    Mandy, your attention to detail, and your relaying those details to us, is outstanding. You're just the best! (Example: the filling's slight whiteness which quickly fades, the trick of a round measuring spoon, on and on.)

    I made Mindy's moon cake recipes last year. Purchased the beautiful design presses and red bean paste. They were fun to make and delicious. Still want to try homemade lotus paste. Definitely will try pineapple recipe. Thank you Mindy. Your videos are marvelous.

    This is the best video on making mooncakes I’ve seen. The best tip was how to form the dough. I’ve been rolling it flat and then shaping around the filling. It often tears and is not even. And is so much thicker at the bottom. Your way is so much easier- thank you 🙏🏻.

    I just love your recipes. You make them concise, easy to follow and delicious.I cook many ethnic foods for my family, and the main thing we like is authenticity! I have made other of your mooncakes before, so I know these will be amazing, too. My next big dinner project is making a big dumpling feast of 8-10 different flavors, so these will be our dessert.     You have turned me into an absolute mooncake addict, and these are undboutedly going to be a favourite. As much as I love the snowskins, I like the baked ones equally. I might try slipping some chopped dates into the pineapple filling!

      @@SoupedUpRecipes, I made these earlier in the week using two cans of well-drained crushed pineapple and allowed them to age in the fridge until this morning (four or five days). They are absolutely DELICIOUS! Happy Moon Festival!

    Thanks so much for the recipe! I finally made them and they're so good! They were a hit in my family. I'm considering making them again, but with the inside filling being apples and cinammon this time, just for a change of pace. Anyway, thanks for the detailed explanations and the super tasty recipe.     Thank you again Mandy though I am not Asian everything nothing about my lifestyle is. Because my birthday is in September and I am not big on always celebrating my birthday I have always leaned on making mooncakes as a way to mark it and give out. Will be trying the pineapple one this time around

    A #50 or #60 cookie scoop, sprayed with cooking spray will make short work of portioning the pineapple jam. Also, if you oil your hands to roll the jam and handle the dough, it will stick less.

    Pro tip, lightly oil the measuring spoon before using it. The filling comes out very easily.

      LOL! The Asian market around where I live sells mooncakes. They have lots of flavors: red bean paste, lotus seeds, salted egg yolk, sesame, fruit, five nuts... Check the asian market around where you live. You may find some.

    i made these with peach instead of pineapple and the flavor was great, but i couldn’t get the filling to be stiff enough to be able to wrap them properly, im going to try adding some corn starch next time to thicken it up a bit more

    Mandy, when doing huiyou, should the moon cakes cool down before going into the container, or do you put them in while still hot and straight from the oven?
