    BETH'S ULTIMATE CHOCOLATE CHIP COOKIES
    Makes 1 dozen large-sized cookies
    PRINT RECIPE HERE entertainingwi...
    1 cup (240 g) of unsalted butter
    ¼ (50 g) cup white sugar
    ¾ (135) cup brown sugar
    2 eggs
    1 tbsp (7.5ml) vanilla
    1 ¾ cup (210 g) flour
    1 tsp (5 ml) salt
    1 tsp (5 ml) baking soda
    1 cup (150 g) milk chocolate covered raisins
    1 cup (150 g) semi-sweet chocolate chips
    1 cup (150 g) candied walnuts
    1 cup (150 g) of toffee bits
    METHOD:
    Preheat oven to 350F (177C).
    Beat butter and sugars on high for 5-7 mins until very light and fluffy.
    Add eggs one at a time, beating well between additions. Add vanilla.
    Combine flour, salt and baking soda in a bowl and whisk together. Slowly add flour mixture to butter mixture and beat until well incorporated.
    Add raisins, chips and walnuts, mix just until combined.
    Line a rimmed lined cookie sheet with parchment paper. Scoop out dough with an ice cream scoop. 5 to a tray.
    Bake for 13 mins, until golden around the edges and centers look dry.
    Let cool on tray on counter for 5 mins. They will set up and continue cooking on the hot tray.
    Transfer to cooling rack to cool completely.

    Of all the many channels I'm subscribed to, this is one of my favorites for several reasons. Your voice and manner of speaking is SO pleasant to listen to. You speak with expression, not too fast or too slow sing-song monotone like many of the channels, especially of younger people who have a bit of "valley girl" in their voice. You use the word "like" appropriately. You don't speak in a pressured manner, very appreciated. There's no annoying music or whistling. I never have to turn down the sound! Great video skills are apparent in the shooting and editing. Lastly, you have excellent content. I always want to watch.

    Oh sure, in fact here are my two favorite things to do with them. 1.) Avocado, and Tomato salad. Drizzle with my French vinaigrette. 1 tbsp Dijon Mustard, 1 tbsp red wine vinegar, 3 tbsp olive oil, 1 diced shallot, S + P to taste. Toss and serve with grilled chicken or steak. OR Make a scrambled egg taco. (Lived on these when I was pregnant!) Scrambled eggs, place in a warmed corn tortilla, top with hot sauce, avocado, and shredded cheddar cheese. So good and quick!! :)

    I just made these again and they really are the best recipe. I did tweek them again by using 1/2 cup of browned butter. I think I may have previously suggested this to you. It really does kick these amazing cookies up even a notch higher. Thank you for sharing your recipes with us. You and Ina Garten are now pretty much all I follow.

    I just made these and they we're delicious...!! Used dark chocolate pieces and candied almonds.. My new goto cookie base. Btw, if you're pressed pn time.. You can cut cold butter in long halves and roll it out inside a bag or wax paper. I baked for 11 mins baking 12 medium sized cookies per tray.

    No prob! Your English is great! The cake texture is usually because of too much flour. Depending on how you measured it (scoop method, or by weight you can end up with a bit more than needed) Next time just add a little less flour and you'll end up with a chewier texture :)

    Yes I would decrease the temperature by 25 degrees and bake a bit longer say 3-5 mins more. So glad you like the channel! Always appreciate the support! :)

    Sorry, I know I comment a lot. But this recipe is so exciting for me!
    I invested in that kitcheaid mixer, and it really really DOES help with creaming that butter and sugar for a smooth dough.
    I have never liked nuts in my desserts... or cooking for that matter. But I trusted you and gave the walnuts a try (and water chesnuts in other dishes) and it's so satisfiying!
    I have made this recipe several times now and they are ALWAYS a hit, no matter where I take them!

    Sure you could use cold butter just beat it up longer with the mixer to soften. Room temp butter just helps the other ingredients incorporate better. As for the sugar, sure you could use all white the cookies may just end up being crisper than chewier. Brown sugar adds a nice chewiness, but hey crisp cookies are great too! :) Enjoy!

    Hmmm you could try that. Demerara is a raw sugar that has a different texture than brown sugar, but thinking about it I bet it would be pretty good :) OR you could also use all white sugar with 1 tbsp of molasses (that's basically what brown sugar is) :)

    Beth - my recipe is similar but I kick it up an extra notch by adding browned butter for half of the butter. Love your videos - especially the one on macarons.

    Thank you Beth for this great recipe! I've tried to make cookies so many times, but they never turned out right in texture or flavour. I almost give up but I will give it another try with your recipe. It's also difficult to get the right measurement for european proportions. But anyway I'm going to tell you how it turned out!     Of course! Any kind of chocolate you like. I just wouldn't use unsweetened or baking chocolate. Stick to semi-sweet, milk or dark chocolate. Or you could use chocolate that has nuts and raisins already in it, that too would be delicious!

    Hi Ariette, my rule of thumb when it comes to making big batches is to not double the recipe, but to actually make it twice. It mixes up better that way and you avoid forgetting to double any of the steps :) Just seems to always work out better that way! :) Enjoy!

    Ha! Yes it's a yummy combo for sure! You'll love the sweet and salty, plus chewy so good! I really prefer light brown sugar, better flavor and texture (Dark just has more molasses in it) Hope that helps! :)

    LOl! Oh yes! Sea salt would really be great! If you can find it where you live, I recommend Maldon Sea salt, since you get that nice flavor and crunch, but it's not too salty. If you can't find Maldon, any other "Fleur de Sel" will do :)

    hey beth! love the recipe and thought i'd give it a shot. however, i think i creamed the butter and sugar for too much that my dough become soft and soggy. added like a cup or so of flour more and it turned out great. Thanks Beth! (:

    Sure, I really like the combo of butter (1/2 stick) cream cheese (1 cup) and 1/2 cup-3/4 cup of powdered sugar, plus 1 tsp vanilla. Smooth creamy and not too sweet! If you want a thinner frosting just add milk, 1 tbsp at a time until you reach the desired consistency. Enjoy!

    Oh yes you can. OK take 1 egg white and mix it with 2 tbsp brown sugar, and 1/2 tsp of salt, mix in 1 lb of walnuts, toss to coat. Spread them out on a greased cookie sheet, and bake for 10-15 mins at 375. They will still be soft and a bit sticky when you take them out, but as they cool they will harden and dry out, scrap them off the tray with a wooden spoon, et voila!

    Yes if the size of the cookie is the size of an ice crea scoop. Otherwise smaller means less time, larger would mean more tie. Hope that helps! :)

    Hi Beth, i once asked you if i can simply use my hand since i don't own an electric mixer. and yesterday i was at walmart and finally bought myself a small hand mixer. I made these cookies today and they are good! can't wait to try more recipes that i was once intimidated by because of the use of a mixer. (although you told me hand mixing also works)

    These look crazy good, yummm ... My family is from the caribbean and brown sugar is one of the main produce over there, so they call brown sugar regular sugar and granuated sugar white sugar lol

    Hi Beth! I was just wondering for these cookies if you prefer dark or light brown sugar... I don't really know the difference haha but i never know which one to buy when I go to the store!! By the way I love what you put in them!! I would have never thought about some of the things you put in them!!!

    Absolutely! You can def omit them. Just add a few more chips, raisins and toffee bits :)

    Well you could soften in the microwave on the defrost setting, just in 5 sec increments to make sure it doesn't completely melt :) The defrost setting is the secret :)

    Yes I'd double it, 1 1/2 - 2 cups (that's usually 1 bag of chips) would do the trick!
