮和馅儿的比例是3:7,那么馅儿里面除过蛋黄其他就是豆沙或者你可以换成莲蓉都可以,还有你如果喜欢吃皮的话就按照饼皮40g,馅儿60g来做,就是4:6

不是冷冻,你那边还是比较热,烤好的月饼放在密封盒里,放冰箱冷藏
