    hi beth, i literally woke up early today to bake this in time for my morning coffee.
    They are DIVINE!!!! Better than the store bought stuff. i was a little afraid this recipe wouldnt work because i used gluten free oat flour. i didnt have oranges or lemons, so i used vanilla extract, and i browned my butter, its just something about brown butter it takes baked goodies to a whole new level.

    This is the best recipe. Ordered my Chicago metallic pan online 3 days ago, made the batter this morning, pan arrived this afternoon, and 8 minutes later my Madeleines were ready to eat. So delish & pretty! Love them! Thank you!

    Beth, I’ve been making this recipe for about five years now. I use melted butter in lieu of cooking spray when greasing the pan, but otherwise nothing changes. Thank you for this perfect, foolproof recipe!

    Beth I adore your recipes! When I give them as gifts people always say they are better than any store bought or bakery bought variations they have tried and I agree! I also love your 'troubleshooting' tips that have saved me from having to make several trial and error batches.

    Hi Beth! Thank you for an excellent recipe and thorough tutorial. first i want to say Madeleine Cookies are my favorite in the whole world. I've tried this recipe 4 times. My cookies came out looking perfect. They crispy and soft inside. I used lemon seized because i love lemon flavor, and i only used 1/2 cup of sugar instead of 2/3. My sister said they taste better than the ones she tried at starbucks. However, i found them a little bit dry. I want to know how to make them a little bit more moist. Do i add more butter? will that help?

    Omg I tried these,I have the pan for long and just scared to try it. Well because now I am confined to the house,I have all the time . I looked at so many videos but I truly loved yours as I felt you were so comfortaing and felt like a friend. I made them and WOW..they came out great. The receipe that came with the pan did not say about leaving for 1 hr in the fridge..I put that in the garbage,thank God I never used it. Thank you. My next dream recipe is Macarons..fingers crossed .

    Awesome! My batter didn't spread in the pan like Beth's did until it hit the oven, my batter held it's shape from the butter in the recipe chilling in the fridge.....but they still turned out picture perfect, fluffy, light with a golden shell. Tip: try and take the cakes out of the pan while they're still hot from the oven or they'll stick a little. This recipe made 23 madeleines and also took exactly 8 minutes to bake. Thank you Beth!

    Merci beaucoup Beth pour la recette! I made it today with a cup of hot milk and a dash of Nescafe coffee and it was a success. Moist, with the landmark hump in the back. I am definitely a new fan. I am Francophone west African and this brings good memories from my childhood

    Thank you so much!! I’ve been making madeleines for years and there are so many “techniques” but this is the easiest and tastes just as good as the “French fold” or what not. I literally watch this video once a month as these are my signature pastry!!!

    I finally got a Madeleine pan after not having made any after being on Food Network. I made this recipe and loved it. The second time I made them, I used 4 tbs butter and 2 tbs of coconut oil.

    I found a Madeline pan at goodwill today for $1 ... it is one of my favorite cookies and I didn’t know it was so easy to make!

      OMG, that is what happened to me the other day, I got mine for $2 at goodwill and was so excited. I've always wanted to make these but since I'd never had one I wasn't up to spending $15-$20 on a pan that I might only use once. I made some last night for our movie night (saw Knives Out...highly recommend) but they seemed kinda heavy so I came here to see if the recipe I used had different measurements and it did so will try this one now & let the batter rest overnight in the fridge. I love finding fun pans like this at used places. I have so many amazing cast iron pans I've cleaned and reseasoned it is nuts.

    I tried baking them in a silicone pan. The texture was similar ,but the shell side didn't become golden brown. A metal non-stick pan is preferred.

      ive also tried to bake it in Silicone Pan. Is there any logical reason why Madeleines didn't Raise :(

    Hi Beth,
    I have been using your recipe for years and it works perfect every-time.
    I would like to ship it across the coast and was wondering if you had any recommendations of how to keep it fresh?
    Should I vacuum seal? How long would it last?
    As soon as it's out of the oven it's nice and soft but tends to get hard and stale even a few hours after.
    How can I prevent that?

    I have had store-bought Madeleines and went crazy over them! 130 calories per cookie! I could eat three of them easily! I am going to buy the pan and try your recipe, because YOUR recipes are the best!

    Thank you so much for this recipe! They are so easy to make and seriously foolproof. I made them a few times already; classic, marbled, rose and matcha flavoured. So far everyone loves them. Although they are always smunched and gone the same day; what is the best way to keep them fresh and for how long? As always, I am enjoying your beautiful videos =)
