hi beth, i literally woke up early today to bake this in time for my morning coffee. They are DIVINE!!!! Better than the store bought stuff. i was a little afraid this recipe wouldnt work because i used gluten free oat flour. i didnt have oranges or lemons, so i used vanilla extract, and i browned my butter, its just something about brown butter it takes baked goodies to a whole new level. THANK YOU so much for this recipe!

Omg I tried these,I have the pan for long and just scared to try it. Well because now I am confined to the house,I have all the time . I looked at so many videos but I truly loved yours as I felt you were so comfortaing and felt like a friend. I made them and WOW..they came out great. The receipe that came with the pan did not say about leaving for 1 hr in the fridge..I put that in the garbage,thank God I never used it. Thank you. Awesome! My batter didn't spread in the pan like Beth's did until it hit the oven, my batter held it's shape from the butter in the recipe chilling in the fridge.....but they still turned out picture perfect, fluffy, light with a golden shell. Tip: try and take the cakes out of the pan while they're still hot from the oven or they'll stick a little. This recipe made 23 madeleines and also took exactly 8 minutes to bake. Thank you Beth!

My cookies came out looking perfect. They crispy and soft inside. I used lemon seized because i love lemon flavor, and i only used 1/2 cup of sugar instead of 2/3. My sister said they taste better than the ones she tried at starbucks. However, i found them a little bit dry. I want to know how to make them a little bit more moist. Do i add more butter? will that help?

OMG, that is what happened to me the other day, I got mine for $2 at goodwill and was so excited. I've always wanted to make these but since I'd never had one I wasn't up to spending $15-$20 on a pan that I might only use once. I made some last night for our movie night (saw Knives Out...highly recommend) but they seemed kinda heavy so I came here to see if the recipe I used had different measurements and it did so will try this one now & let the batter rest overnight in the fridge. I love finding fun pans like this at used places. I have so many amazing cast iron pans I've cleaned and reseasoned it is nuts.

Should I vacuum seal? How long would it last? As soon as it's out of the oven it's nice and soft but tends to get hard and stale even a few hours after. How can I prevent that? Thanks.

I do have some questions to understand this all better! 1)Unlike other kinds of madeleines, this doesn't require a stand mixer to bring the batter to the ribbon stage. How is it then that this much simpler recipe is able to make the batter so airy and fluffy without the ribbon stage and just some whisking? It was one of the fluffiest I have ever tried! 2)Also, second question is about the baking powder., I use hot melted butter and then refrigerated the batter overnight. Yet most recipes like this would require the batter to be baked immediately since the baking powder is activated through both the liquid (melted butter), and the heat of the butter. Wouldn't then all the leavening power be gone after it has been sitting in the refrigerator for hours (since all the CO2 would escape into the air from the batter)? However, these madeleines had the biggest humps when I made them. What is the purpose of the baking powder then? And where does the leavening power come from? Thank you I'd love to know the science behind this to know better!

Made this yesterday and they turned out lovely ! Not dense at all ( I tried another recipe and it turned out very very dense 😢) . However, mine turned out slightly sticky. I did not use any powdered sugar because I wanted it plain. Any way I can improve to make it not sticky ? Thanks in advance Beth.

I tried baking them in a silicone pan. The texture was similar ,but the shell side didn't become golden brown. A metal non-stick pan is preferred.
ive also tried to bake it in Silicone Pan. Is there any logical reason why Madeleines didn't Raise :(

Thank you so much Beth for this recipe! I do have some questions to understand this all better! 1)Unlike other kinds of madeleines, this doesn't require a stand mixer to bring the batter to the ribbon stage. How is it then that this much simpler recipe is able to make the batter so airy and fluffy without the ribbon stage and just some whisking? It was one of the fluffiest I have ever tried!
2)Also, second question is about the baking powder., I use hot melted butter and then refrigerated the batter overnight. Yet most recipes like this would require the batter to be baked immediately since the baking powder is activated through both the liquid (melted butter), and the heat of the butter. Wouldn't then all the leavening power be gone after it has been sitting in the refrigerator for hours (since all the CO2 would escape into the air from the batter)? However, these madeleines had the biggest humps when I made them. What is the purpose of the baking powder then? And where does the leavening power come from? Thank you I'd love to know the science behind this to know better!

Hi Beth, I always love how you explain recipes :) Need an advice! I tried this Madeline recipe and even after baking for 10 mins, my Madelines were still undone in the middle. Any suggestion?

Made this yesterday and they turned out lovely ! Not dense at all ( I tried another recipe and it turned out very very dense 😢) . However, mine turned out slightly sticky. I did not use any powdered sugar because I wanted it plain. Any way I can improve to make it not sticky ? Thanks in advance Beth.
