Most cooking supplies places sell kitchen gear for restaurant staff. In Japan, the kitchen staff all look like lab technicians covered from head to toe.

I agree that the dough seems very firm, but you can’t make bread with rice flour because it contains no gluten. I have seen rice flour bread, it requires other ingredients to give it structure and strength. Their bread is steamed which keeps it white, except for where it was touching the hot pan, that part browned a little. Next time you make bread, put a ball of kneaded dough into your steamer on a piece of parchment paper, and try some steamed bread. It’s delicious if you put some yummy filling inside the dough ball. 😋 Some sausage or some chicken and a little bit of sauce or onion. Yum!
