  • Golden Syrup is the most important ingredient to make popular Asian pastries such as traditional baked mooncakes. This inverted sugar syrup has a beautiful golden amber colour with a thick honey-like texture and rich lemony fragrance. This Golden Syrup is amazingly easy to make at home with simple ingredients. All you need are sugar, water, some lemon slices and a bit of your time.
    It is best to make golden syrup at least 2 weeks before using it for mooncakes. When left for some time, this syrup will thicken further and develop its signature amber colour. Golden syrup preserves well and it is even recommended by many mooncake bakers to make golden syrup up to a year ahead (we have tried this and it works perfectly). So, you can also keep this year’s golden syrup for next year’s use.
    Golden syrup is certainly the most important ingredient in making mooncake skin, attributing to its signature softness, sweetness, flavour, golden brown colour and also better shelf life. As usual, enjoy!

      Yes, it is very simple. There is still time to make before you make your mooncakes. Be sure to keep for at least 2 weeks before you use. Make more? Can keep for next year mooncake festival as well. Enjoy!

      @@Huangkitchen won't the lemon peel and lemon seeds give golden syrup a bitter taste?

      We only add a few slices of lemon slices so its fine. The acid from the lemon slices prevent the sugar from crystallizing. In fact the lemon slices and seeds act as natural preservative for the golden syrup.

    good day! as mentioned the syrup to be keep in cool dark place is same as storing in the fridge ?

      No need. Just store at cool room temperature.

    Hi I've made my golden syrup months ago, but for some reason it has started crystallizing. Is it possible to warm it back up to melt the sugar crystals away? I want to use it for mooncakes.

      You either burned the sugar or didn't add enough lemon, Golden Syrup is not supposed to crystallize.

    Hi... i tried this recipe. But while cooking, the syrup very foamy. Did i made any mistake. Any suggestion?

      Need to cook slowly till the sugar just dissolved. One reason for the syrup turns foamy maybe you cooked too long.

      @@Huangkitchen thank you for your advice. The syrup turned out fine. But just very foamy when its cooked. The foam cames out after less than an hour of cooking time. Maybe next time i should reduce the heat.
