Salted yolk is preserved for longer shelf time in cake. Texture is better too when salted. No, it does not taste salty even it's salted. Egg white in a salted egg is super salty, but not the yolk.
So they just throw the egg whites away?
The moon cake I tried had a pretty salty egg yolk. I really liked it though - the sweet/salty combination was very nice.

@@anthonykhoatran8936 its not BS, not every mooncake taste the same and not everyone have the same salty definition, each to their own.
for me in southeast asia, the yolk most of the times is not salty but savory, the whites is salty.

I was lucky enough to live in China for 10 years. Believe me, I have eaten my share of moon cakes!! I didn’t really care for the salted yolk style, I preferred the ones filled with a fig cream filling. My best wishes to my Chinese friends for their MidAutumn Festival!!!

방금 찾아 봤는데 노른자만 따로 뺀후 바닥에 소금을 깔고 그위에 계란 노른자를 얹고 소금으로 덮고 14일간 숙성? 시키네요네요

影片中蛋黃是採用鴨蛋蛋黃醃漬而成的,麵皮要酥軟,紅豆要甜而不膩,蛋黃要新鮮濕軟不乾不柴,這樣搭配吃起來口感才會好,只要有麵皮/紅豆/蛋黃,有一樣食材不好的話,整體吃起來口感就會有差別,台灣其實有很多家糕餅店做蛋黃酥蠻好吃的,只是沒有被發覺挖出來,不會輸給新聞報導要排隊買的名店,甚至比名店還要好吃,有機會來台灣旅遊買來吃

I'm confused, they combine 2 of the same dough pieces at the start, why not just double the meaurment? Is there something folding one inside the other before rolling out does?!
The two doughs mixed together create a puff pastry effect.. it's hard because the environment cannot be too warm or the Dough will mix... 🥰

In fact, those two doughs are different, one of them is called 油皮(yóupí), which is made of flour, butter, suger and water , while the other is 油酥(yòusū) which is kneaded with different proportions of flour and cream.
Roll out the two doughs together and fold them over and over again could create a puff pastry effect.
